Pectins from Herbstreith & Fox
The natural product pectin is an important
structural element of all higher plants. It is
mainly produced from apples, citrus fruits and
sugar beets. As an universally applicable gelling
and thickening agent pectin today is an especi-
ally important, indispensable and additionally
healthy ingredient of many products.
Due to its natural origin and versatile product
parameters pectin is contained in many pro-
ducts, often without the consumer realising that
it is there.

8 De-pectinised pomace /peels
After the extraction of the pectin thede-pectinised raw material is driedand pelletised.
3 DryingSince apples and citrus fruits areonly harvested during a fewweeks in the year and pectin is
being produced throughout theyear, the gentle and careful dry-ing of the fruit residues is impor-tant. Only carefully and gentlydried apple pomace and citruspeels can be stored for a longperiod of time.
4 Apple pomace /citrus peels
These are the terms used forthe fruit residues which resultfrom the production of fruitjuices and fruit wines.Pomace and citrus peels arethe raw materials for thepectin production.
5 StorageThe dried pomace or peels arebrought from the juice produ-cer to the pectin producer.There they are stored in specialstorage halls under constantcontrol and are processedthroughout the year.

1b Citrus harvestThe raw material for ourCitrus Pectins comes main-ly from Argentina, Mexicoand Southern Europe.
2 PressingThe fruits are broughtfrom the apple and citrusplantations to the juiceproducers. There the fruitsare pressed and processedto apple juice resp. citrusjuice and citrus oil.

7 Cleaning thepectin extract
The pectin extract mustbe cleaned. Mechanicalcleaning processes like
filtration etc. will separa-te the insoluble compo-nents from the extract.
8a Cattle feedsDe-pectinised applepomace and citrus peelsare used as cattle feedHerbavital.
9 PrecipitationPectin is insoluble in alcohol. Thisfact is used for precipitation. In aspecial process using alcohol thepectin is separated from itsaqueous solution and washed.
10 DistillationThe alcoholic extract is distilledand the pure alcohol is returnedto the precipitation cycle. Fruitsugars and colours are obtained
as fruit extract.

15 StorageDuring the detailed laboratory teststhe pectin is temporarily stored.
16 Laboratory tests /Standardisation
The pectin is examined and putthrough various tests. Here the recipewill be determined for standardisati-on. Not each pectin is suitable forevery kind of application as differentproducts need pectin with differentgelling or thickening properties.
17 Packing and deliveryAfter the pectin has passed all stagesof the production process, it issuitably packed and deliveredto the various industrialconsumers to become animportant ingredientof many foods,cosmetic andpharmaceuticalproducts.
