    UWEX FAMILY LIVING EDUCATOR“Have you ever wondered how the Foods

    Judge determines which entry has the best foodproduct?”

    Hot foods that sizzle or decadent desserts thatmake your mouth water are just a few sampleentries you may see being judged at theWashington County Fair. Some might even envythe task of judging such a large assortment of wonderful baked goods, main dishes or fruit filleddesserts. However, keep in mind that there is a

    method to the judge’s assessment of each foodentry. Judges follow a number of criteria to deter-mine the quality of each entry, not just by tastealone.

    The following are criteria a state registeredfoods judge may consider as s/he evaluates yourfood entry. First, the exhibitor needs to follow theguidelines listed in the fair premium book, i.e.,copy of recipe on index card, size of plate, num-ber of cookies on plate, etc.

    1. Appearance - Overall neat appearance; uni-

    form size and shape of fruit and vegetable pieces;

    golden brown color for certain baked goods; color

    of food items chosen; portion size on the plate.Garnishes can make a recipe more appealing aswell.

    2. Taste - Food product should have sufficientflavor; not too salty or overly sweet; and compli-mentary seasonings, if used. (Note that not all

     judges taste the food product.)3. Texture - Food product should hold its

    shape, not fall apart. Texture should be appropri-ate for type of food (i.e., smooth, not lumpy forpudding; al dente for pasta, tender-crisp for veg-

    etables, etc.). Texture is important on the outside,as well as the inside, of the food.4. Level of Difficulty - All recipes are not cre-

    ated equal. For example, homemade yeast rollsand breads are very precise in measurements,while a pudding parfait requires a steady hand increating neat layers. (The level of difficultycomes into play when considering merits andother special awards within one division.)

    5. Knowledge of Recipe Preparation – Thisguideline refers to the entrant’s ability to answer

    4-H YOUTH DEVELOPMENT EDUCATOR

    Before the gates of the county fair are open tothe public, hundreds of youth participate in achallenging test of skill. Any junior exhibitorshowing a non-animal exhibit at the WashingtonCounty Fair must sit down with a judge for face-to-face judging on the Monday before the fairbegins. Judges and youth fill the Ziegler FamilyExpo Center, and the building buzzes with ener-getic conversations about the learning experi-ences youth have had throughout the year.

    Face-to-face judging is a one-on-one discus-sion between the youth exhibitor and an adult judge of that project area. The judge will ask themember questions about their project. For exam-ple, the judge may ask, “Why did you make theitem this way? What are you most proud of accomplishing with this exhibit? What wouldyou do differently the next time?” Exhibitors arenot compared to other youth in the same catego-ry, but rather judged on their own merit. It is anopportunity for the exhibitor to tell their story of growth while practicing their communicationskills and receiving feedback from an adult withexpertise.For many youth exhibitors, the face-to-face judg-ing process can be intimidating. It’s not alwayseasy to strike up a conversation with a stranger.The experienced judges working at theWashington County Fair do their best to setexhibitors at ease, and youth have the opportuni-ty to gain confidence.

    The face-to-face judging experience is achance for youth to prepare for future jobs inter-

    views. As they explain their growth and learningto a judge, youth are building the skills they willneed to eventually describe their skills to a poten-tial employer. It is a meaningful way for youth tocelebrate their accomplishments while workingtoward future goals.
