The Richmond City Virginia Cooperative Extension (VCE) Office is pleased to welcome our new 4-H Youth Development and Urban Agriculture Agent/Educator, Ms. Brittany Council. Brittany A. Council is a native of the Greensville/Emporia area. She received her Bachelor's degree in Agriculture with a concentration in Animal Science from Virginia State University and her Master's degree in Agriculture Education from North Carolina Agriculture & Technical State University. She is a member of Minorities in Agriculture Natural Resources and Related Sciences, Virginia Extension Service Association, Virginia Association of Agricultural Extension Agents, and the National
Association of County Agricultural Agents. Before coming to Richmond, Brittany was the former Agriculture and Natural Resources Agent in Greensville/Emporia. She was the first African-American female to serve in this role. Brittany has worked with numerous 4-H youth initiatives as well as 4-H Camp. She is an advocate for positive youth development and increasing agriculture awareness in all age groups. In the City, Brittany will focus on traditional 4-H programs, initiatives relative to agriculture and food desserts along with coordinating the Master Gardeners program. Brittany will assume her responsibilities in the Richmond City VCE office on September 15, 2014. Please feel free to welcome her at [email protected].

The Richmond City VCE campers experienced a delightful camping week in Jamestown, VA. There were many activities for our youth. The theme was Around the World in Five Days. This theme allowed the participants to experience numerous cultural elements, specifically through food. They enjoyed preparing quick and easy snacks relative to various regions of the world. Through their food experience, the campers traveled to Italy where they prepared an Italian pasta salad; to Mexico, by learning about the spices of the region as well as preparing black bean and corn salsa; then to the tropics, where they learned that the damp, sunny and warm region yielded many of the tropical fruits they used to make a
tropical fruit salad. Many of the recipes that were prepared required little to no cooking. This makes it easier for youngsters to feel comfortable with preparing snacks. The recipes also had ingredients that some participants had not tasted before. This provided them the opportunity to try something new. All of the groups also learned about knife safety, food safety, food handling skills. They went home with several recipes to share with friends and families. The campers look forward to making and enjoying snacks each year to come. They look forward to returning to the Jamestown campsite for the
4-H camping experience next year.

What’s New with Richmond City Urban Gardening Master Gardeners training registration is currently open for all interested volunteers. Richmond City is currently accepting applications for their fall training classes. Classes are scheduled to
meet on Monday and Wednesday from 6:00p.m. to 9:00p.m. from late September to early December. Application deadline is September 15, 2014.
You will be notified if accepted by September 16, 2014. The training class and certification is $150.00. Master Gardeners help Extension better serve the community by answering questions, speaking to groups, working with the 4-H and community projects as well as maintaining demonstration gardens and learning labs. Embryology Eggs-Citement! 2014 STEM Institute By: Carson L. Brown
The students
were loud,
enthusiastic and
energetic, most
importantly
brought a
passion for
everything under the sun. The greatest passion
was for our chicken eggs. We spent the first half
of the summer exploring biodiversity and human
impact on the environment through the insects
of our world. Outside, the children conducted
experiments on what bugs preferred to eat and
why, and we took information from our books to
design 3-D models of our
dream insects. There were a
variety of activities to keep
us busy while our eggs
incubated in the back of the
classroom.
Every morning and
afternoon, students would
burst through the door
and run straight to the
back corner to check on
the progress of our eggs!
We had strict rules
surrounding the eggs.
Always monitor the
temperature. Never
remove any single egg more than once. Wash
your hands before and after. Be gentle. Be gentle.
Be gentle. They learned and practiced the skill of
being a caring adult, one of the program’s key
elements.
One sleepy Monday morning, the kids arrived to
find the classroom empty. Word had spread and
children from across the institute tugged on my
shirt to ask if the chickens had hatched. They had
and were living in a pool of warmth in their
brooder next door.
The second the kids
met our down-covered
friends, they fell in
love. Practically climbing over each other to see
the chicks, maintaining order became the
facilitator’s biggest challenge. Once each child
was settled in a chair, baby chick in hand, it
became the perfect opportunity to teach them
about our responsibilities toward living creatures.
By summer’s end, the kids were reluctant to leave
and I was just as sad to see them go. We learned
a lot about the science of life
while acquiring skills to apply
outside the classroom in their
futures.

Richmond City VCE Youth Family Nutrition Program (FNP) Assistants are ready to start off the new school year with the elementary schools of Richmond Public Schools as well as Parks and Recreation youth. Their first program this year will be "Healthy Weights for Healthy Kids (HW4HK)". This experiential learning adventure, for youth ages 7-14, is focused on nutrition, physical activity and body image for children. HW4HK helps children understand that there is not just one healthy weight. There are different sizes and shapes. The six topics are Smart Foods, Smart Choices, Smart Drinks, Smart Snacks, Smart Activities and Smart Image. Lessons are based on the Experiential Learning Model a framework utilized by 4-H.
