Lent After the carnival we have a fastive period of 40

days from Ash Wednesday till Easter. During the fastive religious people can have:

one main meal, 2 light snacks at other times of the day They must not have alcohol, meat or

desserts. Typical fastive dishes are egg soup, roux soup,

sauerkraut, fish, bean soup, cibere soup and dried fruit.

Roux soup Make a roux with lard and flour. Add caraway seeds. Pour some cold water on it. Season it with salt, pepper and paprika. Boil it. Mix continuously while adding beaten eggs. Serve it with croutons or bread.

Easter We welcome spring. Nature revives. We commemorate Jesus' death and

celebrate his resurrection. The religious and folk traditions are

numerous.

Folk traditions at Easter Boys go to girls' house, tell girls rhymes and sprinkle girls

with water, perfume or soda-water. Girls give them painted or chocolate eggs and invite them to

eat from the Easter feast: ham, eggs, sweet bread, radishes, horseradish and sweets.

The Holy Week and Easter dishes

On Good Friday people eat fish, eggs, sauerkraut. On Holy Saturday people already prepare the ham

and the sweet bread for the feast. We eat ham:

hot with lentils, mashed potatoes, or spinach. cold and sliced with smoked sausages, boiled eggs,

radishes, grated horseradish and spring onions.

Braided loaf – the traditional sweet bread

Make sourdough by pouring lukewarm milk into flour, adding sugar and yeast. Let it rest.

When the sourdough is ready, mix flour, an egg, salt, margarine/lard with the sourdough.

Knead the dough. Let it rest until it rises to the double. Divide the dough into 4 parts. Braid the dough, let it rise, spread it with egg yolk and

bake it in the oven at 180°C.

Chicken soup Chop a chicken and put its parts into a large soup pot

and cover it with cold water. Simmer it. When it boils, skim off the foam. Put carrots, a celery, onions, potatoes, a kohlrabi,

garlic, green peppers, a bunch of parsley and the roots into the soup.

Chicken soup Season the broth with salt, pepper and chicken bouillon

cubes, if necessary. Simmer for another 2 hours. Take the meat off the bones and serve it on a separate plate. Take out the vegetables and serve them on another plate. Serve pasta or dumplings in a separate dish.

Roast lamb Cut the lamb into pieces. Season them with salt, pepper, garlic and rosemary. Put the parts into a big bag and let it in the fridge for a night. Put the lamb into a baking tin the next morning. Roast in the oven at 220 degrees for 2 or 3 hours. Serve it with chips and green salad.

Mix flour, melted margarine, sour cream, cheese,

and a pinch of salt.

Let it rest for a night in the fridge.

Roll it out till you get a thin layer.

Spread it with egg and sprinkle with cheese.

Cut the dough into thin and long sticks.

Put the sticks into the pan, and bake them in the

oven at 180° degree.

Honey zserbó Mix together flour, baking soda, confectioners'

sugar, butter, eggs, warmed honey and milk.

Blend until dough comes together.

Divide the dough into 4 equal pieces.

Roll them out and bake them in a preheated oven

(200ºC) for about 6 minutes.

Set aside to cool.

Honey zserbó Boil milk in a saucepan.

Add semolina. When it's boiled, let it cool while stiring.

When lukewarm, add confectioners' sugar, vanilla sugar, butter and an egg yolk.

Let it cool. Spread half of the filling on the first pastry sheet. Top with another sheet, and spread it with apricot

jam. Top with the third sheet and spread it with the

other half of the cream. Top it with the final pastry sheet and spread it with

melted dark chocolate.
