Local boy, Alex Tout and his horse Ernie travelled down to Foxground (between Berry & Kiama) to attend a 5 day Horse Eventing Camp in the last week of Term 2. Alex was invited by Simon Kale, a Level 3 EFA Instructor, to the Fox- ground Training Stables and Stud. Alex was one of only 8 students in- vited to take part and he is very grateful of this amazing opportunity. During this very busy and eventful week, Alex participated in Dressage, Showjumping and Cross Country Events. On the final day all students went to the Shoalhaven Jump Club at Berry where they were able to practice all the skills they had learnt during the week and took part in the Clear Round Jumping. It has only been through the efforts of Young Pony Club, training with riding instructor, Jo Sabidussi and Alex’s determination and ongoing commitment that he has been given opportunities like this. Alex is also attending the Harden Horse Trails this weekend where he will compete in Dressage and Showjumping on Saturday and Cross Country on Sunday. The Murringo community wishes Alex the best in his Eventing competitions and as they say “Break A Leg”! Alex performs well in the saddle. Update your Calendar with……. Local boy, Alex Tout and his horse Ernie travelled down to Foxground

It was a trip of a lifetime for local tennis lady, Fay Gruber, who

travelled to Ireland last month.

Fay was invited to join her two younger sisters, Diana Thackeray

and Wendy Keane, for an adventure to remember. Diana, who

lives in Melbourne, has visited Ireland before and fell in love with

it. She then had an idea to gather her sisters back with her to

explore the rest of Ireland she didn't get time to see.

The girls got to visit the famous Harrods Department Store in

London during a short stopover. Upon their arrival in Dublin,

they picked up their car and found a B&B just on the outskirts in

Palmerston.

Some of the places they visited were the Waterford Tower Hotel,

Waterford Crystal, the Templemore Arms Hotel, Cork and

Killarney. The sisters stayed in a beautiful B&B called Bunratty

Lodge before moving on to Derry and then they experienced two

nights in Belfast. They caught up with relatives in Omeath before

visiting the Carlingford Medieval Village, then back to Dublin.

On the girls way home, they got to stay two nights in London,

travel on the famous red double decker buses, the London Eye

and float down the Themes.

Meanwhile, back in Australia, Fay’s husband, Kevin, was left to fend for himself. He managed to score

a few invitation for tea, managed to make his side of the bed - once or twice, turn on the washing

machine and the dishwasher and vacuum the floor. Well Done Kev!

Extensions to the Bushfire Shed

Chicken & Leek Casserole A hearty casserole is just what you need to warm up on a cold night and this one's a real winner!

Ingredients - serves 4

Method

Preheat oven to 180°C. Place flour in a large plastic bag and season with salt and pepper. Add chicken

and shake to coat. Remove chicken from bag, shaking off any excess flour.

Heat butter and oil in a heavy-based saucepan over medium heat. Cook chicken, in batches, for 3 to 4

minutes each side or until golden. Remove to a plate.

Add leek, bacon and garlic to pan. Cook, stirring occasionally, for 3 to 4 minutes or until leek is ten-

der. Add 2 cups stock, wine and mushrooms. Bring to the boil. Remove from heat. Transfer mixture

to an ovenproof dish. Add chicken. Cover and bake for 35 minutes. Remove cover and add beans.

Cover and cook for a further 10 minutes or until chicken is cooked through.

Pour remaining 1 cup stock into a saucepan over medium heat and bring to the boil. Place couscous

in a heatproof bowl. Pour stock over couscous and stir to combine. Cover and stand for 4 to 5

minutes or until stock is absorbed. Stir gently with a fork to separate grains.

Spoon couscous into bowls. Spoon over chicken casserole and serve.

Over the last month there has been some building going on in the village.

The Murringo Fire Shed has been extended to eventually incorporate a

kitchen, meeting room and a shower. Local volunteers have worked on

the extension, including the laying of the slab, standing of the frame,

fixing of the trusses and putting up the iron, over the last month or so.

The Fire Brigade wishes to thank those volunteers for their time,

patience, jokes and efforts in making this building project possible.

Back to School After a very relaxing holiday for all students and staff, Murringo Public

School is already back to work, with an exciting term planned. Last Friday

saw us participating in National Schools Tree Day where we planted a mini

orchard for our Kitchen Garden Program and a range of native trees/shrubs.

On Friday 7th August we will be hosting Wombat Public School who are

coming along to participate in our Kitchen Garden Program and to learn

about how it works. Wombat Public are looking at starting a similar scheme

at their school and will be bringing their whole school as well as parents and

teachers to experience this fantastic program. We would love to see all of

our usual volunteers as well as any new faces to assist on the day from

10.00am - 1.00pm.
