A wide range of pastes, reflecting traditional Italian ice-cream; popular « classics », such as amaretto, coffee, chocolate and hazelnut stand beside recipes renewed in a modern way, biscuit, rum hazelnut brittle, zabaglione, tiramisù and trifle, to mention some of them.
Raw material choice, (Dutch cocoa, Piedmont hazelnut, Sicilian pistachio,…) a selection of each ingredient, and meticulous preparation in our dedicated mixing plants are the three key ele-ments that ensure our products quality and stability over time.

All the freshness and juiciness found in the first crops of local and exotic fruits, are selected to produce an appetising and inviting ice-cream.
With our pastes you can enjoy fresh fruit taste all year round. In this product range too, we are fully committed with choosing raw materials; our quality control department always checks che-micophysical parameters of each element, whether it is straw-berry, lemon, orange, and black cherry or mango, passion fruit, pineapple, and coconut, and it is supported by senior flavourists to choose the best ingredients.

Decoration is a key element, particularly with ice-cream and desserts as we taste them first with our eyes. Our ripples and rippy sprays enable you to create new and unusual combinations in a
constant search for innovative tastes.
Ripples are thick liquid toppings without seeds or fruit pieces, while rippy sprays are concentrated powder mixes to which the operator only needs to add sugar and water to obtain a ripple sauce.
Both solutions contain all the necessary elements to optimise taste and colour. In just a few minutes, it is possible to obtain very high quality ice-cream garnishings.
Ripples and rippy sprays also form a very interesting proposal for industries that are concerned by cost efficiency while maintaining the high quality of their products. Moreover, the
powder format has several advantages in terms of product handling, storage and shelf life.

The secret to obtaining a quality ice-cream has always been linked to the choice of the right ingredients in the base. Our products guarantee an optimal result in terms of
creaminess, spoonability, structure and consistency.
Powder ingredients are a balanced mix of stabilisers or emulsifiers suitable for different kinds of preparations, from artisan to tub ice-cream, from sorbet to sherbet.
The careful preparation in ICE´s production plants ensures a wide range of quality mixes which provide the right consistency and texture in finished products to meet your
customers’ needs.
Stabilisers such as guar gum, locust bean gum, xanthan gum and sodium alginate are used to provide viscosity, air cell stability, firmness at extrusion, crystallisation control, heat
shock resistance, as well as mouth feel, meltdown and shape retention.
