Katie Chavez is a lifelong resident of the High Desert. She graduated high school from the Academy for Academic Excellence and is currently a student at Victor Valley College where she is a writing tutor and an active musician. Katie is also a freelance writer for H.D. Living magazine on her time off. While the H.D. is home, she hopes to continue her travels and see the world.

Stephanie Keyes was born and raised in Southern California and has been a resident of the High Desert since 1989. She enjoyed her profession as a hair designer for fourteen years but ended that career to continue her education and graduate from Victor Valley College. It was there that she discovered her love for writing, and with the encouragement of a few inspirational professors, she has continued to express her love of prose by way of freelance writing. In addition to writing freelance for H.D. Living magazine, Stephanie also works in the Accounting Department for TRL Systems. However, Stephanie’s most rewarding accomplishment shines in her daughter, Emily.

Born and raised in New Rochelle, New York James Piar decided to become an electrical technician after College. At the age of twenty eight he headed west to Orange County starting up two businesses of his own. In 2000 James, along with his wife and two daughters, moved to the H.D. Town of Apple Valley. James has been employed the last five years for Valley Hi Nissan as a Sales & Leasing Consultant. When starting as a sales consultant five years ago James became friends with Frank Castillo (CEO H.D. Living). Frank and James have since become partners in business and James has taken the role with H.D. Living magazine as its Sales & Marketing Director.

I AM PLEASED TO SAY that the launch of H.D. Living magazine has been a success. Thank you to everyone who enjoyed the first issue and emailed, called or sent letters letting us know that you too were excited to see our very own regional lifestyle magazine here in the H.D. As we move forward in the second issue, you will notice that we added a new section called “up Front” where we will feature upcoming events, local lifestyle and people in our community.

In this edition of H.D. Living magazine we bring your our first annual “Food Issue“ as Tere Kidd travels the Victor Valley to bring you some of the “High Desert’s Best Dining Destinations.” Now, of course, we can’t feature all the restaurants in the area, but I am confident you will enjoy the ones we feel are great places to dine. We also have a great feature on the lesser known coffee houses here in the Victor Valley; Susan Landers explores these in “The Best Places in the H.D. to Grab a Cup O’ Joe.” And of course, it’s that time of year again as Stephanie Keyes guides us around the Mall of Victor Valley and beyond in “Top Back to School Shopping Destinations.” Also, check out our launch party photos in H.D. A Better WayThERE’S MORE to the month of October than the candy-stained trails of trick-or-treaters; be sure to take some time out to remember a worthy cause, as October is National Domestic Abuse Awareness month. Saturday, October 4 the h.D. will gather to commemorate and support the 20 years of heroic service provided by “A Better Way” Domestic Shelter and Outreach Program. A true testament to the heart and humanity of our community, this non-profit organization works unceasingly to bring a better way of life to abuse victims throughout the Victor Valley.

Upfront Event Spotlight

The city of victorville has long recognized that the High Desert community is comprised of a rich and culturally diverse population. The Spice of Life festival, presented by the City in partnership with charter communications, the high desert hispanic chamber of commerce and Wells Fargo bank, was designed to celebrate and embrace the various cultures that exist side by side in the community through a one-day event in “Old Town” Victorville. It serves not only as a means to bring the community together in celebration, but to foster tolerance within Victorville and the Victor Valley.

This year’s Seventh Annual Spice of Life festival will take place on Saturday, October 4th from 10 a.m. – 6 p.m. The event features continuous live music and dance performances on two large stages at each end of the street, showcasing the very best of our local talent.

The Food Court, located in the middle of the festival, offers

even more music to enjoy while feasting on a variety of ethnic cuisine from around the globe.

More than 100 vendors line the street offering something for everyone, from jewelry, arts & crafts, home décor and outdoor living items, to health and beauty products.

And there are countless opportunities to meet with representatives and learn more about our local service organizations, businesses, and educational institutions.

celebrate Womenthe eighth annual today’s woman expo

THE EIGHTH ANNuAL Today’s Woman Expo comes back to town October 18th! Mark your calendars for a girls’ day out and meet us at the San Bernardino County Fairgrounds from 9 a.m. to 3 p.m. for a celebration of women’s whole health, where women of the H.D. can come together and invigorate their lives physically, emotionally, and spiritually. Following the star-power precedent of past years, which included the likes of Suzanne Somers and Diahann Carroll, this year’s event proudly boasts as its guest speaker, Dixie Carter, an Emmy-Nominated actress (of Designing Women and Desperate Housewives fame) and singer, as well as Salvation Army National Spokesperson, the Christian Children’s Fund Goodwill Ambassador, and Breast Cancer survivor.

Admission is just $5 and participants are engaged in a holistic experience, which includes information addressing women’s issues alongside over 100 vendors, exhibits, and presentations. An array of services and festivities will also be offered, including everything from free health screenings to a fashion show produced by Curves.

To date, the Today’s Woman Foundation has donated over $45,000 to the local American Cancer Society. AT THE AGE OF 11, Brittany Wagner was traveling with her mom and suddenly caught a glimpse of beauty pageant winners in the car alongside theirs. The girls all wore sparkly crowns and lovely gowns. Though admittedly very shy, Brittany says she knew right then what she wanted. “I looked at them in awe. I told my mom I wanted a crown just like theirs and that I wanted to be a princess too!”

Thus began a career in pageants that has allowed Brittany to wear many crowns; among the more than 60 titles she has won are Pre-Teen Miss Victor Valley and Miss Empire America, as well as crowns in contests for Hawaiian Tropics, Gold Coast, and Ameri-can Starlet. She has been especially proud to wear the Miss Victor-ville crown, for while there are other ranks of pageant winners, she says the “Miss Title is the leader, the one who is expected the most of, has the most responsibility and holds the most important job. This position is a highly admired and an honorable position. So to win my city title and represent as the Miss Queen is a dream come true.” Now, as the reigning Miss Empire America, Brittany is the “queen of the queens.” As Miss Victorville, she competed against other reigning beauty queens from cities as far-flung as Las Vegas and Lake Havasu to win Miss Empire America.

October will find Brittany competing in the Miss California pageant. With a chance to represent the state, Brittany will have many eyes upon her as a role model for young girls. She, therefore, wants to be known as a young woman of high moral standards and integrity. Beyond the Miss California title, what’s next for this am-bitious young woman? “I will be graduating from VVC at the end of this summer semester with my Associates. I will be attending the New York Film Academy at their LA campus starting this fall, to pursue my passion for acting!” Whatever Brittany sets out to do, she will certainly go into it with confidence and a strong desire to succeed; her winning attitude has brought her “countless opportu-nities,” respect, and lifelong friendships that will carry her into a bright and prosperous future!—Susan Landers

ON A BRISK APRIL NIGHT, as the orchestra plays a lively overture enveloping the darkened theater in familiar song, the lights warm and the curtains open revealing a bustling Broadway of days gone by. Gamblers, missionaries, and a hodgepodge of colorful New York characters fill the stage to shape the opening scene from the classic American musical Guys and Dolls. This feel-good musical/comedy marks the jubilant reopening of the Victor Valley College Performing Arts Center. Ladies and gentlemen, the PAC is back.

In June of 2006, the lights went down on the PAC as a two year expansion took place, increasing the number of practice rooms and providing an enhanced greenroom to meet the needs of a community thirsty for the arts. Now back in operation, the chronicle of the PAC continues as the High Desert grows and produces exceptional talent.

The gala performance of Guys and Dolls showcased just some of what performers of the H.D. have to offer. The show was a red carpet event as citizens of the desert gathered in celebration to reunite with an old friend. “Over the years, I have seen so many great performances here,” says twenty-two year resident of the H.D. Laurie McManis, “I have fond memories of the PAC. The High Desert really wouldn’t be the same without it.”

Those fond memories stem from years of memorable and diverse events shared by the community, including a number of notable performers that have graced its main-stage. One such performer was comedian and original host of the Tonight Show, Steve Allen. In fall of 2000, Allen’s last live performance was given at the PAC just days before his death. Featuring entertainers like Allen is due in part to the experienced manner in which the venue is handled.

Being the only desert theater to house a professional staff, a wide variety of local acts have found their way to the stage. And many groups have already had the chance to become reacquainted with the theater. The VVC music department presented the most staggering salute to the rebirth of the PAC with its presentation of “A Beethoven Festival.” Over one-hundred musicians gathered on the main-stage to perform Die Weihe des Hauses (“Consecration of the

But the main-stage is only one of two performance locations in the PAC. The other is the newly added Black Box theater. It is a true box in size and shape and is painted completely black. This experimental theater is smaller than the main-stage and sports countless production possibilities. The stage and audience can be moved and configured based on the needs of any individual show. PAC coordinator Eric Pearson describes how the smaller venue “gives a very intimate interaction between the performer and the audience.” For the first show in the Black Box, William Shakespeare’s A Midsummer Night’s Dream, it is set up nearly in the round. Three sides of the stage go all the way up to the first row of audience seating.

This new portion of the PAC adds to the artistic possibilities when it comes to showcasing the arts. Since originally opening June of 1981, showcasing the arts in the H.D. is what the PAC has done for over twenty-five years. “Some locally produced productions have brought out just wonderful talent,” says Pearson. “You never know when the next Robin Williams, or Christopher Reeve, or Eddie Murphy is gonna pop through our doors. They have to start someplace.”

For the High Desert, there is no better place to start. The Victor Valley College Performing Arts Center has been and will continue to be the principal theater in the area and the focal point of performing arts in the H.D. Presenting everything from Christmas Eve and Easter services to rock concerts and song and dance productions, there is something for everyone at the PAC. It is also open for anyone to rent and become a part of its growing history.

Located in a welcoming environment next to the glistening water of the VVC lake, taking in a show at the PAC is an experience no H.D. resident should be without. The arts and culture of the H.D. are home once again. HDL

back to school shopping tipsHave a plan! Make one list for closet

must-haves and one for classroom needs. Make sure to map out a plan of attack so that you don’t find yourself wasting gas, running around town in circles.

Make sure that your kids are wearing clothes they can change out of easily and get back into without breaking a sweat. Skin tight pants and shoes with a million laces can make for an aerobic workout in the dressing room.

Break it up! Shopping with a pooped out shopper can be non-productive, and let’s face it, somewhat painful. Watch for the pathetic expressions, and try limiting your sprees to just a couple of hours at a time. In fact, it might be wise to buy the must-haves now, and then wait a couple of weeks and hit the sales. After all, it’s still blazing hot in the HD at the start of the school year, so some of the fall fashions may be too warm to wear.

Save money on classroom staples (no pun intended, really). Check out your local dollar or ninety-nine cent stores for the standards—pencils, paper, correction fluid, folders…and fun things, such as locker mirrors, magnets and organizers. You’ll be amazed at what you can get crossed off of your list for just a few bucks. Knock yourself out at those prices!

And last, but certainly not least, make it fun! Shopping can be a drag if it’s thought of as a chore, so keep the mood positive and make a game out of it. “Let’s see if we can get ‘X’ amount of items crossed off of our list in ‘X’ amount of time!” Reward yourself with an energy boosting smoothie or a frozen yogurt treat, even if you fail to hit your target. A fancy coffee drink can do wonders to put the spring back into your step. Have fun, bond, and enjoy!

la casita Mexican RestaurantLA CASITA MExICAN RESTAuRANT is probably the oldest Mexican restaurant in the H.D. It has been serving their specialty, chili verde - their most ordered dish on the menu - to their appreciative customers and friends for 27 years. And, it looks like they won’t be quitting any time soon. There are now two locations with the newest at the entrance to Spring Valley Lake. The restaurant is also proud of their hand-made tortillas. If chili verde is not for you, there is a full Mexican menu complete with all the savory dishes you crave.

The staff is attentive and willing to please. The Mexican music is kept in the background giving you and your dining companion a chance to chat over a couple of Margaritas while you wait for your food.

The restaurant will cater your parties or meetings, and it also has a banquet room if you prefer to leave all the mess and fuss to them when it comes to clean-up time.

On Mondays and Tuesdays, children ten and younger eat free with each combination plate ordered by an adult. There

Mama carpino’sMAMA CARPINO’S is a little piece of Tuscany. Once inside you feel as though you are in a trattoria in Italy. The walls offer faux views of the countryside, and the feeling is calm and pleasant.

Service is prompt and the servers are very attentive. Beginning in September, the restaurant will undergo some significant changes. The changes include a 500 seat banquet facility, a 40 seat bar, and an underground wine cellar with 1,000 bottles of wine. Oenophiles will be in their element. In the meantime the restaurant, as it is now, will remain open.

The bar on the weekends gets very lively around 7 p.m. to 8 p.m. The décor in the bar is elegant and will exceed your expectations.

The dish not to miss is the potato cheese soup on Saturday nights. You have to resist licking the platter clean! The rest of the menu includes the all kinds of Italian fare, but the foccacia bread is the best anywhere. It is served with the usual balsamic vinegar and olive oil, but the quality of the ingredients, plus just the right herbs, is unbeatable.

kinariKINARI IS IMPRESSIVE even before you get your food. The interior design is nothing short of impeccable good taste. It’s like an oasis on a very hot day. Asian meets contemporary in a kind of natural fusion. And the good news is, it doesn’t stop there. The cuisine itself is a fusion, or coming

together, of Thai and Chinese. However, this is where the comparison ends. This is not your usual Chinese restaurant.

Server Kristine Steege explains that the restaurant was originally Thai cuisine. Kinari was named after a mythical creature that was part human and part beast. The name remains, but the cuisine has evolved. A lunch menu, served from 11:00a.m. until 3:00p.m., offers several choices for only $6.95. The menu includes some great choices such as orange chicken or shrimp with a little heat. The dinner menu offers steak and seafood. You can find East Asian filet mignon on the menu for only $18.95. For something a little exotic, try green tea ice cream for dessert.

At night during happy hour, from 4:00 p.m. until 7:00 p.m., drinks are only $3.00. The list includes Royal Washington Apple, Orchid Petal, and Kinari Breeze. The Breeze includes Ciroco Vodka, Blue Curacau, grapefruit juice, and simple syrup. If you are looking to impress friends or clients, this is the place to go.

Alfredo’s Mexican RestaurantALFREDO’S IS A LARGE CAPACITY restaurant with all the Mexican dishes you expect and ample servings of them. The chips and salsa are plentiful and tasty, and the Margaritas are delicious. Salads are served with the house pumpkin-seed dressing, Alfredo’s own recipe.

The ambience is classic Mexican Restaurant style, and the staff is friendly and helpful. They cater parties for any occasion, and have a good sized open floor plan where large parties can be accommodated in the restaurant.

The restaurant closes by 8:00 p.m. on Friday and Saturday, but the bar stays open for dancing and $ 2.00 tacos. Sometimes there is live music, and at other times a DJ takes over. They play Mexican and club style music.

di napoli’s DI NAPOLI’S is a great place to bring the kids and maybe the dads who always wanted to be firemen. There is an actual fire engine in the main dining room, and even some fire gear, along with other memorabilia. The place salutes not only firemen, but Frank, Dino, and other members of the Rat Pack. Their likenesses appear on the walls, and different sections of the restaurant have street signs eponymously named after the 1950s and ’60s entertainers. Their music is played quietly in the background.

Pizza and other Italian fare are expectedly on the menu, but when you order the bruschetta from the appetizers’ menu, you will be pleasantly surprised with this delight. It is the best bruschetta ever. Loaded with marinated artichoke hearts on thick slices of rustic Italian bread, the bruschetta is something to lust after.

las brisasALTHOuGH LAS BRISAS fare is primarily Mexican, the specialty is Prime Rib with twice baked potatoes for $18.99 and served Wednesdays after 5 p.m. Reservations for special nights are recommended. The menu covers all the Mexican items you expect at reasonable prices. On Thursdays, baby back ribs are served after 5 p.m. with coleslaw, corn on the cob, side salad or soup. Steak and seafood go from $13.99 to $29.99.

Their specialty drink is their Cadillac Margarita made with their very own sweet and sour mix. Mint mojitos are also very popular.

They have a reasonable wine list, and

server Robert Lobo says that Sangria will be the drink of choice for warm afternoons and evenings.

The entrance is in the back of the building where there is ample parking, and where you are welcomed by a small stream trickling over the smooth rock bed. You pass through the patio that can accommodate up to 100 people. Inside, the kids will be fascinated by the five aquariums that should keep them occupied until the food arrives. No loud music, just pleasant guitar played in the background to accommodate conversations, and soothe the nerves.

paulina’s Mexican grillTHERE IS MORE to Mexican food than tacos and burritos, at least at Paulina’s. The restaurant, named for owner Maria Michel’s daughter, is as close to fusion cuisine as you can get.

Maria says she is offering an alternative to the heavy food of the usual Mexican restaurant, but that doesn’t mean flavor has been thrown to the wind. Her dishes are a real fusion of American and Mexican food. Mojave rib eye steak topped with chipotle pepper butter is just $12.25. The steak is a great deal; it is tender and flavorful. Paulina says the chipotle pepper sauce keeps it moist even when ordered well-done.

On the appetizer menu, you will find crab cakes served in cilantro cream sauce, and for vegetarians they serve beautiful volovanes –a homemade pastry shell filled with sautéed vegetables served with mushroom infused cream sauce.

Dessert is unique, too. They make their own apple tart, but the one you’ll want to try is Vanilla Chambord, vanilla ice cream served in a chocolate cup topped with raspberry liqueur.

Hidden away on Monarch Boulevard in the Monarch Plaza, the restaurant lies between Cottonwood and Mariposa in Victorville. The décor is quiet and tasteful. A family- owned restaurant run with a lot of heart, and Paulina is there to greet you with a very pretty little smile. You’ll be smiling back after you try the food.

chateau changCHATEAu CHANG is a great place to enjoy a romantic dinner. The gourmet cuisine is definitely for adults. The perfect place for business dinners, it is quiet - the soft classical music doesn’t interfere with conversation—and tranquil. Owner Jan Chien says that the restaurant is a popular place for business meetings, while dinner attracts couples for an evening out.

Still, Chateau Chang is all about the food - food you’re not likely to find elsewhere. Chien says no other restaurant in the H. D. serves lobster thermador, and though there may be some that serve ostrich burgers, Chateau Chang serves ostrich steak dinners for $24.95. Another rare treat on the hor d’oeuvres menu is quail, charbroiled and served in a light broth. Chien emphasizes that everything is made from scratch, and one of their original recipes is the parmesan peppercorn salad dressing. The house made crème brulee is another specialty made from scratch.

The fusion of French and Chinese cuisine provides an interesting menu featuring a large variety of steak and seafood with an Asian touch. Portions are unexpectedly large, so be prepared.

The signature drink is the mai tai. Lunch is reasonably priced and dinners are from $20 to $42.

oggi’s pizza and brewing companyOGGI’S (PRONOuNCED OH JEEZ) is the H.D.’s first eatery that specializes in making its own brew right on the premises. As you walk in the door, the first thing you see is the large tanks where the beer is made and stored. They hold some impressive beers that are made from Oggi’s own recipes. These include a Black Magic stout that is 7.0% by volume alcohol. It is an American style stout that is a full-bodied dark brew layered with chocolate flavors.

Their most asked for beer is called Hop Juice. It is infused with hops in every step of the brewing process which makes it a stronger beer. The alcohol content is around 9.4% by volume. Some of their lightest beers are the California Gold and Paradise Ale. They are 4.5 % by volume and 4.8 %, respectively.

Generally Oggi’s beers have a much higher alcohol content than beers you find in the grocery store which are around 4%. Questions? The servers are very knowledgeable and ready to answer any questions you might have about the beers they offer.

Just because they specialize in beer-making doesn’t mean they skimp on the food. Oggi means fresh and today in Italian, and their pizza is the official pizza of the San Diego Chargers and the San Diego Padres. There are over 16 screens in the restaurant where you can view the games.

The menu features everything from a good-sized selection of pasta dishes to wraps, salads - 12 of them - sandwiches that include bruschetta chicken ciabatta, and chicken specialties such as Madeira chicken. Oh yes! And pizza and calzones - 21 different kinds, and if you don’t find exactly what you are looking for, you can create your own from approximately 28 ingredients. HDL

Wine pairing 101

HAVE YOu EVER been inspecting a wine list but when the server comes to take your order, you slide the list back in its place and order your usual beer or cocktail? Well, if you’re somewhat new to the wine world, you may find yourself intimidated by the “wine rules” that can sometimes seem a little daunting. The first “rule” is that there really are no rules; there are suggestions, and there are recommendations. It’s true that there are certain wines that complement specific foods, but if you’re not sure which wine to order with a meal, don’t be afraid to ask for a recommendation.

The common rule that you should always pair white wine with fish and red wine with red meat seems like a safe bet, but it doesn’t always necessarily ring true. Heartier fish, such as salmon, can actually be paired with a good Merlot. It’s far better to balance the weight of the wine with the weight of the meal. So, if you’re having a rich, hearty meal, it would be wise to pair it with a bold, full-bodied wine that can stand up to it, such as a good Cabernet Sauvignon. Likewise, a delicate fare, such as steamed fish is better paired with a light wine. And, if you’re eating something fruity or sweet, you’ll be in for a bitter shock if you don’t pair your dessert with a wine that is equally as sweet, or even sweeter, than your treat.

Confused? Don’t be. You’ll know right away if you’re drinking a wine that clashes with your meal. And, when in doubt, just ask for a suggestion. The bottom line is that you should match the wine that you like with the food that you like…and if your rebellious palate prefers to break all the rules, well then do so! Not sure what you like? If you plan to entertain this Thanksgiving, Jason recommends the Trefethen 2006 Chardonnay—a 100-percent estate grown wine of the family-owned Trefethen Vineyards. “This one is for all you die-hard oaky/buttery Chardonnay lovers!” Pale gold in color and rich in flavor, this wine is alive “with aromas of apple, honey, vanilla and hints of light butter. In the mouth you’ll find this wine nicely balanced with flavors of apple and hints of lemon curd that follow through with a refreshing minerality…” It’s a delightful complement to a Thanksgiving meal. You can find this Chardonnay at Casa De Vino for $36.95.

Another one of Jason’s fall favorites is the Kali Hart 2006 Pinot Noir. It comes from Robert Talbott Vineyards in Monterey County and is named after Robert’s youngest daughter, Kalin. According to Jason, “the 2006 Pinot is very approachable, even for the most inexperienced Pinot fan.” It has a nice ruby red color, with scents of freshly picked berries and floral notes…” A bouquet of flavors tease the palate with traces of “lush, ripe, berry, sweet cherry, and hints of spice.” Casa De Vino offers it for $19.95.

If you’re looking for a “deep, dark wine with the classic aromas of raspberry, cherry, and a plethora of spice, vanilla and leather notes,” head to Casa De Vino for the Justin 2006 Cabernet Sauvignon! This Cab is great paired with poultry, game, lamb and roasted meats. Jason describes a sip of it poetically: “A soft, but lush, dark berry fruit coats the palate with nice acidity and tannins…” Before partaking in a glass, Jason recommends “decanting this wine for at least an hour for full enjoyment.” Casa De Vino can help you stock your private wine cellar with this fine Cab for only $25.95 a bottle.

AS THE TEMPS IN THE H.D. begin to cool and the days be-come shorter, these are the very few indications of seasonal change we experience. Here in the H.D., we don’t have the large scale and vibrant colorful turning of leaves other regions enjoy, but that doesn’t mean that we don’t have seasonal observances. September and October are filled with annual events such as Phelan Phamily Phun Days, Hesperia Days, the Spice of Life, Calico Days, the Ghost Haunt at Calico, as well as many and varied golf tournaments. Your city and town Chambers of Com-merce will have all of the details for these and other events. As we gear up for the holiday season, you may be planning Halloween celebrations, and some history of the holiday may be of interest.

The modern celebration of Halloween is a very American creation, but like most things American, the tradition of scary masks and trick or treat has its origins in the old country. Our modern Halloween dates back to the celebration of the Celtic New Year, which was observed on November 1st. During the rise of the Christian era, the Church designated Novem-ber 1st All Saints Day, aka All-Hallows, thereby making the night before All-Hallows Eve ; over the years this became Halloween.

Today, Halloween is second only to Christmas in Americans’ holiday spending. Between costumes, parties, decorations, candy and other food items, Halloween is a bonanza for retailers. Thanks to safety concerns, the old days of Trick or Treating, wandering neighborhoods and knocking on doors asking for goodies, are being replaced by organized celebrations with costume parades, games, and haunted houses. Keep a lookout for lo-cal organizations offering safe Trick or Treating and other fun. Awesome Pumpkin CookiesVictorville resident Rae Day offers this great holiday cookie recipe to make with your little ghouls and goblins!

1/2 cup salad oil1 cup sugar1 cup canned pumpkin1 cup raisins1 cup chopped dates1 cup chopped walnuts or other nuts of your choice1 tsp vanilla1/2 tsp cinnamon1 tsp baking soda1/2 tsp nutmeg2 cups flour Cream sugar with oil. Mix in pumpkin, raisins, dates, nuts and vanilla. Add dry

ingredients. Let stand for 4 hours or overnight. Drop by TSP. onto greased cookie sheet. Bake at 375 for 10-15 min. Enjoy!
