Brazilian Jiu Jitsu studio opens inCypress Village Shopping Center

By R.A. RomeroThe Miami Laker staffCarlos Ramirez had never heard

of Brazilian Jiu Jitsu when hisfriend asked him to join a class

taught at the Gracie Academy inCoral Gables. It has been 10 yearssince the Miami Lakes native hadhis first class and now he is open-ing his own Gracie Academy in the

Cypress Village Shopping Centerin Miami Lakes, Rilion Gracie JiuJitsu of Miami Lakes.

Classes have already begun butan official grand opening will takeplace on Saturday, December 6 at2 p.m. with a live demonstrationby Master Rilion Gracie and theopportunity to win a free 6 monthmembership.

Since his first encounter withBrazilian Jiu Jitsu, Ramirez hasgrown to have deep appreciationand respect for the art, enough soto start his own studio with RilionGracie's blessing, son of CarlosGracie, one of the founders of theBrazilian style Jiu Jitsu. Ramirezthought to bring the studio toMiami Lakes, his hometown.

“It’s not anybody who can opena Gracie school and represent thename and open the door to receivestudents, but Carlos, he has greatpotential. He assimilated one hun-dred percent into the philosophy, the technique, and he’s ready tohave a school and represent theGracie name,” said Rilion.

Jiu Jitsu, which originated inJapan, was the art of the samuraifor fighting opponents withoutweapons. The points of weaknesswere the neck and limbs since therest of the body was armored, soJiu Jitsu closes the distancebetween the fighter and the oppo-

nent, taking the person to theground and finishing the fightusing submission. It is an art thatleverages skill over size.

Rilion Gracie's father anduncle, Carlos and Helio Gracie, changed the style of Japanese JiuJitsu, a result of their small statureand advanced skill in taking downmuch larger opponents whichbrought attention to the stylewhich was later dubbed BrazilianJiu Jitsu.

“It’s not really a striking martialart, instead Jiu Jitsu focuses oncontrolling the opponent and fin-ishing the fight on the ground,”said Ramirez. “The thing about JiuJitsu is that you can practice it at ahigh level without going to workthe next day with your face bruisedup.”

Gracie is a famous name in themartial arts world, one that Rilionrepresents with his long career inthe art, beginning at a young ageand going strong today with hispresence at his Coral Gables stu-

dio. Gracie also plans to makeappearances at the Miami Lakeslocation to lead classes.

“Our system is a complete formof self-defense. But our focus is onsubmission. And anyone has thepotential to take down the oppo-nent of any size,” said Gracie.

“He is a point of reference,”said Ramirez about Gracie. “Thefact that we have this opportunity,to learn from him, is unique.”

Though competing is notpushed on members, instructorstake a more relaxed approach tocompeting, but those who do com-pete often still attend tournamentsand win.

One introductory class is freefor all who are interested in join-ing. Class times are varied but canbe found online, along with moreinformation, at www.riliongra-ciemiamilakes.com. Classes areavailable for adults and children aswell as private one-on-one ses-sions.

Miami Outlaws advance to Super NIT in OrlandoHow does a newly formed team

from northwest Miami-DadeCounty make it to the nationalspotlight? With hard work, dedica-tion and perseverance.

Those were the key ingredientsto the success of the MiamiOutlaws Elite, and after winning

the regional USSSA Champion-ship, the Outlaws are advancing tothe Disney Sports USSSAThanksgiving Baseball Super NITat the ESPN Wide World of SportsComplex in Orlando, Florida.

The Outlaws’ success startedthis past Summer, when a merger

of four Outlaws and six MiamiCobras team members woulddefine the face of national champi-ons.

The first sign of success cameduring the state championshiptournament in Tamiami, where theOutlaws, the surprise travel base-ball team based at Country VillagePark, defeated the nationallyranked Miami Phenoms 11-3 inthe championship game.

Head coach Jorge Marin alwaysbelieved the talent and drive werethere.

The next step was competingagainst the top 38 teams in thenation in the Elite World Series. The Outlaws defeated some verytough teams like the MarucciTigers and Foundation Bulldogs toget to the semi-finals against a tal-ented Miami baseball team.

In their third game of the day,the Outlaws lost 4-0 to Miamibaseball, which went on to win the

Elite World Series, leaving theOutlaws with a 3rd place finish.

It set the table for the “Road toMemphis National Champion-ship” journey of a lifetime.

The boys arrived in Memphis,Tennessee on Thursday morningafter some hectic overnight flightdelays in Atlanta. It affected theOutlaws as they played at 4 p.m.on Thursday and ended up losing avery tight 4-3 game to GamedayShockwave. The Outlaws finishedtheir seeding games with an unim-pressive 2-2 record but it wouldlater be a smart move for Marinwho was able to save pitching forthe elimination series.

The biggest test for the Outlawscame when they had to defeatYabolusha Giants who wereranked 3rd in the nation, not once(5-4) but twice (4-2) in eliminationto advance to the Championshipgame against the RawlingsPatriots.

The national stage was set forwhat was to be an epic nationallytelevised championship game forthe Miami Outlaws Elite.

The Outlaws defeated theRawlings Patriots 7-4 in extrainnings after coming back to tiethe game 4-4 in the 5th inning.Great pitching by Joel Enriquezand Manny Marin held the powerhitting Patriots to 4 runs. Clutchhitting by Jeter Polledo helped putthe Outlaws ahead twice in thegame.

During the November 5 Miami-Dade County Commission meet-ing, Commissioner Barbara J.Jordan honored the MiamiOutlaws Elite traveling baseballteam for winning the regionalUSSSA Championship and issueda proclamation declaringNovember 5, 2014 as MiamiOutlaws Elite Baseball Day.

MERGER of Outlaws and Cobras players result in MiamiOutlaws championship team now heading to Orlando forThanksgiving Baseball Super NIT at Wide World of Sports.

American, Mater Academy,lose quarterfinal matches

The American Patriots defensedidn't have an answer forPlantation's explosive runningback Maurquice Flowers, whorushed for 203 rushing yards andscored four touchdowns in theirRegion 4-7A quarterfinal playoffgame last week at MilanderStadium.

When it was over, Plantationadvanced with a 34-13 win againsta 9-2 American team that had oneof the best defenses in Miami-Dade County, but allowed over350 yards of total offense againstthe team from Broward.

Flowers credited his offensiveline for his record-breaking per-formance, saying his on-fieldbody guards blocked well andopened up holes for him to runthrough.

For the fourth consecutive year,American couldn't get over thehump after winning the districtchampionship in 2011, 2012, 2013and 2014, losing each time in thefirst round of the playoffs.

Under first year head coachAnthony White, the Patriots fin-ished the regular season with a 9-1 record and fended off post sea-son elimination by defeatingfierce district rivals MaterAcademy and Miami Springs toregain the division title.

District runner-up MaterAcademy also fell to a Browardteam, as St. Thomas Aquinas rout-ed the Lions, 57-0, in a Region 7Aquarterfinal playoff game at BrainPiccolo Stadium.

St. Thomas will face Plantationthis week in a regional semifinal.

Pace High students tour various Florida universitiesBy Rene D. BasultoSpecial to The Miami LakerJuniors and seniors at

Monsignor Edward Pace High

School got a first-hand look attheir college prospects when theywent on a three-day tour of sixFlorida universities from October

6-8. The students were chaperonedby Pace’s Dean of AcademicsRebeca Bautista and college advi-sor Lilian Dubon, along with adirector from the tour’s organizerCollege Campus Trips.

After meeting up at Pace earlyon October 6, students and chaper-ones rode a bus to Fort Myers tospend their morning at FloridaGulf Coast University, headed toTampa to visit the University ofSouth Florida in the afternoon andate dinner at the University ofFlorida in Gainesville at night. Thenext morning, students got a tourof the University of Florida, head-ed to Tallahassee to visit FloridaState University in the afternoon, and ended their evening inJacksonville.

On the final day, students wenton a tour of the University ofNorth Florida in Jacksonville andheaded south to Orlando and theUniversity of Central Floridabefore finally arriving back at Pace

in the evening. The tour was the first of its kind

that Pace students have been on.As part of their tours, students gotto walk through the six colleges’campuses, see classrooms, andspeak with current university stu-dents. They also got the chance tohave honest conversations withrecent Pace alumni, such as JavierGonzalez, (Class of 2012) at FSU,Janelle Gonzalez (Class of 2014)at UCF, and Tommy Aponte (Classof 2013) who gave the tour of theUniversity of Florida as a UFStudent Ambassador.

“For me, personally, the mostmemorable experience was ouralumni at the different universitiesmaking the time to meet me andour students,” said Dubon. “Itproved that, in fact, there is a fam-ily bond that is created amongSpartans, a bond that is everlastingbecause of the memories and expe-riences they live while at Pace.”

“It is very important for stu-

dents to visit the colleges andimagine themselves there,” saidDubon. She added that students’expectations about universitiesmay be based on hearsay or publicrelations material put out by thecollege.

According to Dubon, whilemany students were awed by cer-tain campuses, particularly UF andits facilities, what matters in theend is that students decide on whatschool is best for them.

“Individual perceptions of whata university should be like variesfrom individual to individual andnot all colleges have the sameenvironment and/or atmosphere,”said Dubon.

Pace junior Michael Barcelo, who says he wanted to know all ofhis options for Florida universities, was one of those students who hadhis eyes opened by the trip. “I onlyhad UM and FIU in mind before Iwent on this tour,” said Barcelo.“Now I have a better understand-ing of the other universities inFlorida and can't wait to go toUNF!”

Pace High uses Just.Ice.Coffee for aid to Haiti

ANDRES NOVELA (right), Pace High’s Campus Minister, serves just.ice.coffee to students in the Pace plaza.

By Rene D. BasultoSpecial to The Miami LakerPace High School and its

Campus Minister, Andres Novela, have worked tirelessly for years togive back to Pace’s Haitian sisterschools, Moulin and Pewou, through fundraisers and missionsto Haiti.

Last year, Pace CampusMinistry started the school’s first-ever coffee shop to sell“just.ice.coffee,” a new way toraise money and awareness for thiscause. The iced coffee is morethan just a simple fundraiser; it ismade with the organic fair-tradeCafé Cocano, the coffee grown inPace’s sister diocese of Port-de-paix.

“Most people don’t know thatHaiti produces coffee and thisallows our school community toconsider one of the manyresources that Haiti has to offer,”said Novela.

Novela learned about CaféCocano coffee on a trip to Port-de-Paix in 2011 when he met with thecoffee farmers and their coopera-tive president. After learning thatSt. Thomas University was sellingthe coffee through its Center forCommunity Engagement, hedecided that Campus Ministryshould start selling it at Pace inorder to “connect the work of thefarmers with our work with thesister schools.”

The money from the sales goestoward teacher salaries andschools supplies for the Haitiansister schools and building con-struction, nutrition programs, andagricultural projects for the sisterdioceses and their communities.

The “just.ice” dual-meaningcomes from the fact that the coffeeis cold-brewed and direct trade, asthe cocoa farmers receive a justand fair wage for their work, or“justice” which ends up contribut-ing to the economic developmentof the community.

Unlike traditional iced coffee, which is brewed hot and then puton ice, just.ice.coffee is cold-brewed at room temperature for 7hours with cold water, giving it asmoother taste and velvety finish. The coffee, creamer, and sugarused to make the syrup are allorganic.

Pace has a long, storied historyof continued support for Haiti.During Catholic Schools Week, the school and Campus Ministrysells t-shirts, Haitian-made art-work, and other items at the FairTrade Bazaar, and offer a simplelunch of rice and beans on thatweek’s Solidarity day in orderraise awareness of how the chil-dren of Moulin and Pewou live

every day.In addition, many school events

throughout the year such as Battleof the Bands, the Pace FilmFestival, and the mass collectionsduring the Junior Ring Ceremonyand Baccalaureate Masses raisefunds for the Haitian sisterschools.

For this school year, CampusMinistry began selling just.ice.coffee in the Pace plaza regularlyon Tuesday and Thursday morn-ings, upping their production ofbrewed coffee to 3 gallons a day. Each cup of coffee sells for $3,with 85 percent going to theHaitian sister schools and 15 per-cent being used to purchase thecoffee beans and supplies.

Through social media, announcements, and word ofmouth, the sales have made regu-lar customers out of students andteachers. Cupcakes, cookies, andthemed-music days where jazz,90’s hip-hop, and Haitian musicplay in the plaza have also broughtmore customers.

While he is currently runningthe just.ice.coffee shop, Novelaeventually wants to train a groupof students as baristas so that theycan run the shop themselves.

Jose Marti MAST Academy usestechnology for nature research

Rather than solely using tech-nology to be engrossed in cyber-space activity, Jose Marti MAST6-12 Academy is utilizing technol-ogy to foster connectivity andexploration among the naturalworld outside the classroom walls.

The Green Club at Jose MartiMAST 6-12 Academy, a STEMfocused magnet school, has plant-ed an arboretum with 38 species oftrees, shrubs, and grasses native toSouth Florida. To help students inboth middle and high schoolresearch classes to become famil-iar with plant life from the local

environment, the school has devel-oped an activity in which natureand technology merge.

Each species of plant is labeledwith a number from 1 through 38and students are given a fieldguide that describes common plantnames, and QR codes for websitesthat describe the plants. In com-
