the history

“The Farm... as it was in the past”

The farm was first built in 1700 by the

noble, Florentine Peruzzi family. By

1840, the property was sold to the

Marchesi Strozzi Sacrati and was owned

by the influential family until 1978,

when the current owners, the Lottero

family from Genoa bought it. The

Lottero family, who had always been i n

love with Tuscany, started a program to

completely restore the area and the

buildings so they could ensure a better

quality wine when produced.

Since then, the farm has preserved it’s

farming traditions and has become

devoted to organic cultivation. Since

2000, the vines and olive groves have

been organic, we have combined the

most authentic and artisanal methods

with the most modern technologies.

In the garden of the main villa, there is a

secular Lebanese cedar tree, over 250

years old. Fattoria Lavacchio took the

image of the ancient beuty and made it

the symbol of the farm.

“The respect of the antique traditions combined with the greatest technology”

The farm is located on the top of the

Montefiesole hill at 450 meters above

sea level, only 18 km from Florence. It is

situated in the charming landscape of

the gentle hills of the Chianti Rufina

area, which is rich with vineyards and

olive groves.

Fattoria Lavacchio is an organic

established farm that extends on 110

hectares, of which 44 hectares are olive

groves, 21 hectares are vineyards, 6 are

wheat and 9 are wooded forest where

you can find truffles! There is also a

large productive green-garden with

fruit and vegetables, rabbits and

chickens.

From the begining, Lavacchio has

always researched harmony between its

own activity and the natural balance.

Among the Estates in Chianti Rufina

production area, Fattoria Lavacchio has

been the first one to embrace organic

growing programs.

While preserving the best organic

agricultural and productive traditions,

the farm has been constantly evolving

by combining the traditional methods

with the most advanced technology in

order to offer products of outstanding

excellence. The development of systems

that guarantee quality have brought the

Estate to obtain the certification of

Quality. ISO 9001-2008.

We are also continuously researching

new systems to ensure an increase in the

quality of the products and the services

we offer.

the vineyards

“Quality is our primary objective”

Our vineyards are situated 450 meters

above sea level, facing south-southeast.

The majority of the vineyards are

modern and the planting density ranges

between 3400 and 6800 vines per

hectare. The chosen pruning systems are

spur cordon and guyot.

The grapes are carefully selected

through green pruning and green

harvest as well. They are manually

picked and the yield per hectare is very

low and will range between 4 and 6

tons.

All the cultural and cellar operations

are carried out with the aim to produce

a high quality wine which reflects its

territory with style and personality. For

this reason, a balance between

traditional methods and modern

technologies is researched in each phase

of production.

Approximately 80 percent of the

vineyards are composed of selected

clones of Sangiovese. The other red

berry vines mainly include Merlot,

Cabernet sauvignon and in the younger

vineyards, Syrah.

Our range of red wines include:

Chianti Rufina DOCG Cedro, Chianti

Rufina Riserva DOCG Cedro Riserva

and Fontegalli IGT Toscana.

Our selection of white grapes is

particularly interesting. In fact, besides

Malvasia and Chardonnay, we grow

some rare varieties for this area, in

particular Sauvignon blanc, Viognier

and Gewurztraminer. The first two are

currently blended with Chardonnay to

produce “Pachar”, a high level IGT,

while Traminer is used to produce our

special late harvest “Oro del Cedro”.

Finally, our Vin Santo of the Chianti

Rufina area, DOC, and Grappa,

complete our range of white wines.

the olive groves

"From our olives, a special oil is born"

Our olive groves are alternated with

vineyards and wheat fields to naturally

control parasites and the spreading of

disease.

The olive groves are situated on land of

a medium mixture: 44 hectares for

about 8000 plants of native varieties

including frantoio, leccino, moraiolo e

pendolino. The olives are organically

cultivated and fertilized with

leguminous of green compost.

Even today the, "stripping off", is done

by hand to assure a perfectly healthy

fruit during the period of ripening.

Our wines reflect the nature and characteristics of the territory, the vineyards and the vintage.

All the cultural and cellar operations are realised in the aim to produce a high quality wine which reflects its territory with style and personality.

For this reason a balance between traditional methods and modern technologies is researched in each phase of production: The grapes are carefully selected, through green pruning and green harvest. The harvest is carried out by hand according to the ancient traditions for the best quality product. All our wines derive from natural fermentation, ie without yeast, and contain medially a third of the amount of sulfites accepted by the EU regulation. The limited production imposed by organic cultivation guarantees, above all, a better quality year after year. Products are only proposed those years in which they reach the quality level researched. The combination of the land, rich in structure and marl, together with the rigid climate, contributes to the high quality level of our wines. Our wines have a singularly long life. They combine their natural elegance and complex bouquet with a great character and personality. They have received prestigous international reviews and the press has unanimously recognized that Fattoria Lavacchio’s wines have their own place in the gamut of Tuscan wines.

Our current selection derives from a thorough experience in the vineyard and cellars which allowed us to maximize the uniqueness of Sangiovese and discover, among the many varietal, those who adapt best to the microclimate characteristics of our land.

Produced with a selection of Chardonnay and Traminer grapes, grown in our vineyards at 400 mt above sea level. The warm summer days, followed by the cool nights, are responsible for the style of this wine, characterized by compelling, intense aromas and a very pleasant freshness and crispy taste, with good balance and tasty finish.

Varietals: 60% Trebbiano, 40% Aromatic Traminer.

Area of production: Rufina (Toscana). The vineyards are located about 400 meters above sea level on gravely soils that are mostly composed of Galestro. Sun exposure: East/North-East.

Age of vineyards: 2002

Training system: Guyot.

Production: approx. 1,5 kg of grapes per vine.

Harvest: By hand in small cases in the second half of September.

Vinification: Destemming and soft pressing. Cold racking of the must and fermentation at controlled temperatures in stainless steel.

Maturation: In stainless steel tanks for at least 6 months.

Refinement: About 2 months in the bottle before release.

Ageing capacity: Best if drunk within the following vintage but can still be appreciated for another couple of years.

Sensory Characteristics: Its color is a pale hay-yellow. At the nose it is intense and elegant with notes of apricot, white peach and grape fruit. The taste is fresh with a very pleasant finish.

Serving suggestion: It pairs well with light and fresh sea food such as sword fish, calamari and scallops, but also matches well with roasted chicken and souffles.

Serving Temperature: 8-10° C.

We manage the farm with passion and professionalism. We wish that the new generation will continue the path we have paved with constant enthusiasm. For this reason we have dedicated them “Pachar” (PAblo and CHARlotte), a very special wine for us in which our expectations for the future are metaphorically embraced.

Varietals: 70% Chardonnay, 20% Viognier and 10% Sauvignon blanc.

Area of production: Vineyards are situated 400 mt. above sea level in soil rich in marl and limestone with North/North-East sun exposure.

Age of vineyards: 15

Training system: Guyot.

Production: Approx. 1kg of grapes per vine.

Harvest: Manual in small cases around mid September.

Vinification: Careful and soft crushing. The must obtained is then allowed to settle and ferment at a controlled temperature in stainless steel tanks and barriques.

Maturation: Partly in French oak barriques for a few months, where it accomplishes malo-lactic fermentation and then in stainless steel tubs for the same amount of time.

Refinement: At least 6 months in the bottle before release.

Ageing capacity: 4-5 years.

Sensory Characteristics: Pale yellow in colour with gold reflections. At the nose it is intense and elegant with evident floral notes of lime, vanilla & nut. It is full bodied with layers of apple and light lemon supported by a creamy vanilla and a slight oak flavor. A persistent finish.

Serving suggestion: It compliments stong seafoods such as smoked fish dishes and crustaceans as well as seasoned white meats, rich matured cheeses and a cheese soufflé.

Serving Temperature: 10-12°C.

Made with Syrah grapes which have perfectly adapted to the warm Tuscan climate, Albeggio is a rosé that is one of a kind. Grown in vineyards at 400 mt above sea level, the characteristic, Mediterranean weather transforms this naturally dark grape into a light and crisp wine with hints of strawberry and cherry. Albeggio is defined by it’s sunset-pink color and delict freshness.

Varietals: Syrah

Area of production: Rufina (Toscana). The vineyards are located at about 400 meters above sea level on gravely soils mostly composed of Galestro. Sun exposure: East/North-East

Age of vineyards: 2002

Training system: Guyot.

Production: approx 1,8 kg of grapes per vine.

Harvest: By hand in small cases during the first half of September.

Vinification: Short maceration followed by a soft pressing and fermentation in stainless steel vats for a few weeks at low temperatures.

Maturation: In stainless steel tanks for about 6 months.

Refinement: Stays in bottles for around two months.

Ageing capacity: 24 months

Sensory Characteristics: Its color is a pale cherry pink that is lively and crystal. The fragrance is cherry and strawberry followed by light floral notes. To begin, its taste is velvety with a pleasant freshness given by its good acidity. It finishes by lingering on the tongue for a moment, but is clear and tasty.

Serving suggestion: Perfect with apetizers as well as cold dishes such as fish or potatoes salad. It also matches well with roasted or fried chicken and chowders.

Serving Temperature: 6-8° C.

This is the first step towards the realization of a dream: to produce “virgin” wines. PURO is made from 100% Sangiovese grapes vinified in stainless steel vats, without the addition of sulfites, yeasts and tannins. The vinification of this wine is a balancing practice. Maintaining the purity of the grapes without using chemicals is not easy, but possible.We are keen and ready to make risks in respect for the health of our consumers .The sulfur as an antioxidant and antibacterial agent is replaced physically and non chemically, such as low storage temperatures, frequent checks of dissolved oxygen and appropriate filtration to keep the wine microbiologically pure.

Varietals: 100% Sangiovese.

Area of production: Vineyards are situated 400 mt. above sea level in a rocky soil particularly rich in limestone which gives Chianti its characteristic

Age of vineyards: The vineyards are new implants of 10 years old.

Training system: Guyot.

Production: Approx. 1,2 kg of grapes per vine.

Harvest: Manual in small cases before mid October.

Vinification: Soft destemming of the grapes. Spontaneous fermentation and maceration in stainless steel at a controlled temperature for about 10 days with numerous pumpovers and delestages.

Maturation: In stainless steel for 9 months.

Ageing capacity: 2-3 years.

Sensory Characteristics: It appears purple in color, intense and brilliant. Th nose is net and persistant with violet hints. Good final of fruity notes.

Serving suggestions: In its early years this wine is complimented with all food and when aged it is delicious with sauced meats, poultry and roasts.

“The ploughed leguminous between the rows feed our vines, the breeze and the sun protect them from disease, our vigilant watch and patient waiting assures the perfect healthiness and ripeness of the grapes. The best natural balance and secular traditions are the source of Cedro, a Chianti Rufina that has a great personality that expresses the characteristics of this appellation, also defined as “the highest of the Chiantis”.

Varietals: 90% Sangiovese, 5% Canaiolo Nero e 5% Ciliegiolo.

Area of production: Vineyards are situated 400 mt. above sea level in a rocky soil particularly rich in limestone which gives Chianti its characteristic

Training system: Guyot & Spurred cord.

Production: Approx. 1,5 kg of grapes per vine.

Harvest: Manual in small cases around mid October.

Vinification: Soft destemming of the grapes. Fermentation and maceration are at a controlled temperature, partly in stainless steel and partly in French oak barrels for about 15 days with numerous pumpovers and delestages.

Maturation: In French oak barrels of 35 hl from 12 to 16 months.

Refinement: 6 months in bottles before release.

Ageing capacity: 5-7 years.

Sensory Characteristics: It appears ripe plum in color and has a lot of earthy mineral aromas and flavours. It is medium to full bodied, with firm tannins and a hint of fruity notes and spices on the finish.

Serving suggestions: In its early years this wine is complimented with all food and when aged it is delicious with sauced meats, poultry and roasts.

Servine temperature: 18-20° C

“La vecchia in salita” is the name of the vineyard that produces the Sangiovese destined to our most notable wine; it is a vineyard planted in 1963, and elevated in traditional upturned Guyot. Time has formed the vines giving them unique shapes and, most importantly, the perfect balance in production. The perfect ingredients create a Riserva of great character and complexity of which its noble origins are represented from the pluri-secular Cedar tree on the property

Varietals: 90% Sangiovese, 10% Merlot.

Area of production: Vineyards are situated 400 mt. above sea level in soil rich in marl.

Age of vineyards: 40 for the Sangiovese & 15 for the Merlot.

Training system: Guyot.

Production: Approx. 1kg of grapes per vine.

Harvest: Manual in small cases around mid October.

Vinification: Soft destemming of the grapes; fermentation and maceration are achieved at a controlled temperature in French oak barrels of 70 hl for about 25 days with numerous pumpovers and delestages.

Maturation: About 50% of the stock matures in French oak barrels of 35 hl for 14 to 18 months depending on the vintage. The other 50% matures in new French oak barriques for the same period.

Refinement: 12 months in bottles before release.

Ageing capacity: 8-10 years.

Sensory Characteristics: Its color is a deep ruby red with granite reflections. At the nose it is persistent and has intense perfumes of red berries and spice. It is full bodied with a predominant cherry flavour and a touch of cassis, this wine is dry and harmonic and its slightly tannic resonance softens with age.

Serving suggestion: In its early years this wine is complimented with all dishes and when matured, it pairs nicly with roasts, wild game and cheeses.

Serving temperature: 18-20° C.

Fontegalli is the name of the well from which we extract our water. As water, the source of life and the element of absolute quality, this wine represents our research for purity and quality without compromises or limits. The result is a wine of great elegance and intensity, capable of fascinating even the finest palates.

Varietals: 60% Merlot, 20% Cabernet sauvignon and 20% Sangiovese.

Area of production: Vineyards are situated 400 mt. above sea level in soil rich in marl and limestone.

Age of vineyards: 25 for the Sangiovese & 15 for the Merlot and Cabernet sauvignon.

Training system: Guyot.

Production: Approx. 1kg of grapes per vine.

Harvest: Manual in small cases around the end of September for the Merlot and by mid-October for Sangiovese and Cabernet sauvignon.

Vinification: Soft destemming of the grapes. Fermentation and maceration are achieved at a controlled temperature in French Oak barrels for about 25 days with constant pumpovers and delestages.

Maturation: In new French Oak barrels for approx. 15 months.

Refinement: In bottles for at least 12 months to ensure perfect settlement.

Ageing capacity: 10-12 years.

Sensory Characteristics: The appearance is a deep plum hue with a luxurious velvety texture. It has a rich and complex palate with fantastic length, with fruity concentrated overtones of blackberry, vanilla and oak.

Serving suggestion: It pairs best with roast beef, game and matured cheeses.

Serving Temperature: 18-20°C.

It is certainly the wine that expresses the desire and the courage to be different. Its uniqueness, paired togeher with our ambition to find the highest quality, characterizes its greatness. Produced from Traminer grapes harvested from the older“Casabella Vineyard”, which is situated on the hilltop at 400 m above sea level, helps its growth by ensuring vital temperature changes and wind. Ora del Cedro has always been very appreciated by the specialized press for its quality and for the marked originality of its style.

Varietals: 100% Aromatic Traminer.

Area of production: Vineyards are situated 400 mt. above sea level in soil particularly rich in limestone and marl.

Age of vineyards: 15.

Training system: Guyot.

Production: Approx. 20 quintal per hectare.

Harvest: Manual in small cases around mid-October when the grapes are not yet withered, but just lightly dehydrated.

Vinification: A soft crushing of the fruit then static sedimentation at low temperatures for 12-18 hours. Lastly a launch of the fermentation at 18° C which is then interrupted in order to exalt its sweet and aromatic notes.

Maturation: Mainly in stainless steel tubs for a couple of weeks and partly in small oak barrels afterwards.

Refinement: A few months in bottle before release.

Ageing capacity: Unlimited. This wine aquires extra complexity with age.

Sensory Characteristics: A bright yellow with golden reflections. Very intense and persistent perfumes and subtly sweet with floral, honey and light spice notes of candied fruit.

Serving suggestion: It is perfect with fresh and herbal cheeses, foie gras, dark chocolate and patisserie.

Serving temperature: Serve at 10-12° C.

Small and sculptural rows of Malvasia and Trebbiano lost in an extension of golden wheat, constitute the source of our Vin Santo. The accurate selection of the grapes and the patient wait for the seasons to transform this noble must are our secrets to produce this precious nectar, so unique in its absolute distinction.

Varietals: Malvasia and Trebbiano.

Area of production: Vineyards are situated 400 mt. above sea level in soil rich in marl and limestone with sun exposure from the south.

Age of vineyards: 40

Training system: Guyot.

Harvest: Manual in small cases with a precise selection of the best grapes.

Vinification and maturation: The grapes are left to wither in a ventilated room for about four months. After this period they are softly pressed and the collected must is immediately put in small oak barrels of 50 litre capacity. These barrels, traditionally called caratelli, are placed in the attic of the winery where the wine slowly ferments and matures for 5 years, exposed to temperature changes during the seasons.

Refinement: A few months in bottles before release.

Ageing capacity: Unlimited. This wine aquires extra complexity with age.

Sensory Characteristics: A very pronounced amber colour. Intense, fine and pleasant on the nose with notes of raisins and candid fruit followed by honey, vanilla and dry fig aromas with hints of walnut and coffee. At the palate it reveals a full and intense body, with a very good balance between the softness and heat of its alcohol and its freshness. The finish is long and extremely pleasant.

Serving suggestion: It matches matured cheeses and dried pastries, such as biscotti.

Serving temperature: Serve between 10° and 14° C.

Our Extra Virgin Oil is a fresh olive juice that has several virtues. As a precious elixir, it is preserved with extreme consideration and a particular care is given in each phase of production

Olive Varieties: Frantoio 60%, Moraiolo 30%, Leccino 5% e Pendolino 5%.

Area of production: The olive groves are situated at 400 mt. above sea level on a mixed soil that extends for 44 hectars and holds 8,000 plants.

Age of olive trees: Recent trees were planted in the 1980s while the older trees were planted in the 1950s.

Plantation density: Around 300 plants per hectar.

Training system: polyconic vase.

Time of harvest: From late October to late November.

Method of harvest: Olives are harvested by hand to ensure that only perfectly healthy olives, of optimal ripeness are selected.

Processing:The olives are first washed in order to remove leaves and impurities, then they are cold-pressed at a controlled temperature of 22 ° for approx 30 minutes. The separation of the oil and the vegetation water is realized through centrifugal.

Percentage of oil produced from the olives: It varies widely every year, but usually under 15%.

Sensory Characteristics: It is a brilliant green color with golden undertones. Its perfume is an intense and persistent wet grass with hints of artichoke and eggplant. It is full bodied with slight tastes of fruit, spice and herbs.

Serving suggestions: The ideal use of this particular oil is with authentic cold dishes of raw vegetables soups, salads and dips. However, it is also perfect in cooked sauces and roasts.

Our Extra Virgin Oil is a fresh olive juice that has several virtues. As a precious elixir, it is preserved with extreme consideration and a particular care is given in each phase of production

Training system: Polyconic vase.

Time of harvest: From the 20 th till the 30th of October.

Method of harvest: Olives are harvested by hand in small cases.

Processing: Within 12 hours from the harvest, the olives are first washed to remove excess dirt, leaves and imperfections. Then they are put into the olive mill where they are crushed and mechanically pressed at a controlled temperature of 22°C. Separation on the vegetation and the oil contained inside is then realized by centrifugal.

Percentage of oil produced by the olives: around 12%.

Sensory notes: A rich green hue with gold reflections and a strong olive perfume with intense and persistent smell of fresh, wet grass. It has a slightly spicy taste balanced by Granny Smith Apple and artichoke flavours, typical of the traditional Tuscan Olive Oil.

Serving suggestions: The authenticity and uniqueness of our oil is such that it can be enjoyed on its own with a slice of Tuscan bread, or with any food. Idealy use it raw on vegetable soups, grilled meats & salads to enhance the food’s flavours.
