Planningmealsforsomanypeoplewithsomanydiffer-entnutritionalanddietaryrequirementscanbeachallenge.Ifpossible,preparedishesthateveryonecaneatasamaincourseorasasidedishordessert,andsimplyadjusttheingredientsasneededforthosewithspecialdietaryneeds.I’veprovidedsometips,techniquesandrecipessuitableforthosewithdietaryneedsthateveryoneatyourcelebrationswillenjoy!
NO-SALT SPICE MIX No-orLow-SaltDiet:Thisrecipecanbeusedforallsavorydishesandprovidesanabundanceofflavorfulspicestocom-pensateforthelackofsalt.Usingthisall-purposespicemixisahealthierwaytocookforyourguests.Forthosewhowanttoaddsalt,simplyplaceasaltshakeronthetable. 1 cup (8-ounce jar) onion powder1 cup (8-ounce jar) garlic powder3 tablespoons poultry seasoning3 tablespoons ground black pepper1 tablespoon paprika1/8 teaspoon ground cloves1/8 teaspoon sugar or stevia Combineallingredientsinasmalljarwithashakertopandusetoseasonallsavorydishes.Makesabout23/4cups.
ROOT VEGGIE AU GRATIN Serveupthisvegan,vegetarianandgluten-freeaugratinasamaindishorside.Theblendofcashews,nutritionalyeast(whichishealthyandtasteslikecheese)andthebrothfromthecookedvegetablesmimicthebutterandcheeseflavorsintraditionalaugratindishes.Serves8.1 medium butternut squash, peeled, seeds discarded, and cut into pieces 1 large parsnip or carrot, cut in half1 large sweet potato or baking potato, whole, not peeled1 medium-large turnip or rutabaga, whole, not peeled 1 medium onion8 ounces curly kale, ribs discarded, leaves chopped (5 packed cups)2 tablespoons olive oil2 1/2 tablespoons All-Purpose No-Salt Spice MixZest of 1 small lemon1 cup raw, unsalted cashews, soaked for at least 10 minutes2 tablespoons rice flour2 tablespoons nutritional yeast 1.Placethebutternutsquash,carrotorparsnip,sweetorbakingpotato,andturniporrutabagaintoalargepotandcoverwithwater.Bringwatertoaboilandcookfor30minutes. 2.Strainthevegetablesfromthewaterandreserve2cupsoftheliquidforlateruse.Letthevegetablescool. 3.Slicethecookedvegetablesandtheonionintomedium-sizedroundsofevensizeandthickness.Placethecookedveg-etables,onionandkaleintoalargebowl.Seasonwith1table-spoonofoliveoil,2tablespoonsofthespicemixandthelemonzest.Tosstocombine. 4.Heatovento350F.Lightlyoilan8-by-8-inchbakingdishwith1/2tablespoonoliveoil.Layertherootvegetablesinthedishasdesireduntilthevegetablesarealmosttothetopofthedish.Setdishasidewhileyoumakethesauce. 5.Strainthewaterfromthecashewsandplacethecashewsinablenderalongwith2cupsofreservedcookingwaterfromthevegetables,remaining1/2tablespoonoliveoil,1/2tablespoonno-saltsea-soning,thericeflourandthenutritionalyeast.Blenduntilin-gredientsarecombinedandnomorecashewpiecesremain. 6.Pourthecashewmixtureoverthelayeredrootvegetablesandbakefor35minutes,untilgoldenbrownandbubbling.
