Goosnargh corn fed chicken liver parfait, toasted brioche and glazedfigs in port wine

Pressed terrine of Scottish salmon, smoked over beech & oak chips.

Layered with soft herbs & cream cheese with a sweet mustard & dill

dressing and toasted rye bread

Breadcrumbed Goats cheese with a watercress,walnut & baby pear salad and honey mustard dressing (V)

Oxtail soup with caremalised onions and Lancashire cheese rarebit

Breast of cornfed  Johnson & Swarbrick Goosnargh Turkey

confit dark meat, sage, chestnut & onion stuffing

sausage wrapped in pancetta & warm cranberries

H Greaves of Up Holland 5 week aged fillet of beef 

topped with Blackstick Blue cheese, spinach and

red wine port sauce

 

Pan fried Halibut on spinach with a broth of lobster, scallops & king

prawns, finished with soft herbs & braised fennel

Roast butternut squash risotto with mascarpone & sage (V)
