In this day and age, who doesn’tneed that occasional boost of ener-gy to make it through the day? I
know I do. International coffee chains andmainstream energy drink companies areraking in the bucks and making a fortuneoff of us just because we need thatadditional jolt. Yet, tell me why wesolely rely on caffeine when thereare other “super foods” out therethat are just as beneficial?
Take unagi, for instance. Unagi(freshwater eel) has been con-sumed in Japan for thousands ofyears — and has obviously capturedthe attention of people around theworld in recent history not only forits great taste, but also for its rich-ness in protein and vitamins, includ-ing vitamins A and E. I’ve grown up eating unagi, asMom would always prepare it thetypical way: filleted and deboned,glaze-grilled and served withsteamed rice. The taste of unagi isclean and light, the meat tender,and always onolicious.

Restaurants boastinghot new foodtrends — specialty
ingredients, exotic flavorprofiles and healthy “aunatural” offerings — are atthe forefront of today’scontemporary diningscene. Yet, Asahi Grill dis-pels the belief that theseaforementioned charac-teristics are only associat-ed with fads. This WardAvenue hot spot, whichopened its doors inFebruary 2007, is a primeexample that classic, high-quality cuisine is here tostay.
Local, island-style farewith bursts of Asian inspi-ration is the foundation ofAsahi Grill, where loyal pa-trons and new food enthu-siasts routinely pack this50-seat restaurant, eagerto diversify their palates.
“Our goal is to make ourcustomers happy with ourgreat service and deliciousfood,” says manager Victo-ria Sayno. “There’s some-thing for everyone here, nomatter what you’re crav-ing.”
Open for breakfast,lunch and dinner, AsahiGrill distinguishes itselfwith an eclectic spread ofsignature creations. OxtailSoup is one entrée in par-ticular that has earned theeatery rave reviews.
Asahi Grill’s Oxtail Soupwas made famous since itsbeginnings at Kapiolani
Coffee Shop, where manyof its staffers previouslyworked. According toSayno, this local favoritehas always been a best-seller. Priced at $11.95 for asmall bowl, $13.95 for a
regular bowl and $22.95for an extra-large bowl,Oxtail Soup is preparedfresh daily and is derivedfrom an original Chineserecipe.
“We easily sell about 100bowls of Oxtail Soup per
day,” she says, addingthat the oxtail is boiledfor two to three hours ina clear broth infusedwith Chinese herbs, andadorned with Chineseparsley and green
onions. A side of rice(white/brown or fried rice)and grated ginger accom-pany the meal.
“The meat is so tender,it just falls off the bone,”confirms Sayno, statingthat many customers like

to add a bit of shoyu to theginger or Sriracha sauce tothe soup for an added zest.
Observe the array of din-ers who get their fill hereon a daily basis and you’llnotice a wide spread ofethnic diversity. However,all patrons have one com-mon goal: to chow down,big time.
“Of course, we can al-ways count on the locals— they love it here. Butwe’ve also noticed an in-crease in visitors fromJapan, China and Australia
to the restaurant,” Saynoexplains.
“What makes us uniqueis our friendly service. It’simportant that we treateveryone like family — it’sthe top priority,” she adds.“The Brothers Cazimerocome here often.
“And all dishes are madefrom original recipes. Noth-ing has changed a bit.”
During Dining Out’smost recent visit to therestaurant, breakfast loversdevoured the Asahi Break-fast ($9.50), which consists
of tossed salad, miso soup,rice and a choice of mahimahi, salmon/saba oropakapaka, and BananaHotcakes ($6.25, $4.75 halforder). For lunch,Chopped Steak also($8.50, served all day) ap-pears to be a popularchoice among patrons.This local favorite featurestender beef stir-fried withvegetables in a savorysauce.
“Our fried rice also is astandout,” Sayno says, “It’smade from an original
recipe, and we have KimChee Fried Rice ($7.25,$5.75 small order), LupCheong Fried Rice ($7.25,$5.75 small order) and Por-tuguese Fried Rice withTwo Eggs ($6.75).”
Chicken Katsu Curry($9.95), katsu-style chickenfillet doused in savory currysauce served with white orbrown rice and mac ortossed salad is a provenwinner as well. And SpicyAhi and Shrimp Don($12.75) is a hearty classic,which presents a bowl ofrice topped with spicy ahiwith tobiko, shrimp andsweet egg roll drizzled witha special sauce.
If you’re in the mood formore than one of AsahiGrill’s classics, opt for aCombination Plate, whichcan include shrimp and veg-etable tempura and saba,seasoned and grilled to per-fection. Rice, tsukemono,tofu, soup and tossed saladcomplete this sumptuousmeal.
With a multitude of
choices already gracing itsmenu, Asahi Grill is ever-expanding its cuisine. Infact, according to Sayno,Special Steamed Fish($9.50) Bulgogi Don($9.50) — Korean-styleteriyaki beef — and OxtailRamen ($9.95) have re-cently made their debut.
“We want customers tobe aware of our daily spe-cials as well,” Sayno says.“For instance, on Mondaywe have a choice of Pig’sFeet Soup ($10.95) orSpaghetti ($7.95), Tuesdaywe feature Baked ShortRib ($10.95), Wednesday isRoast Turkey ($8.75) orTripe Stew ($8.50) … wehave specials for every dayof the week.
“Everyone is like ohanahere … family. We want youto feel as if you’re at homeat Asahi Grill.”
With plans for expan-sion supposedly in theworks, Asahi Grill will con-tinue to serve up timelessclassics for generations tocome.

Happy Days Chinese SeafoodRestaurant in Kaimuki is sellingits popular Gau ($5) nowthrough early March.
Gau (also called niangau) isone of the many traditional Chi-nese foods that are eaten dur-ing Chinese New Year with asymbolic purpose for a year ofgood luck, health and prosper-ity. The name translates to“moving up in the year,” whilethe sticky texture (similar tomochi) represents the familysticking together. It's alsotopped with sesame seeds for
fertility and a red date for goodluck.
There are many other foodson the regular Happy Daysmenu that are important to in-clude in your Chinese New Yearmeal. For example, Jai ($9.95)is available all year-round butis commonly eaten as the firstmeal on the first day of the yearas a way to start fresh. Alsoknown as monk's food, thisvegetarian dish is a deliciousstew of vegetables, includingvarious types of mushroomsand long rice noodles, whichrepresent longevity.
Some of the everyday cus-tomer favorites that are also
great choices for Chinese NewYear include the SteamedSeabass Fillet with Ginger andOnion ($11.95) made with ahomemade shoyu and hot oilsauce; and the Crispy SkinChicken (half $11.95), which isdeep fried to a crispy skin onthe outside while maintainingthe meat tender inside and
served with shrimp chips. An-other must-try is the Stir FriedEggplant ($9.95) with bambooshoots, green onion, pork, fun-gus, red pepper and a tasty,mildly spicy sauce.
In business for 12 years,Happy Days is a traditionalChinese Hong Kong-stylerestaurant offering dim sumand jook (from 8 a.m. to 3p.m.) and an extensive menuwith an impressive 249 dishes(available from 10 a.m. to10:30 p.m.). There also are din-ner specials and banquetmenus. The restaurant seats300 people and a privateroom for up to 40 guests alsois available.
"Our food is good andfresh, and we have a lotof regular customers,"notes co-owner LisaLum. "People say we havefriendly service. I opened therestaurant because I wantedto see people happy."

There’s been so much talk aboutequality these days — whetherit’s women in the military,
same-sex marriage … people wantequal rights.
But what about equal eats? A lotrestaurants out there still don’t haveanything to offer non-carnivores. Howhard is it, really, to come up with justone meat-free plate? But just like theaforementioned military and mar-riage, times are changing for vege-tarians, too, as more and more peopleare concerned about their weight andoverall health, and consequently whatthey put into their bodies.
Well, keep The Mandalay in mind, asthe spacious, elegant Hong Kong-stylerestaurant on Alakea Street always hasvegetarians in mind, and owner LindaChan recommends a few customerfaves from the extensive menu that
contain no meator fish at all.
Vegetarian Let-tuce Wraps($12.95) is a fun-to-eat dish that presents sixlettuce cups to fill with stir-friedminced vegetables including waterchestnuts, bamboo shoots, carrots andcelery. There’s plenty of food, yet it’slight and won’t weigh you down.
For something a bit more hearty,try Braised Tofu with Mixed Vegeta-bles ($9.95). This appealing combina-tion of textures and flavors featuresbraised deep-fried tofu with blackmushrooms, baby bok choy, babycorn, Chinese peas, broccoli and more.
With Chinese New Year coming upnext month (gung hay fat choy!), tra-ditional Jai ($10.95) is not to bemissed. The Mandalay’s impressive“monk food” recipe contains 18 dif-ferent ingredients, with the ubiquitouslong rice mixed with black mush-rooms, black fungus, lotus seed, reddates, water chestnuts, bean curd,carrots … and so much more. It’s agood luck dish for the new year witha whole lot of goodness packed in.

What is your favorite dish on the menu?Why? Kona Coffee Lamb Chops. I enjoythe taste of Lamb and think the way Ido it is a unique way to flavor the dish. Iuse Crushed Kona Coffee to crust thepieces and it is an interesting Pacifictwist to the dish.
What is your favorite ingredient to workwith? Why? Any fresh herbs. Especiallyisland/Pacific-grown items. The aromas,freshness and flavorsreally accentuate thelooks and flavors ofany dish.

anything you want — within reason,of course. We get many vegetarian,vegan and allergy requests, and I am

“The fried rice and mandooare very popular with the kids,and you can taste the fresh-ness because it’s all home-made, not store bought,” saysPark. “We also make oursauces with traditional Koreanrecipes and flavors that wepass on through many gener-ations. We use high-qualitymeats. Customers will tell me
that they can taste the differ-ence, and they say, ‘You guysare the best,’ and keep comingback.”
The buffet lineup also fea-tures an array of side dishesthat add unique flavors andtextures to the dining experi-ence. Customers may selectfrom fresh and hot soups, in-cluding Seaweed Soup, MisoSoup and Red Bean Porridge,as well as a host of additionalofferings such as PickledOnions, Cucumber Kim Chee,Soybeans, Green Salad, Sea-weed and Macaroni Salad.

“If you’re looking for a dif-ferent kind of dining experi-ence, I would ask customersto come in and give us a try,”Park says. “If you haven’t beenhere in a while, we have somenew items on the buffet in ad-dition to the original favorites.We’ve been able to keep ourprices low without sacrificingthe taste — that is very im-
portant to us and our cus-tomers.”

If you’re a big-time fan oflocal grinds with anAmerican twist, then a para-

Dining Out recently visitedthe restaurant at Ward Centers,and brought along award-win-ning vocalist Starr Kalahiki forthis week’s Dining with theStars.
“Big City Diner is a gatheringplace for everyone. My friendsand I often come here aftershows,” says Kalahiki, who’sbeen singing for as long as shecan remember. “What I loveabout Big City Diner is thatthere’s a wide selection ofdishes for people to choosefrom and I love the local feel. Ifyou have guests from out oftown then this is the perfectplace to ease them in to Amer-ican-local cuisine.”
Big City Diner initially jumpedinto Hawaii’s culinary sceneback in 1998, when it opened arestaurant in Kaimuki. Fourother locations soon followed —
in Kailua, Ward, Waipioand Pearlridge. A diner
theme is prominent at therestaurant, as patrons settle into red vinyl booths ready totake on the enormous portionsof food that’s served. Sure, yourtypical diner cuisine of burger,fries and a shake is a given here,but in honor of Kalahiki, Big CityDiner’s accommodating staffpresented us with a slew ofitems that were most assuredlyof five-star status.
First there was Fire-RoastedPortobello Mushroom Salad($10.99), which featured savorysliced Portobello mushroomsnestled on a bed of organicgreens and chopped romainetossed with diced Roma toma-toes and sweet red onions.“BIG” croutons, importedParmesan cheese, red onionrings and fresh lemon toppedoff the salad, which was thensplashed with Ancho-Chilidressing. Then, we were pre-sented with Grilled TequilaChicken & Portobello MushroomStack ($12.99), an herb-mari-nated chicken breast toppedwith Big City Diner’s tequilacream sauce, grilled Portobello
mushroom and jack cheese ona bed of fresh sautéed spinach.
“I love Portobello mushrooms,and I love how the mushroomsare in a variety of dishes here.Everything is so good!” Kalahikiexclaims. “Who needs meatwhen you have these mush-rooms?”
Let’s not get carried away,Starr. After all, Baby Back Ribswith Big City’s Famous Guava-BBQ Sauce ($22.99, big slab) isa force to be reckoned with.This signature entrée is slow-roasted for five hours until themeat literally falls off the bone.
Next up: Grilled Asian FishOriental ($10.99) This weeklyspecial brought out the fishlover in us as a flavorful pieceof swai, breaded and grilled toperfection, and served with asesame oil and shoyu sauce.
“It’s a very sweet and lightfish,” observes Kalahiki. “I lovefish. I grew up eating a lot offish — fresh fish and fried fish.
“I wouldn’t say I have themost diverse palate, but offerme something and I’ll be blownaway and very grateful. I lookforward to educating myself onall kinds of food. But Big City
Diner’s Old Fashioned BubbiesChocolate Shake ($5.99) is awe-some,” she adds of this littleslice of heaven in a glass.
In between hearty laughs andforkfuls of superlative cuisine,Kalahiki shared her musicaljourney with us. A natural-borntalent, Kalahiki was immersed inthe music scene at a young age.The daughter of a Pentecostalminister, Kalahiki was raisedwith musical fellowship and in-fluenced by her father’s collec-tion of jazz and bossa novaLPs.
Throughout the years, theUniversity Lab School graduatespread her wings and sang insix operas with Hawaii OperaTheatre, performed the role ofthe fairy godmother in DiamondHead Theatre’s Cinderella andlanded a job working with thecast of Ulalena on Maui. Kalahikireturned to Honolulu thereafterand fronted the modern alter-native rock band Missing Davefor a year prior to securing agig as the jazz headliner on theStar of Honolulu dinner cruise.
She also continued to developher craft as a member of theR&B group Eight-o-Eight aswell as funk band Toyz of Pleas-ure. Most recently, she also wasa featured singer and back-upvocalist for Roberts Hawaii’s Re-turn to Paradise Starring LaniMisalucha.
Last year, Kalahiki experi-enced a monumental momentin her career when she tookhome not just one but two NaHoku Hanohano awards forMost Promising Artist and JazzAlbum of the Year in honor ofher debut album titled Salt.
“I was totally blown awaywhen I won. I didn’t know thatanyone was paying attention,”she admits. “Salt features jazzarrangements of songs that Ijust love to sing. The songsaren’t necessarily jazz stan-dards; there’s a lot of R&Btunes, and I even did a cover ofthe song Popular from the mu-sical Wicked.”
Kalahiki now performs everyMonday from 5:30 to 8:30 p.m.at Tropics Bar & Grill at HiltonHawaiian Village. During herperformances, she takes audi-ences on an amazing musicaladventure with every song.
“I’m also working on severalmusical projects this year span-ning the musical genre land-scape, from new modernHawaiian music to big band andhot new alternative tracks.
“Music is always everywhere,all around, ever moving, everhealing,” she says.
Talk about “Starr” power.Kalahiki has it all.

It’s often said that one neverforgets an evening spent atKobe Steakhouse & Sushi

“The calamari’s really tender,”says owner and general man-ager Roy Nakamura. “I don’tthink it needs much seasoning,but you can dip it in our gingersauce for an additional taste.It’s a really flavorful menu item.”

The calamari’s smokyflavor isn’t too overwhelming,and the in-house smokingprocess lends a delicate sweet-ness to this unbelievably goodseafood. chalkboard. Duck Leg Ramen($10.95) is waiting there foryou. Order it and relax at atable. Listen to the overheadsound of chirping birds andescape from your downtowncubicle. Get hit in the face(nicely) with the smell of staranise. Pick up the braised duckleg and watch it debone itself.But don’t stop there.
“The leg is very tender and
falls off the bone, so you candebone it yourself and mix itup with the ramen. It mixesvery well with the mustardcabbage,” says David Chang,vice president of Little Village.“This is not a traditional Chi-nese noodle, but personally wefeel the ramen is the best fit.The texture is nice and verysmooth and it goes well withthe broth.”
Flavored with special fishstock, the broth imparts a richflavor that pairs up perfectlywith the main feature — a duckleg braised for two hours. Thecombined flavors prove irre-sistible and are best summedup by Chang himself: “I find my-
self wanting to eat more.” But,if for some reason the tender,fall-off-the-bone leg isn’t yourstyle, order the ramen insteadwith a duck breast for an addi-tional $1.50.
Another item worth lookingup for is Jai ($11.95). Kick startyour Chinese New Year with thistraditional dish that is onlyserved during this time of theyear. The vegetarian dish is de-signed to nourish in more waysthan one.

Center, a woman at a nearby tableapproached us. Looking at one of thedishes on our table, she says, “I havenever seen that one. It must be new.”This scenario is a perfect example oftwo truths about Panya — that itoften is coming up with new dishes,and that it has cultivated a dedicatedfollowing of regular customers.
The restaurant, after all, does havesomething for everyone.
“It is a fusion style where East meetsWest,” explains operations managerKiana Huang. “The menu has a lot of
variety and a lot of different choices.We are trying to satisfy all of our cus-tomers, no matter what backgroundyou come from.”

Now an elegant restaurant with a var-ied menu, Panya Bistro first started asa bakery in McCully.
“We started from just making only the pastries. We were moreinto just desserts, sliced cake and birthday cakes,” explains oper-ations manager Kiana Huang.
Customers liked the food so much that they started requestingother things from Panya.
“They started asking, ‘What about some coffee, soup andsalad?’ As we built up our clientele, the customers started havingmore requests,” Huang recalls.
The restaurant soon opened a second location and expanded itsmenu to include light meals. Over the years, it continued to expandmenu selections based on customer feedback, as well as what thestaff wanted to eat.
“Once in a while, it will pop up in your head, ‘What if this goeswith that?’ Or, ‘What if we use this with that sauce?’” Huang says.“We kind of create our own menu from our own dining experiencehere.
“We always eat here, too,” she adds, “so we have to make surethat we are eating healthy. And we want to serve healthy food toour customers, too.”

Don’t let the elegance ofFendu Boulangerie’s nameintimidate you from step-
ping through its doors. With anextensive offering of French-inspired delicacies, it doesn’t reallymatter what you choose; every-thing will leave you wanting more.
Plus, all pastries and breads arefresh-baked each morning.
“There are no hydrogenatedshortenings,” says chef and ownerNiel Koep. “We’re using olive oil,vegetable oil or butter … The butteris more expensive and the olive oilis more expensive, but we use it be-cause it is better for the customer.”
Among its most popular items:Chocolate Croissant ($2.50). The
dough, mixed the daybefore and refrigeratedovernight to give itmore flavor, is laminatedwith a European-stylebutter before Frenchchocolate is added.
“The chocolate com-plements the croissantdough and vice versa,”shares Koep. “There’senough in there to giveit a nice, semi-sweetchocolate flavor.”
A few other favorites: LilikoiCheesecake ($4.50), Mini ApplePies ($5.75) and Koep’s personal fa-vorite, Lychee Danish ($2.25).
To make the Lychee Danish, Koepuses Danish dough, European-stylebutter, an almond cream and pastry
cream filling with cinnamon-sugar,and topped with lychee and sur-rounded with a streusel. After it isbaked, it is finished with a glaze.
For something savory, and withprotein to help you power throughyour morning, Fendu Boulangerie is
now offering breakfast sand-wiches. The Petit Croissant Eggand Cheese Sandwich ($5.25)also has munster cheese, whichcomplements the eggs and
melts nicely. And just in time for Valentine’s
Day, the bakery will bring back itsmacarons (eight pieces for $21 orfour pieces for $10.50) to ensureyou have a sweet date.

tomers to takehome to celebratethe occasion. Jai($22 for a small, whichserves four to six people; $45 for a large, which serveseight to 10) features mushroom, bean curd, chestnuts,seaweed and ginkgo, and will be available for pre-or-dered take-out.
“We custom made this for the new year,” Huang ex-plains. “For the Chinese tradition, during the new year,we only eat Jai. We only eat vegetables, we don't eatmeat. The idea is to cleanse your body to start thenew year.”
Customers must pre-order the Jai. Pickup will takeplace Feb. 8–10.
In addition to Jai, customers can also check outsome special desserts for the new year. These includethe Gau Mochi Dessert with Brown Sugar ($6), RedBean ($6.50) or Coconut Cream ($6.50). “They arevery sweet,” Huang says. “And you can just eat themcold as a dessert, or you can pan-fry them a little bitto serve it hot.”
Another dessert special is the Deep Fried SesameRed Bean Ball ($1.50).
Finally, for some good luck in the new year, don'tmiss the Panya Fortune Shortbread Cookie ($3.95),which is modeled after the red paper that is typicallydistributed for the holiday. The cookies feature Chinesewriting that say things like “Happy New Year” or GoodLuck.”
“They can buy that to give to their family and friendsfor good luck,” Huang says.
As Panya Bistro approaches another year, Huangsays that they are reminded to thank the people whohave helped them garner success throughout theyears — their customers.
“We want to thank our customers for their supportand their loyalty throughout the years,” Huang adds.“We could not do it without them.”

passion for food with the general public.The restaurateur opened Hi Sandwich &
Drink in the Waimalu Shopping Center abouta month ago, and customers are ravingabout what Nguyen describes as Viet-namese fusion food.
“I really like to cook at home, and I decidedto open the restaurant so that I can sharethat passion with my customers,” saysNguyen, who also owns the popular eateryPho Five-O in the same shopping center.
Freshly made French bread, which is gen-tly toasted so the bread remains soft on theinside and crunchy on the outside, and but-tery croissants set the stage for the morethan 20 sandwich varieties available at HiSandwich & Drink. After just a month, cus-tomers are already developing a followingfor the freshly made sandwiches, includingBBQ Chicken Sandwich on French Breadand Smoked Ham Sandwich on CroissantBread. All sandwich selections, including theaforementioned favorites, start at $6 andvegetarian options are also available.

Nguyen explains that she utilizes freshvegetables in her sandwiches, including cu-cumber, carrots, white onions and Chineseparsley. The veggies are prepared with aspecial blend of seasoning to enhance allthe flavors.
The restaurant also specializes in real-fruitsmoothies, and features 22 varieties of theflavorful beverages. With each selection, in-cluding Honeydew Smoothie and Thai TeaSmoothie ($4.95 apiece), diners may alsoadd their choice of black jelly pearls, grassjelly or colored fruity jelly. Customers may
also add an additional jelly flavor to the 24-ounce smoothie for just 35 cents more.
“Before I opened this restaurant, I visitedsome other places that served smoothiesusing powdered flavoring,” explains Nguyen.“I wanted to use real fruit, because it tastesmuch better and is healthier for you.”
The vast beverage menu at Hi Sandwich& Tea also includes Bubble Teas ($4.95 foreach 24-ounce serving), which are availablein a host of flavors such as Vanilla, Café Latte,Strawberry, Green Apple and Mocha Coffee.The Bubble Tea selections are crafted with ablend of black and green tea, which Nguyenbrews daily in house.
Nguyen also recommends Condensed MilkIced Coffee ($3.50), a Vietnamese java drinkthat offers a cool rush of bold flavors.
“Our customers can enjoy some of thesame food that I love to cook at home,” saysNguyen of the Hi Sandwich & Drink experi-ence. “The real-fruit smoothies are delicious,and you can really taste the difference.”
