He has been helping them for 23 years. His father was instrumen- tal in getting Dale and his brother involved in Scouts, even though he never had that opportunity as a child. Dale joined the Cub Scouts at age 6 while living in Oregon. When he moved to Marshall, he joined Boy Scout Troop 42 and his father became an assistant Scout leader. “We had always done a lot of camping and outdoor things when we were growing up as kids and it just kind of tied into it,” Dale said. “It worked out real well. He enjoyed it just as much we did, I’m sure.” Dale achieved the rank of Eagle in 1973. Eventually, his sons, Curtis and Chris Soendker, joined the Scouts. “I knew that when they became Boy Scouts, I was going to kind of take up the standard and move in and start helping out simply because it was all the things I enjoyed doing when I was a boy,” Dale said. “I knew that they would enjoy it just as much.” For the past 23 years, he has been an assistant Scout leader for Troop 61, sponsored by Christ and Trinity Lutheran Church. He has completed the wood badge training program and has attended the national camp school at least seven times. “The man is a walking encyclo- pedia when it comes to the Scout skills that he is able to pass on to our Scouts,” said Dale Hogan, another assistant Scout leader for Troop 61. “I am always in awe when Mr. Soendker holds court and shows both the Scouts and Scouters an easier way to accom- plish a task.” Dale received the Silver Beaver Award from the Great Rivers Coun- cil, the highest recognition a Boy Scout council can bestow to an adult volunteer leader. He is also a vigil member of the Order of the Arrow. He ser ves as the climbing chair- man of COPE (Challenging Out- door Personal Experience) for the Great Rivers Council. COPE con- sists of a series of custom-built chal- lenge courses that stress team- work, communication, trust, leader- ship, decision-making, problem- solving and self-esteem for the par- ticipants that go through the pro- gram. When he became involved with COPE, his sons and his daughter got involved too. “My daughter being involved — that was something a little bit spe- cial too because obviously dads aren’t that involved with girls and Girl Scouting. She always wanted to do a lot of the stuff that the Boy Scouts did that the Girl Scouts did- n’t do. This gave her the chance to do that plus it gave us a little bit more of a connection father and daughter ... so I was blessed for that opportunity,” he said. Chris said before his boys were old enough to join Cub Scouts, his father had been doing COPE for at least five years. Once he saw his siblings helping his father, he wanted to do it too. “I finally got the opportunity and went ahead and got involved in it,” Chris said. Chris is keeping the Scouting tradition alive by ser ving as a Cub Scout leader for Pack 61. He has one son in Pack 61 and another one in Troop 61. He also has a nephew in Pack 61. “As they got older, I just stepped right into it (a leadership role),” Chris said. He feels he will be part of Scout- ing for a long time. Dale has kept involved with Scouting because he sees the need for positive male role models. His wife, Connie, teases him that if he didn’t do so much with Scouts and volunteering, he might have enough time to keep the yard mowed and get things done around the house. “If the neighbors think less of me because I don’t mow my yard as often as they do, I don’t care. But if that kid that I didn’t help, because I had to mow my yard to impress the neighbors, lost the motivation and ended up being influenced in the wrong direction and maybe did something that screwed his life up and maybe hurt somebody else, that would bother me,” he said. Dale typically works with the older Boy Scouts. When he coun- sels the boys for advancement, he asks them what their goals are. If they say Eagle, he does whatever he can to help them achieve that dream. Even if they don’t, he’s proud of the effort each Scout puts forth and knows what they learn from the Scouts will follow them for life. He’s seen former Scouts become doctors and leaders in the military, law enforcement, industry and business. “I’m probably one of those guys who isn’t going to be out of Scouts until they put me in a box. If there’s anything that I am capable of doing, I’m probably going to be doing something. Dale Soendkerbelievesstrongly in the

tradition of Boy Scouts.He has been helping them for

23 years. His father was instrumen-tal in getting Dale and his brotherinvolved in Scouts, even though henever had that opportunity as achild. Dale joined the Cub Scouts atage 6 while living in Oregon. Whenhe moved to Marshall, he joinedBoy Scout Troop 42 and his fatherbecame an assistant Scout leader.

“We had always done a lot ofcamping and outdoor things whenwe were growing up as kids and itjust kind of tied into it,” Dale said.“It worked out real well. He enjoyedit just as much we did, I’m sure.”

Dale achieved the rank of Eaglein 1973. Eventually, his sons, Curtisand Chris Soendker, joined theScouts.

“I knew that when they becameBoy Scouts, I was going to kind oftake up the standard and move inand start helping out simplybecause it was all the things Ienjoyed doing when I was a boy,”Dale said. “I knew that they wouldenjoy it just as much.”

For the past 23 years, he hasbeen an assistant Scout leader forTroop 61, sponsored by Christ andTrinity Lutheran Church. He hascompleted the wood badge trainingprogram and has attended thenational camp school at least seventimes.

For Better Health, Make SmallChanges One Step at a Time(NAPS)—When it comes to health, making positive lifestyle changes that

include losing weight and being more active is a goal for many people. Butoften times, no matter how good the intentions, these changes only last a fewweeks. Even if you know what to do to improve your health, figuring outhow to do it and fitting it into your daily routine can present the biggest chal-lenges.

Making small changes — step by step — can go a long way to help youmanage or even prevent manyserious health problems and dis-eases, such as diabetes. For exam-ple, if you are at risk for type 2 dia-betes, losing a small amount ofweight (that’s 10 to 15 pounds ifyou weigh 200 pounds) can helplower your chances of getting thedisease. Try making small butgradual steps to be more activeand follow a healthy meal plan.You can start by walking 10 min-utes a day and gradually work upto 30 minutes a day, five days aweek, and drink water instead ofsoda at each meal. If you have dia-betes, making similar types of changes in your lifestyle can help you reachyour blood sugar (glucose), blood pressure and cholesterol goals to preventserious diabetes-related health problems such as heart attack and stroke.

Getting StartedSo how do you get started making changes in how you care for your

health? It’s all a matter of trying and learning. It’s about choosing a goal andworking toward reaching your goal. Making a plan and taking the first stepwill help you reach your goal.

The National Diabetes Education Program (NDEP) provides a number oftools to help you better understand HOW to make changes in your day-to-day life to help you stay healthy. If you are ready to take the first step towardbetter health, the NDEP’s Just One Step resource is a great place to start. Thistool helps you identify one small step to take for a short period of time (suchas one month) to begin to implement healthy changes. Once you have takena few steps, you may need help making these changes stick as part of a dailyroutine. This becomes much easier if you ‘Make A Plan.’ NDEP’s Make APlan tool can help you think about what is important to your health and howto make a plan to help you reach your goal.

With the exception of one more youth huntand a few managed hunts, today kicks off thelast of the firearms deer seasons. In otherwords, it’s time to start filling those odd cor-ners in the deep freezer with small game. Butas much fun as putting small game into thefreezer can be, getting it back out and prepar-ing it for the table should be just as enjoyable.

Alas, that’s not always the case, and whenit isn’t, the culprit is almost always a cookwho — perhaps unknowingly — is trying tomake a sow’s ear out of a silk purse. Wildgame is almost always best when it’s preparedso that it’s unique flavors are enhanced ratherthan overwhelmed. Of course, eating it shouldalso be a pleasant experience, which, to me,means the meat in question is tender and juicy.

Young specimens of every species of smallgame found in Missouri is naturally tender,moist and flavorful. Therefore, the numberone secret to preparing it is to do no harm.Choose recipes that don’t overpower the fla-vor of the meat. In addition, as a general rule,it’s best to cook meat that’s already tender atrelatively high temperatures for a short periodof time, while avoiding overcooking.

I realize that frying is no longer politicallycorrect in some circles. Nevertheless, mypalate remains convinced that young squirreldipped in buttermilk, dredged in seasonedflour and fried to a light golden brown is theultimate definition of fine dining. And as faras that goes, a young rabbit, pheasant or quailprepared the same way will give the squirrel arun for its money.

My favorite way to fix young geese is tofilet the meat from the breast and divide it intofour equal pieces. Wrap a slice of baconaround each piece and grill it exactly as youwould filet mignons. Like beef, goose filetwill be tenderest if it’s cooked rare or mediumrare. The same basic recipe also works wellfor duck, but roll half a breast and use thebacon to secure it.

So how do you tell a young bird or animalfrom an old one? Size is a reasonably accurateindication of the age of most waterfowlspecies. Young rooster pheasants have shortdull spurs, and old ones have long sharp ones.Female squirrels who’ve never nursed youngand male squirrels with undeveloped testes arealmost always tender. Missouri’s rabbit seasonopens too late in the year to take advantage ofsuper-tasty half-grown bunnies, but very fewcottontails live long enough to get tough. Thesame thing can be said for doves and quail.

So far, so good. Cooking young smallgame is as easy as it sounds. In fact, any ofyour favorite recipes for domestic meat willwork just fine.

On the other hand, full grown small game

of unknowable age presents a different culi-nary challenge. For example, a fried squirrelthat began its life matching wits with Indiansmight taste OK, but few people are willing tochew long enough to find out.

As with young meat, one secret to successis to avoid recipes which disguise or distortthe meat’s natural flavor. Conversely, thesecret to cooking the meat from older animalsis to use methods which employ plenty ofmoisture, relatively low temperatures and longcooking times.

I enjoy cooking from scratch, but there’sno denying the convenience and consistencyof using canned soups to provide moisture.Cream of mushroom, cream of celery, chickengumbo and tomato are among the most popu-lar choices, but they’re far from the only ones.

Most recipes call for browning the meat inflour prior to beginning the slow cookingprocess. This isn’t necessary to get the meatcooked, but it does yield a dish with more eyeappeal.

In at least partially the same vein, manyrecipes call for onion. I think all slow cookingrecipes benefit from a generous amount ofonion. I soften onion by microwaving it forabout a minute and then add it to the meat forthe last couple of minutes of browning.

Several of the recipes I use do quite well ina crock pot, and crock pots offer the advantageof requiring minimal attention. Other recipesdo better when baked in the oven, and a feware at their best when simmered in a coveredskillet. Experiment to find out what worksbest for you.

I usually like to experiment when I’mcooking, when I want to follow a printedrecipe, the first cookbook I reach for is “DuckGumbo to Barbequed Coon” by Keith andTheresa Sutton. If you want to send your tastebuds on a real adventure, this book includesrecipes for coot, possum, skunk, bobcat and afew other even less imaginable critters.

Actually, most non-outdoor cookbooksinclude recipes for preparing the more com-monly eaten wildlife species. Be forewarned,however, that some of these recipes deliber-ately disguise the wild meat’s true flavor.
