RECIPE

Roast Fillet of Pork Wrapped inParma Ham with Madeira Cream

Serves 6

Ingrdins:

2 large pork llets12 large sage leaves12 pieces of Parma ham500g wild mushrooms

Mash potatoes

For h sauc:

2 diced shallots100ml Madeira100ml chicken stock50g butter100ml double cream

Recipe by Leigh Myers, Executive Chef at Nelson (Northwest) [email protected]

Mhod for h Pork:

1. Remove all excess fat and sinew from the pork llet and place to one side

2. Place a large sheet of cling lm on your chopping board and lay out the slices of Parma hamoverlapping each piece. Then scatter the sage leaves and place the pork llet directly in themiddle.

3. Place one side of the ham over the pork llet then roll tight using the cling lm and pinchingboth ends to achieve a tight cylinder shape.

4. Heat up a frying pan and remove the cling lm from the pork llet. Brown the pork llet in thefrying pan.

5. Place the pork into a pre heated oven at 180C for about 10-12 minutes; adjust cooking time

according to your oven. When you remove the pork from the oven leave it to rest on a woodenchopping board for 5 minutes and then cut into slices.

Whilst the pork fllet is cooking you can make the sauce which is very simple.

Place the shallots in a pan with the Madeira and reduce to a syrup. Add the chicken stock andreduce by half then add the cream and butter, add some seasoning and place to one side untilserving.

To Serve

Place some mash potatoes in the centre of a plate and arrange the slices of pork around, scatterover some cooked wild mushrooms and spoon over the delightful Madeira sauce.

of as a liflss monh, waiing for hspring bulbs to start to bloom but thereare plants that will give some colour.The winter owering jasmine, Jasminum nudiorum

will ower throughout winter when the weather ismild with little yellow owers on arching stems. Itis easy to propagate as stems that touch the groundwill form roots so if you know someone with anestablished plant you can beg some stems to start yourown shrub. I can be left to grow un-pruned, preferablyagainst a fence or kept trimmed to grow up a wall.Some winter owering heathers (Ericas) will start to

ower now so look out for plants in garden centres toadd colour around the base of your winter jasmine.Hebe red Edge is a good winter evergreen low shrubwith the tips of the buds turning a deep shade of deeppink in the cold of winter. It will grow to a low domeshape about 1m in diameter and 50cm tall.Coloured bark on trees and shrubs is also very

attractive. If you have space for trees, the silverbirches such as Betula ermanii with creamy ivorybark glow in the winter sun. Inter-plant withcoloured stemmed dogwoods such as Cornus albaElegantissima (red stems) or Cornus sanguineaMidwinter Fire (orange to red stems) and under-plantthese with snowdrops and crocuses for a stunningwinter show. This combination would look good in awide border lining a drive.

Buy in rst early seed potatoes if you want to grownew potatoes for early harvesting. Set them in a coolfrost free place in the light to encourage shoots to startgrowing. This is known as chitting your potatoes.

Keep netting over any brassicas to protect them frompigeons. Pigeons can destroy a plant in a day!Continue to dig over new beds or borders leaving

the soil in lumps to b e broken down by frost into acrumbly tilth ready for planting in spring. Put a layeror garden compost or manure on the top to helpimprove the soil structure.
