2. FUNCTION

BOILER ����Electrolytic copper outer casing; welded by "TIG" p rocess. ����Immersion heater end plate, made in stamped copper, welded to the shell by "TIG" process. ����Opposite end, made in stamped brass, and soldered t o the shell. ����Stamped brass heat exchanger flanges. ����Normal working pressure = 10/12 PSI. ����Tested by immersion to pressure = 58 PSI ����Control devices: spring safety valve and manometer sensor. ����Regulation device: electric pressure switch.

FRAME

����Made of folded galvanized steel sheet sections, riv eted together in 5mm diameter stainless steel. ����Reinforced base, made from a single stiffened sheet , mounted on 2 cross bars attached to vertical posts.

CASING ����Work surfaces = cup heaters, drainer and electric c over all made of stainless steel. ����Casing = made from a stainless steel sheet. ����Side walls = non-inflammable and painted with polyu rethane paint.

PIPES

����Water supply pipes: made in copper with screw cut b rass connections (with welded end fittings to ensure tightness). ����Drain pipes: made of soft silicone (converging to o ne drain collector).

4. WATER INLET WATER INLET AND ELECTRONIC LEVEL CONTROL For the initial filling of the boiler; as soon as t he water comes into contact with the safety sensor (3), the immersion heater automatically heats up. If, during use, the water falls below this level (3 ), the machine automatically switches to standby mo de. As soon as the water falls below the automatic leve l sensor (2), the electronic controller (5) command s the solenoid valve (4) to allow the refill of the b oiler (1). A non-return valve (6), stops pressurized water fro m returning up the water supply pipe, if the water supply is cut off.

6. ACCESS TO PUMP CONTROL ����Remove the drain (1). ����To remove the basin, lift the front end (AA') and p ull it towards yourself. ����Attention: Do not remove the screws (2) found at ea ch end of the basin (3).

7. ADJUSTING PUMP PRESSURE ����The pump has been pre-regulated to normal working p ressure; however, if necessary it can be

readjusted. ����The adjusting screw "R" on pump "P" is found on the under side of the mounting plate. ���� Check the good pressure (8,9,10 bars) on the manom eter.

8. VERIFICATION OF PUMP PRESSURE ����This procedure is use when the manometer don’t give the right indications. ����Place a filter holder (ref.327500) with manometer " M" onto a group - ensure the manometer is calibrate d

up to at least 175 PSI (12 bars) and is equipped wi th a tap. ����Activate the machine, allowing a little water to es cape from the tap - read the pressure. ����Tighten or loosen the adjustment screw "R" in order to increase or decrease the pressure to between

120 (8 bars) and 135 PSI (9 bars) (maximum of 135 P SI - 9 bars). ����Remove the filter holder once the dispensing cycle has stopped .

9. SETTING OF MIXER TAP

• The temperature of tea water can be adjusted thanks to the adjusting screw located under the mixer tap.

• If the user want a very hot tea water (max 98°C), t ighten the adjusting screw in order to limit the admission of cold water.

• If the user want a tea water less hot, unscrew the adjusting screw in order to increase the admission of cold water.

Be careful: when you unscrew the adjusting screw, 3 turn max or you could lose the screw in the drip tray.

10. ACCESS VIA THE SIDE PANELS REMOVING THE SIDE PANEL � Remove the cup warmer ���� (standard machine) � For ULN version, take off the 4 screws before remov ing the cup warmer ����’. � Remove the hook ���� which maintains the side panels, by passing the ha nd inside the machine. � Take down the higher (on the rear) ����, without forcing too much. � Once this taken down part, draw the whole to the to p ���� delicately.

REFITTING THE SIDE PANEL � Encase the panel in its support .( for Xéos Tall Cup ) � Place the base of the panel against the frame, lock the lower back side of the panel into position,

then the front side, leaving the panel slightly inc lined ’ (for the other machines ) � Set up the top of the side panel then engage it in !!!! its housing and make return the front panel """"

11.2. Machine programming: All the functionning parameters are directely programable on the machine. On the 1° group, 4 buttons are used for programming as follows:

Coffee doses programming:

$ Put ground coffee in the filter holder. $ Press MENU for 15 seconds. $ Display shows «Press dose selection within 30s». $$$$ Press the key to be programmed and press again when water quantity is correct. Program next key within 30 seconds. $ You can use any coffee button after the message « Press dose selection within 30s » disappears.

N.B.: There are 2 ways to set doses:

$ Choose 1st group to program all groups at the same time with the same doses. $ Choose each group one after the other to set different doses.

Hot water key programming :

«Hot water» key

$ Press MENU on group n°1 for 15 seconds. $ Display shows « Press dose selection within 30s ». $$$$ Press hot water key and press again to set correct quantity. $ You can use hot water key after the message «Press dose selection within 30s» disappears.

Clock set:

Press ENTER until clock set is displayed, then press + or – to ajust correct time.

HH: hour (0 … 23) mm: minutes (0 … 59) Day: week day

Automatic on/off mode:

This step allows to turn on / off the machine automatically. When the machine is off, the machine is automatically in Eco mode Press ENTER until automatic on/off mode is displayed, press + or – to set correct time. On: HH:mm automatic switching on time Off: HH:mm automatic switching off time

To deactivate automatic on/off mode the display must show: On: -- -- . -- --

Day off setting (Closed on)

You can choose 1 or 2 days off. This means that the automatic on/off mode will not switch on/off the machine 1 or 2 days in the week. Select the days with + or –

To deactivate day off function the display must show: "------------------"

NB: The counter goes up to 65535 for each button. Then it restarts from 0. Counters reset:

Coffee counters reset: when the display shows «Coffee total », press simultaneously buttons n°3 and n°4 on group n°1 for 3 seconds, the display shows t hen «Total Reset ».

The reset is only for each key counter but not for the total counter (reset not possible).

Hot water distribution mode:

Allow to chose between a functioning with or without pump for the hot water diffusion (blended with a small amount of cold water in order to suppress the diffusion of steam).

Programming of « Steam Control » parameters :

The Steam Control system allows :

a) to warm the milk automatically up to a programming temperature.

b) to preheat then emulsify automatically the milk located in a mug.

The Steam Control system is an option : if this option is not present on the machine, the parameter « Steam Control » must be « disabled » in the programming in order to have a good functioning. Adjusting of «hot milk» function :

If the Steam Control system is present on the machine, the function must be declared like enabled :

Adjust the desired temperature in the setting « temperature hot milk » in order to warm automatically the milk up to the adjusting temperature.

Adjusting of « Steam Control function : in 2 stages.

Firstly the milk is preheated up to an programming temperature then, in a second time, the machine emulsify automatically the milk during a programming time.

Adjust the desired temperature in the setting « temperature Steam Control » in order to preheat the milk before starting to emulsify it.

Then adjust the air injection time in the setting « air time Steam Control » in order to emulsify the milk automatically during this programming time. This time is the time of rising milk, the programming of this parameter must allow to rise the milk then to stop automatically before spilling out of the jug in which it is content. Be Careful : during the 2nd stage (air injection time adjustment), the steam continue to warm the milk during the programming time. If the temperature of preheating (stage 1) is too important, during the 2nd stage the milk temperature could exceed 90°C : an alarm « milk temperature max » will appears in order to inform the user that the milk will soon arrive at ebullition and the machine will stop automatically the product in progress .

Pre Brewing setting:

Enables or disables preinfusion on each coffee button. Change with + or -.

Preinfusion setting time for the 4 doses (same for all groups) then press MENU, display shows: Preinfusion time is in seconds. First adjust all times On, then all times Off . Product name = espresso – 2 espresso – coffee – 2 coffees.

To move forward press MENU To exit, wait 30 seconds and do not press any button.

Level probe sensitivity:

Level probe sensitivity adjustment (security probe SS and high level probe SN).

Compulsory groups cleaning programming:

Precise time adjustment. If compulsory groups cleaning programmed is not done on all groups ; machine is blocked. Enable compulsory cleaning with + or -. To set the time for the message « Groups cleaning » to be displayed press «Enter » and then press + or –.

When the message is displayed, start automatic cleaning for all groups. If all groups are not cleaned, the display shows «groups cleaning » and the machine will not work until all groups are cleaned. Automatic group cleaning procedure:

After 250 coffees, display shows «Please Cleaning Gr:X»

Message disappears after the automatic cleaning:

$ Take off the filter holders and clean the gasket group with the provided brush.

$ Clean the sprinkler with the blind filter: insert the blind filter in the filter holder and put in the coffee group. Press button n°5 continuously and press butt on n°1: automatic cleaning starts.

To stop automatic cleaning, press any key.

Automatic cleaning is always possible even if there is no message on the display.

Temperature unit choice:

°C or °F All values are automatically converted.

Steam boiler temperature adjustment

Adjustment range: 80 to 125 °C (176 °F … 257°F)

We advise 119°C .

To change temperature press + or –, To exit, press MENU, or wait 30 seconds.

PID adjustment range

PID functioning adjustment range is between 2°C and 10 °C.

Example: T° adjusted = 95 °C and PID functioning ad justment range = 5°C

When boiler temperature reaches 90 °C, PID starts f unctioning.

Extra Temperature :

X is the temperature adjusted (ie the temperature in the steam boiler), the extra temperature allows to adjust a rise in temperature of X +1, +2, +3 or +4 ° C after the making of the 1st coffee (set to X). This improves the thermal stability of the machine during periods of heavy flows. If no coffee is prepared for 3 minutes, the temperature in the steam boiler automatically adjusts again on the X programming temperature.

Filling up Time out adjustment:

Adjust maximum time for inlet solenoid valve opening. Beyond this time, machine stops and an alarm message is displayed.

Adjust time with + or – ( up to 360 sec max) To exit, press MENU, or wait 30 seconds.

Water softener:

Adjust water volume for the water softener maintenance (0 to 9999 litres)

Press + or – to adjust. To exit, press MENU, or wait 30 seconds.

When water volume is reached, display shows:

11.3. Special features:

11.3.1. Economy mode:

It decreases the boiler temperature from 120°C to 6 5-75°C. This can contribute to a longer lasting machine as it avoids sudden temperature shocks if machine is switched on and off every day.

For Eco mode, press MENU on group n°1 then press bu tton n°3 (1 coffee). Display shows: To exit Eco mode, press button n°3 (1 coffee), disp lay shows then:

11.3.2. Coffee group automatic cleaning:

After 250 coffees on 1 group, display shows «Please Cleaning Gr: X »

31.3.3 How use the automatic milk heater system ? ( in option)

« hot milk » key

$$$$ Fill a jug in half (or ¾ max) with cold milk.

$$$$ Insert the jug under the steam wand "Steam Control (wand with a temperature probe).

$ Press the “hot milk" key in order to start to heat the milk automatically. The machine automatically heat the milk in the jug and stop when the programmed temperature is reached.

The temperature measured by the probe is displayed during the manufacture of the product. Note: if for any reason, you want to get a milk temperature hotter than the one that is programmed: hold the

"hot milk" key pressed for 4 sec, the steam wand will produce steam again, you will have to press the "hot milk"

key again to stop firing when the temperature of the milk will arrive at your convenience. If the temperature of the

milk exceed 90°C : an alarm « milk temperature max » will appears in order to inform you that the milk will

soon arrive at ebullition and the machine will stop automatically the product in progress .

31.3.4 How use the « Steam Control » system to frot h the milk automatically ? (in option)

« Steam Control » key

$$$$ fill a jug half with cold milk (preferably full fat milk to get a good quality of foam).

$$$$ Press the "Steam Control" key to begin the preheating cycle then the automatic emulsion of the milk. In a first time, the machine will automatically preheat the milk in the jug until the programming temperature then

the milk will emulsify during the scheduled time and it will automatically shut before the milk does beyond the jug.

The temperature measured by the probe is displayed during the manufacture of the product Notes : • if the milk exceeds 90°C, an alarm “ milk temperature max “ will appear to inform the user that milk

could reach the boiling temperature and the machine will stop automatically the product in progress. In this case, reduce the setting temperature in the parameter "temperature Steam Control" (see programming).

• if the milk beyond the jug in which he is content before the automatic cycle is completed, reduce the quantity of milk that you put in the jug or decrease the time programmed in the setting "air time Steam Control" (see programming).

• if you want to stop the product before the end of the cycle, press the steam control key again.

When the « hot milk » or « frothed milk » product i s achieved, an automatic rinsing cycle is activated in order to remove the milk which could r emained in the steam wand: don’t be surprised to see cold water going out of the steam control wand. This rinsing cycle does not exempt you to clean the steam wand with a sponge.

11.4. Alarm messages and solutions:

Filling up time out:

The high level probe SN did not detect water within the programmed time (250 sec).

Possible reasons: Water inlet solenoid valve must be cleaned. Water inlet solenoid valve does not work. Water high level probe is disconnected. Water inlet tap is closed.

Solution: After checking up, cut the mains then put it back. Boiler empty:

The security level probe SS does not detect water.

Possible reasons: Water inlet solenoid valve must be cleaned. Water inlet solenoid valve does not work. Water security level probe is disconnected. Water inlet tap is closed.

Solution: After checking up, cut the mains then put it back. Boiler temperature alarm message

The electronics detected a temperature > 140 °C for more than 5 seconds in the boiler.

Alarm message disappears when temperature decreases 2°C under the limit.

Temperature probe open

The electronics does not detect the temperature probe.

Possible reasons: Reconnect or replace the temperature probe. Check temperature probe cable, replace if necessary Mother board may be damaged Check the connector on the mother board

Flowmeter alarm Gr X

The electronics does not receive group X flowmeter information.

Possible reasons: No water in the flowmeter Damaged cables Damaged flowmeter Coffee too fine

The water inlet tap is closed. Water softener maintance alarm: When programmed water quantity is reached, display shows «change filter » together with the programmed telephone number (machine keeps on working).

After servicing the water filter, please do the following: - Switch off the machine (ON / OFF button). - Press continuously buttons n°3 and n°4 on the left group while - Switch on the machine (ON / OFF button) - Display shows «Filter Reset ».

When service cycles number is reached, display shows «Service» together with the programmed telephone number for service (change check valve gaskets, limiters, steam tap gaskets...).

After servicing the machine, please do the following: - Switch off the machine (ON / OFF button). - Press continuously buttons n°1 and n°2 on the left group while - Switch on the machine (ON / OFF button) - Display shows «Service Reset ».

Counter restarts from 0. Milk temperature max : If the milk exceeds 90°C, an alarm “ milk temperature max “ will appear on the display in order to inform the user that milk could reach the boiling temperature, the machine will stop automatically the product in progress. In this case, reduce the setting temperature in the parameter "temperature Steam Control" (see programming).

11.5. Data reset:

It is possible to restart the machine, machine will then have the standard settings. Procedure:

_ Cut the mains. _ Press continuously buttons n° 1, n° 3 and n° 5 on group 1 while _ Put back the mains. _ If display shows «preset valori completato », RESET is done.

To go back to normal use, cut and put back the mains.

13. CLEANING THE COFFEE UNIT 1°) SPRAY HEAD: ���� Remove screw (2). ���� Remove the spray head (1) and diffuser (D) by remo ving the screws (18). ���� Brush both sides of the spray head and diffuser wi th a softbrush, using a soft cleaning liquid. ���� Brush the filter holder seal (J). ���� Rinse and replace the pieces, tightening the screw s securely. 2°) CLEANING COFFEE UNIT PARTS: Only operate the machine when unheated, without pre ssure, with the water supply cut at the shut off valve and power cut at the ON/OFF switch. Decompress the machine's water softener using the d ecompression tap (lower tap - see water softener diagram chapter 9). Decompress the machine's water circuit by loosening the feed pipe nut which feeds the unit. Retighten immediately.

A) DISMANTLING THE SUPPLY AND DECOMPRESSION SOLENOI D VALVE

Remove the anti-splash plug, and coil (14mm wrench) . Unscrew the adapter with a 22mm wrench in order to access the plunger (11) and the seat of ba se (10). Brush the parts and unblock the seat and adapter with a pin. Rinse and reassemble the parts. N.B. It is advised to remove base (10) (using a 4mm All en wrench) by unscrewing the four screws (H). After cleaning and rinsing, change the seals (9) (n ° 407500) and remount the base, taking care not to obstruct the water ports. B) HEAT EXCHANGER

Remove the coffee unit after disconnecting the sole noid valve and water tubes. Remove the heat exchanger (8) by unscrewing the two screws (V) (10mm wrench), ensuring not to loose the washers (R). Clean on the inside and outside and descale it if n ecessary; rinse well, replace the seals (7) (n° 403 081) and reassemble the unit. Tighten the two screws securely. Put the unit in its place and connect the solenoid valve and tubes. Open the water supply, turn on the power and drain each group by pressing the control buttons. N.B. When all the parts of the unit are dismantled, it is advised to clean all the water ducts. Ensure the y are well rinsed in order to avoid any impurities.

14. CLEANING THE FILTER HOLDER UNIT REPLACING THE XEOS FILTER HOLDER SEAL ����Remove the 6X8 stainless steel screw (n° 406708) (w rench 5). ����Remove or leave the copper washer in its place (n° 406709). ����Using a screw, size 6 (pitch of 100 and length of a t least 200mm) in the hole of the previous screw, l ift the filter holder seal partly out of its hole. This will allow the seal to be accessible. Remove the 6 X20 screw. ����After cleaning the seal housing, replace the CHC 6X 8 stainless steel screw (n° 406708) and the copper washer (n° 406709). Fasten tightly and fix in the n ew filter holder seal.

15. BOILER ����Turn off the main power. ����Empty the boiler, by opening the drain valve, which is found underneath the boiler on the right hand side. ����Turn the drain valve screw (2) 1 or 2 turns. Attention : Do not remove the screw completely. ���� After draining the boiler, retighten the screw (2) . Restart the machine according to paragraph A of the installation manual. Note: If the boiler does not empty once the drain valve screw is opened, take it out and remove any

16. AUTOMATIC GROUP CLEANING PROCEDURE After 250 coffees, display shows: $$$$ Take off the filter holders and clean the gasket g roup with the provided brush. $$$$ Clean the sprinkler with the blind filter: insert the blind filter in the filter holder and put in th e coffee group.

$$$$ Press button n°5 continuously and press button n°1 : automatic cleaning starts.

Message disappears after the automatic cleaning. Repeat those operations on each group head every ti me a message appears on the display. Automatic cleaning is always possible even if there is no message on the display. Remark : It is possible to stop automatic cleaning by pressing any key.

10. STABILITY AND REACTIVITY The product may produce significant reactions, including the release of gas, if exposed to sources of

heat or damp, or if placed in contact with reducing agents. It becomes effervescent during solubilization in water and, as it contains alkaline compounds, it reacts violently to strong acids.

- Clean the sprinkler with the dummy filter (for ea ch group): insert the dummy filter in a filter hold er, lock it into position and press the 2 large cups. W ait a few seconds, then press the button once more; rinse the dummy filter and repeat this action 3 times for each group.

- Wash the filter holders in water in order to unbl ock the holes (never use a pin or a flame to unbloc k them).

���� CLEANING OF STEAM CONTROL SYSTEM: 2 TIMES A DAY

- Prepare 2 jugs A and B. - The jug A is half filled with cold water and cleani ng solution (a few drops). - The jug B is half filled with cold water.

1. Put the jug A under the steam control wand and p ush the steam control key them wait for the end of the cycle.

2. When the cycle is achieved, remove the jug A and put the jug B under the wand then

push the steam control key again.

3. When the cycle is achieved, remove the jug B and empty it. 4. With a sponge, clean the steam control wand.

21. WATER SOFTENER

NECESSARY FOR A WATER SUPPLY WITH A TOTAL HARDNESS >10°TH Manual Manual Without BY PASS With BY PASS Automatic 8 L 12 L 12 L 8 L (ref 404496) (ref 717900) (ref 718000) (ref 718200) The water softener, which is normally placed under the coffee machine, is connected between the water supply pipe and the coffee machine itself. The softener allows the exchange of calcium and magnesium ions in the water with sodium ions in the resins. The resins in the softener attract the calcium and magnesium present in the water, thus avoiding any deposits in the boiler or pipes, because of hot water. Not only will these calcium deposits cause temperature differences and waste energy but they also deteriorate the quality of the machine and the coffee produced. From time to time (depending on the quality and hardness of the water used) it is necessary to enhance the power of these resins; this process is known as "regeneration" and is carried out using cooking salt (sodium chloride) which is dispersed in the water inside the softener. The automatic water softener disperses itself the salt in the water; it is only necessary to put the salt (see overleaf for regeneration frequency times) when it’s necessary. IIIIMAIN FEATURES
