upped my expectations and a good old-fashioned sandwich just won’t do thetrick this time. Year officially kicks off today (Feb.10). A new year means new possi-bilities, and it’s believed that theYear of the Snake centers aroundsteady progress and attention todetail — focus and discipline aredeemed necessary for goals to beachieved. Jade Dynasty SeafoodRestaurant in Ala Moana Center’sHookipa Terrace is looking forwardto a year filled with prosperity andcontinued success.

“Business has been good for us.We’ve been very lucky,” says gen-eral manager Gary Chan, who’sseen the restaurant expand its culi-nary repertoire throughout theyears. “What sets us apart fromother Chinese restaurants is ourapproach to Canton-style andHong Kong-style cuisine. Ourchefs are very creative and are onpar with the latest dining trends,and our executive chef recently re-turned from Hong Kong withmany new ideas to incorporateonto the menu,” he adds.

As the premier restaurant toopen in the U.S. as part of Para-mount Banquet Halls, which cur-rently operates more than 20 lo-cations throughout Hong Kong,this 8,250-square-foot establish-

ment rolls out the red carpet forits patrons as the restaurantshowcases its festive ChineseNew Year menu.

Select from two prix-fixe menus($318 for a table of 10 or $438 fora table of 10) that are offeredthrough Feb. 28.

“All menu items are signature

dishes that are always enjoyedduring Chinese New Year, are localfavorites or Chinese delicacies,”Chan explains.

“On New Year’s Day, you’resupposed to have Jai, ormonk’s food,” Chan says. “It’sa vegetarian dish that is be-lieved to cleanse you for theyear and give you a freshstart. Jai is a traditionalNew Year’s food, whichconsists of black mush-rooms, long rice, fungus,water chestnuts, snowpeas, cabbage, ginkgonuts and bean curd.

“Our Steamed WholeFish (uhu) with Scallion andSoy Sauce also is an impor-tant part of the ChineseNew Year’s feast becausethe fish signifies an abun-dance of good fortune.”

And new to the menuthis year is Baby Pak Choywith Crab Meat and CarrotSauce, which Chan describesas a unique dish featuring abed of fresh pak choydoused with a special sauceof egg whites, crab meat andcarrots.

“We’re very excited aboutthis new dish, and we mustcredit our chefs, their creativ-ity is very impressive. Ofcourse, for dessert we areserving Mochi Balls in aSweet Ginger Broth.”

Then, for a taste of royalty,indulge in Jade Dynasty’ssecond menu that is fit for aking. For $438, your table of10 can feast on 10 exquisitedishes, such as SteamedScallop in Half Shell. A recentaddition to the menu, this ap-petizer is garnished withminced garlic, green onionsand served with long rice.Then Imitation Shark’s FinSoup with Crab Meatcleanses the palate just intime for Live Lobsters with

“The first day of the newyear is when you’re supposedto visit your elders in your im-mediate family. On the sec-ond day, you visit your ex-tended family and then on thethird day you’re not to visitanyone. They say if you do,you will get into a big argu-ment or conflict that will lastthroughout the year. Fromthere, you can go and visitmore family and friends in thedays to come,” he advises.

I’m not a morning person atall. So, if there’s ever a chanceI can sleep in, maybe on the

weekend or even a vacation, youcan bet I’m doing just that.

But when I’m finally up and go-ing, breakfast menus have beenput away and restaurants areserving lunch. So, it was nice tolearn that The Veranda at thelegendary Moana Surfrider, AWestin Resort & Spa in Waikikihas added some of its popularbreakfast offerings to its lunchmenu.

Available are the SuperfoodOmelet ($19) with fresh spinach,tomato, broccoli, onion and threecheeses, and served with skilletpotatoes and toast; and theAmerican Breakfast ($28) whichis a complete meal consisting oftwo eggs any style, breakfastmeat, skillet potatoes, toast, juiceand coffee (upgrade to prime

steak for $10). Both itemsalso are available gluten-free.

“Given the area we are at,we are a destination spot,people are here on vacationand they like to stay in bed alittle longer, sleep in and takein the day before they ven-ture out,” says William Chen,

chef de cuisine. “Also, hearingback from our guests and work-ing with our staff, they’ve beenasking for breakfast options orthe opportunity to have break-fast later in the day at our prop-erties, so it’s something wewanted to offer.”

The breakfast items at lunch

were introduced about a monthago, and according to Chen, it’sclear there is a demand for it,which means more breakfastfoods will soon be added to themenu. “It was something weknew our guests wanted, but wedidn’t really know what sort ofappeal it would have,” he says.“But since we’ve been doing it,we’ve been running out. It’s sosurprising how many people aredrawn to it.”

Of course, for those who aren’tcraving a late breakfast, The Ve-randa’s regular lunch menu andfamous afternoon tea with tradi-tional scones, finger sandwichesand sweet pastries also can beenjoyed oceanside with a pictur-esque view of Waikiki Beach andthe beautiful surroundings of theiconic Moana Surfrider.

Breakfast at The Veranda isserved from 6 to 11 a.m., lunchand afternoon tea from noon to3 p.m. Four-hour complimentaryself and valet parking also isavailable.

The restaurant has beenin business at its SouthKing Street location for fiveyears. Prior to that,Hashigami’s father had asimilar business in Japanthat was open for 55 years.

“This is a popular item,”says general manager Ken-ton Tom. “I like BananaLumpia. And if you add icecream, how can you losewith that?”

It’s a classic a la modespin on this popular tradi-tional Filipino dish.

Everyone loves a little (ora lot of) ice cream. And ifyou’re one of these people,Hawaiian Fried Ice Cream($5.50) will set your heartaflutter.

“We portion out the icecream and make it reallyhard in the freezer,” Tomexplains. “Then we batterit, and we use crackerbread meal before deep-frying.”

It’s an astounding mix ofwarm and cold, while thecracker bread meal coatingadds a hearty texture toeach bite.

High Rise ($5.25) is a lit-tle more complicated, as itcontains watermelon sher-

bet, orange sherbet andvanilla ice cream under abed of meringue.

“The secret about this isthat when you eat it, itdoesn’t all melt on you atonce,” Tom says ofWailana’s classic dessert.“The chefs put in their ownpersonal touch.”

And after taking a gan-der at this elaboratedessert, which indeed doesresemble a high rise withits towering presence, you’ll

realize that there is a lot oflove and professionalismthat goes into this dish.

“We’ve had this one fora long time,” Tom adds. “It’sbeen the standard dessert,and it’s so refreshing withall the sherbets.”

Who or what inspires you as achef/manager/owner? My biggest in-spiration in life is my father. It’s hard toexplain how important he is in my lifein a few words. Since I was a kid I sawhow much he sacrificed for our family,but I never saw him taking the easyway out. He is a man who worked hardand succeeded, but I never heard himbragging about it. His words are wise,in fact, he is the wisest person I’ve everknown, but more than just words, he isa man of action, who set a good exam-ple with his life. I always rely on himwhen I need good advice. He is an in-spiration not only for me, but for thepeople who know him.

If you could serve food to a celebrity,who would it be and why? What dishwould you serve? I always watch theTV shows Kitchen Nightmares and Ho-tel Hell with Gordon Ramsay. I wouldlove to serve my Acai Bowl to him.

What is your favorite dish on the menu?Why? The Tropical Tribe bowl. The acaiberry pulp and guarana berry juicemixed together create a perfect com-bination of health and flavor. Thatamazing combination was created bythe tropical tribes in the Amazon rainforest, where acai originates from. Themix is topped with granola, banana,strawberry, blueberries and honey.

Is there a dish that you create that’s noton your menu, but available upon re-quest? We have a bowl mixed with pro-tein powder. This was created becausemy costumers who frequent 24-HourFitness wanted to have extra protein. Itwas on our menu for a while, but it wasnever a popular item, so I removed it.However, now you can request it. Besides that we have new items com-ing out — all made with high-qualityingredients that are not watered downwith ice.

Pagoda’s recent renovationincludes more than new car-pet, paint, tables, and most

noticeably, a bar. The classic diningestablishment also has committeditself to stuffing the menu withlocally grown produce to go alongwith Hawaii-raised beef. In the foodgame, local is always better. A goodexample of this is the Big Islandbrisket executive chef and ownerJason Takemura uses to create therestaurant’s house-made pastrami.It's a 10-day process that involvesbrining, smoking and tons of flavor.

But this is an appetizer columnso lets get going.

Pot Stickers ($7/$6 Happy Hour)are incredibly crispy pockets of shi-itake mushrooms and shrimp witha miso-yuzu butter sauce. As goodas the pot stickers are, it is the saucethat really differentiates it from itsmany, many rivals. The sauce isslightly sweet and creamy with ahint of teriyaki.

It may sound weird, but theSpring Rolls ($7/$6 Happy Hour)have a distinctly Asian flavor. Madewith kalua pork, shrimp, carrots,cabbage, mushrooms and cello-phane noodles, the rolls are won-derfully fresh, crispy, and as stated

There is not a lot to say to sayabout the Sizzling 10-ounce NewYork Steak ($14/$12 Happy Hour),but that it’s a 10-ounce New YorkSteak! How can that not be good?Simply prepared and presented withsauteed mushrooms and onions, it’sa steaming, sizzling, smoking platterof “look at me” goodness.

One final item up for considera-tion is Shrimp and Vegetable Tem-pura ($14/$12 Happy Hour). Threepieces of shrimp are joined withzucchini, eggplant, sweet potatoand shiitake mushrooms to makean appetizer that is golden brown,tasty, sweet, earthy and crunchy —just as tempura should be.

Starting March 4, Pagoda will be-gin an a la carte menu that will beoffered daily. Its famed buffet willremain as a weekend attraction, butnow diners have a better choice ofmenu options to enjoy within thesealed garden sanctuary that makesPagoda a refuge from the hustleand bustle just outside the door.

Jun and Ryo Tsuchiya co-ownSakura Restaurant on WaialaeAvenue, and the brothers con-

tinue to please Hawaii’s diners afterinitially gaining culinary experienceby working for their father at hisrestaurant in Japan. The duo oper-ated the eatery at Olomana GolfCourse for several years, but movedto their current locale lastSeptember. In addition to a changeof scenery, the restaurant’s newincarnation has included more tradi-tional Japanese dishes on the menu.

Ryo brings a wealth of experi-ence to the kitchen, and in additionto traditional Japanese cuisine, thechef also incorporates French, Ital-ian, American and local influencesin the vast array of dishes.

“We feature traditional Japanesefood, but not only that, we alsohave a lot of pupu-style selections,”says Jun. “Before we came toHawaii, we worked separately. Now,we’re able to continue working to-gether at this new location.”

Sakura serves up a host of popu-lar lunch items, which include saladsand burgers, local-style platelunches and teishoku “completemeal” sets. Jun recommends AhiTataki Ponzu ($10.95), as the searedfish is accompanied by ponzu dip-ping sauce along with the Teishokuset, which includes rice, miso soup,tossed salad and cold tofu. Plate

lunch varieties include: Loco Moco($9.95), Kalbi and Mochiko Chicken($9.95), Pork or Chicken KatsuCurry ($9.50) and Kalua Pig FriedRice ($9.50).

Special items are available dailyat Sakura, including Motsu Nikomi($5.95), a miso-based soup withpork giblets, tofu, gobo root andgreen onions.

“This soup is very popular withour Japanese customers,” says Junof the traditional favorite.

Dinner selections at Sakura can

be enjoyed as stand-alone entreesor shared pupu-style amonggroups. Chef Ryo prepares a vari-ety of steaks, including Garlic Rib-eye Steak ($18 for 8 ounces, $24for 12 ounces). The steak is sautéedin a special garlic sauce, and isserved sizzling hot with vegetablesand a choice of country-style po-tatoes or rice.

Chinese Sausage (Lap Cheong) withShanghai Cabbage ($11.95), for exam-ple, is a popular dish.

Also try Young Ginger with Pineap-ple Beef ($11.95), which is a combina-tion of crispy ginger and tender beef,all bathed in a sweet and sour honeysauce that has a hint of spice.

“I really love to eat,” says Lung Fungmanager Eddie Ma, “and I eat all kindsof food.”

A true foodie, Ma is the genius behind many of Lung Fung’sdishes. The restaurant frequently introduces new items to its menu,and Ma works closely with the restaurant’s chefs to bring his ideasto life. In creating new items, he incorporates his own preferences,as well as customer suggestions.

“The people (in Hawaii) have so many food choices,” he says,“and there are all kinds of people in Hawaii. So you have to learnsomething from the people here. Everybody’s tastes are different.”

The menu, as a result, is large and varied.“Every day I learn something new from the customers,” Ma

says.Ma, who is originally from China, has been managing the restau-

rant for more than a decade. “So far, so good,” he says with a smile.

“This one is so tasty,” restaurant manager Eddie Masays. “After you try it, you will want to eat more.”

If you haven’t visited Lung Fung in a while, there aresome new items waiting for you. Ma says Lung Fungcreates at least one or two new menu items everymonth. One recent creation is the Chef’s Chow Fun($10.95) with thin rice noodles, tomato, spinach, as-paragus and shrimp accented with garlic.

“These are all healthy, high-quality vegetables mixedtogether,” Ma says. “We like to offer dishes that arehealthy.”

This concoction was inspired by an Italian pasta dishthat Ma and his family enjoy. And the dish has passedthe inspection of very important critics: Ma’s children.

“I made this and then I brought it home for my kids,and they really liked it,” he says. “They ate it all!”

In addition to healthy dishes such as this, Lung Fungalso strives to bring a healthy quality to its other menuitems. Ma says that everything is cooked fresh, andLung Fung never adds MSG.

“We are trying to provide a better quality food tothe customers,” Ma says.

Asian Mix owner DanielLeung’s goal is to make iteasy: Easy for you to enjoy

a restaurant-quality meal on the goor on the spot, and easy for hisstaff, who previously workedtogether in a more taxing restau-rant setting. Does a more relaxedstaff cook better food? “You cansay that,” Leung says.

Leung also strives to make thefood you want to eat. Overheard atthe tables outside the eatery, “You’remaking that seem so tasty,” a sonsays to his mom eating ramen. Le-ung listens to his customers and inturn dishes up new menu items toplease everyone.

“We have been really successfulwith the Chinese food. And now weare trying to add the local Hawaiianbarbecue flavors. Those are what thepeople are looking for every day,”Leung says. And, voila! — new menuitems as of last week, by customerrequest.

For some local flair, Leung has acombo perfect for you. Aptly fallingon the Local Flavors Plate Lunchmenu is the B.B.Q. Chicken & Short-ribs ($9.95). “The meal comes withtwo nice pieces of chicken and twopieces of short ribs on a bed ofshredded vegetables, a big scoop ofmac salad, two scoops of steamedrice with the option for brown rice,”Leung says. Ginger, shoyu, a touchof sweetness plus the smoky char ofthe grill are the flavors you will tasteand even smell. “Before you open

the box, you smell it,” Leung pointsout. On that note, beware if you haveto pack it to go: The tempting aro-mas may influence an impromptu pitstop.

And why does the closed Styro-foam box begged to be untucked

and tucked into? Because Leungknows that higher quality ingredi-ents translate to better flavor. “Westick to the best products we can.”Even the mac salad is made with ex-tra effort: Best Foods mayonnaise,tuna and fresh, chopped onion.

Other new items include Char SiuRamen ($8.50) and Garlic Shrimpplate lunch ($8.95 for a regular).The ramen is straight from Japan.Literally. All the ingredients, savethe noodles, are imported fromJapan. “We are not trying to makeit locally; we are bringing over thebest taste from Japan,” says Leung.The Garlic Shrimp includes 10shrimps pan-sautéed with butterand garlic to order. They’re moistand peel easily. “There’s plenty ofshrimp here. Look at it!” exclaims afirst-time customer.

Let's see, there’s a ClubPanini, Pastrami Panini, Philly CheeseSteak Panini, Pastrami Panini, PortobelloMushroom with Provolone Panini, Hamand Turkey Panini, Crab Salad and SpinachPanini, Tuna Melt Panini and a whole lotmore. If you’re anything like me, you’llwant to ask for one of each, but if you

must pick one, Panya’s staff recommendsChicken Pesto Panini ($9.50). Fortifiedwith flavor, this sandwich prides itself onits homemade focaccia bread and the cru-cial ingredients of tender chicken breast,spinach, tomato and a delectable pestosauce. Pesto makes everything better!

And don’t even get me started on thesize of this panini sliced into thirds. Trustme, two pieces are more than enough tofill you up, so you’ll have to wrap up thelast slice and take a piece of Panya homewith you.

ery opened its doors in March 2009, andowner and chef Niel Koep makes mouthswater with his handcrafted fare.

Equal parts fat and flour always resultin pure bliss. Enter Fendu’s Grilled CheesePanini ($7.25), which will make you meltwith its hearty taste and gourmet cheesydecadence.

“We start with four different cheeses —Parmesan Reggiano, Vermont WhiteCheddar, fresh mozzarella and Goudacheese on top of our French bread sand-wich loaf,” says Koep of this premierpanini. “We put generous amounts ofcheese in this sandwich and grill it on ourpanini press until the cheese is thoroughlymelted and the bread is toasted with acrunchy exterior.”

If you’re crazy about cheese, you’ll ab-solutely adore this panini. The Parmesanand white Cheddar cheeses are prominentand have a sharp bite, and the mozzarellaand Gouda cheeses melt with flavor andprovide that signature consistency of a

grilled cheese sandwich that we’ve grownto know and love.

When you’ve had your fill of cheese,bite into Fendu’s Chicken Cordon BleuPanini ($8.50), which features a rustic bunlayered with morsels of sauteed chickentenderloins, Black Forest ham, Swiss andGouda cheeses, caramelized sweet onionsand fresh Hamakua Farm tomatoes. “A cold deli sandwich is good, but noth-ing beats a nice, warm sandwich like apanini,” Koep says.

678 Hawaii opened last November, thecommunity embraced the Koreanyakiniku restaurant with open arms,chopsticks in hand.

With more than 250 locations in Korea,the successful barbecue franchise has ex-panded to the United States. In additionto Hawaii, customers also can enjoy therestaurant’s tasty Korean barbecue dishesin New York City, Los Angeles and At-lanta.

“The Mainland locations have beenvery successful,” says Daniel Yi, headserver at 678 Hawaii. “When those cus-tomers come to Oahu and try 678 Hawaii,they all say the quality is exactly the sameor even better because the service here

is so good.” True to authentic Korean yakiniku-style,

meat is an integral part of the menu. “Themeat comes from an exclusive collectionof farms in California that use a combi-nation of a superior breed of cattle andanimal management techniques,” saysSteve Song, restaurant manager. “We useall Kobe-style meat with no added hor-mones or antibiotics to ensure the richestflavor.”

Beef options include Premium Beef Set($59.99), Thinly Sliced Brisket ($24.99),Boneless Short Rib ($23.99) and PrimeRib Eye ($28.99). “Our beef is very pop-ular among local Hawaii residents as wellas those who are visiting,” says Yi. “Be-cause we specialize in meat, the qualityhas got to be the best, always soft andjuicy.”

For pork lovers, diners may order froma variety of dishes including PremiumSeared Pork Belly ($21.99), MarinatedPork Collar ($21.99) and Thinly SlicedSpicy Pork Belly ($21.99). Every meal

comes with unlimited freshside dishes such as sweet po-tato, salad and kimchi.

For customers wantingto maximize their yakinikuexperience, 678 Hawaiialso offers a variety ofcombination meals. Thepopular Mixed Combo(starting at $52.99) comes withPremium Seared Pork Belly, Prime Rib Eyeand a choice between Boneless Short Ribor Outside Skirt. “The combination mealsare popular because you can try a bit ofeverything and a stew is included,” saysYi. “We have traditional Korean stews,such as the soybean paste stew, kimchistew and seafood soft tofu stew.”

Additionally, the grills come with sidecompartments, which allow diners to si-multaneously cook their vegetables andsteamed egg. “You end up with a lot offood on the table,” says Yi. “Everyone en-joys the family style-oriented atmosphereof the meal.”

The restaurant also offers many other in-novative amenities. Each table comes withits own private vent vacuum, which lies di-rectly above the grill. “The design ofthe vacuums preventsthe smell of meatfrom getting into

the customers’ clothing,” says Song.Furthermore, the customer service at

678 Hawaii is exceptional. Rather thanhaving to call out for a server, oftentimeshaving to shout because of the loud at-mosphere, diners can simply press a but-ton conveniently located at their table.When pressed, the button causes the as-signed server’s watch to vibrate. Eachserver is assigned only four tables to en-sure a prompt response time.
