Hoà Chí Minh ABSTRACT Bloating fried dried Tra-Basa was one of special commodities at Chau Doc – An Giang, the province which had over 45 big and small bloating fried dried Tra-Basa shops. Their processes were not been ensured in terms of hygiene standard because they soaked fish meat in the river water and dried them on the outdoor drying ground. The aim of this study were: (i) preliminarily investigate the processing of bloating fried dried Tra-Basa at Chau Doc – An Giang; (ii) suggest some technical parameters in processing to improve the quality of this product. There were three (3) experiments to guarantee the hygiene standard and to improve flavor and taste of bloating fried dried Tra-Basa safe: soaking fish meat in tap water, soaking fish meat in salt solution and drying. The result showed that the concentration of NH 3 was in safe range (24.04 mg/ 100g) if soaked in 20 hours and the sense value was best (3.46 mark). The salt content was reduce from 10.11% to 7.66% when soaked in 13% salt solution for 5 hours. The peroxide got 3.65 mg/ 100g at 45 o C when dried for 32 hours and the sense value were improved. GIÔÙI THIEÄU Hieän nay, thöïc traïng ñaàu ra cho saûn phaåm caù nuoâ i nöôù c ngoï t khoâ ng oå n ñònh, gaë p nhieà u khoù khaê n. Caù Tra cuõng khoâng ngoaïi leä. Ñaây laø loaøi caù coù giaù trò kinh teá cao, ñöôïc ngöôøi daân ñaëc bieät laø ôû caùc tænh ñoàng baèng soâng Cöûu Long ñaàu tö nuoâi raát nhieà u. Vì vaä y, vieä c thò tröôø ng tieâ u thuï caù c saû n phaå m cheá bieán töø caù Tra khoâng oån ñònh aûnh höôûng raát lôùn ñeán kinh teá gia ñình cuûa nhöõng ngöôøi daân naøy. Maët khaùc, cuøng vôùi söï phaùt trieån kinh teá thì nhu caàu veà thöïc phaåm cuûa con ngöôøi ngaøy caøng ñöôïc chuù troïng hôn ñaëc bieät laø veà giaù trò dinh döôõng, caûm quan cuõng nhö tính tieän duïng cuûa saûn phaåm. Vaán ñeà ñaët ra cho ngaønh cheá bieán thuûy saûn laø naâng cao giaù trò gia taêng, ña daïng hoùa saûn phaåm cuõng nhö ñaûm baûo veä sinh an toaøn thöïc phaåm ñoái vôùi saûn phaåm cheá bieán töø nguoàn lôïi caù nöôùc ngoït noùi chung vaø ñoái vôùi caù Tra noùi rieâng. Saû n phaå m khoâ caù tra phoà ng laø moä t trong nhöõ ng ñaëc saûn ôû Chaâu Ñoác An Giang ñöôïc nhieàu ngöôøi bieá t ñeá n. Hieâ n nay taï i Chaâ u ñoá c An Giang coù nhieà u cô sôû saûn xuaát, tuy nhieân saûn phaåm khaù maën, ñieà u kieä n veä sinh chöa ñöôï c quan taâ m. Ñeà taø i “Khaû o saù t moä t soá cô sôû saû n xuaá t vaø nghieâ n cöù u naâ ng cao chaá t löôï ng khoâ caù Tra phoà ng ôû Chaâ u Ñoá c An Giang” nhaèm caûi thieän ñoä maën cho phuø hôïp vôùi thò hieáu ngöôøi tieâu duøng cuõng nhö naâng cao chaát löôïng veä sinh, ruùt ngaén thôøi gian saûn xuaát so vôùi saûn phaåm khoâ caù tra phoàng treân thò tröôøng. VAÄT LIEÄU VAØ PHÖÔNG PHAÙP Khaûo saùt tình hình saûn xuaát kinh doanh khoâ caù tra phoàng ôû chaâu ñoác an giang - Soá lieäu ñöôïc ghi nhaän taïi cô sôû saûn xuaát vaø Phoøng thoáng keâ Chaâu ñoác An Giang - Ghi nhaän quy trình cheá bieán taïi cô sôû saûn xuaá t nhaè m caû i thieä n chaá t löôï ng saû n phaå m döï a treâ n quy trình ghi nhaän Thí nghieäm 1: Ngaâm trong moâi tröôøng nöôùc maù y - Caù sau khi ñöôï c caé t ñaà u, moi ruoä t, laø m saï ch vaø phileâ laá y hai mieá ng thòt caù hai beâ n coø n nguyeâ n da. Tieá n haø nh ñem ngaâ m trong moâ i tröôø ng nöôù c maù y. - Tæ leä caù: nöôùc ñöôïc khaûo saùt laø 1:8. - Thôøi gian ngaâm ñöôïc khaûo saùt ôû 18h, 20h, 22h, 24h. Caùc chæ tieâu theo doõi: + Phaân tích NH 3 (TCVN 3706-1990) + Ñaùnh giaù caûm quan (Haø Duyeân Tö). Thí nghieäm 2: Khaûo saùt quaù trình öôùp muoái Caù sau khi ngaâm ñöôïc ñem ñi öôùp muoái theo phöông thöùc öôùp muoái öôùt töùc laø öôùp caù trong dung dòch nöôùc muoái. Thay ñoåi thôøi gian vaø noàng ñoä muoái. - Noàng ñoä muoái ñöôïc khaûo saùt laø 10%, 13%, 16%, 19%. - Thôøi gian ngaâm ñöôïc khaûo saùt ôû 3h, 4h, 5h, 6h. - Caùc chæ tieâu theo doõi: + Noàng ñoä muoái trong saûn phaåm (TCVN 3701-1990) + Ñaùnh giaù caûm quan.     ABSTRACT

    Bloating fried dried Tra-Basa was one of specialcommodities at Chau Doc An Giang, the provincewhich had over 45 big and small bloating frieddried Tra-Basa shops. Their processes were notbeen ensured in terms of hygiene standardbecause they soaked fish meat in the river waterand dried them on the outdoor drying ground.

    The aim of this study were: (i) preliminarilyinvestigate the processing of bloating fried driedTra-Basa at Chau Doc An Giang; (ii) suggest sometechnical parameters in processing to improve thequality of this product.

    There were three (3) experiments to guaranteethe hygiene standard and to improve flavor andtaste of bloating fried dried Tra-Basa safe: soakingfish meat in tap water, soaking fish meat in saltsolution and drying. The result showed that theconcentration of NH3 was in safe range (24.04 mg/100g) if soaked in 20 hours and the sense valuewas best (3.46 mark). The salt content was reducefrom 10.11% to 7.66% when soaked in 13% saltsolution for 5 hours. The peroxide got 3.65 mg/100g at 45oC when dried for 32 hours and the sensevalue were improved.GII THIEU

    Th nghiem 3: Khao sat nhiet o va thi giansay- Ca sau khi ngam, p muoi, tien hanh say

    vi cac nhiet o va thi gian say khac nhau.- Nhiet o say c khao sat la 40oC, 45oC,

    50oC, 55oC.- Thi gian say c khao sat 20h, 24h, 28h,

    Hien nay, Chau oc An Giang co khoang 5c s chuyen san xuat ac san kho ca Tra phong,qui mo san xuat va va nho. Trong o, co the noic s san xuat kho ca Tra phong Trng Hai la coqui mo ln nhat vi vai chuc en hang tram congnhan vi hp ong lam viec theo mua vu, ke enla c s Nam Tan, Anh Quoc, Hai Ton, Hong aochu yeu tap trung phng Vnh My, th xa Chauoc.

    Cac c s hang nam a cung cap ra th trngkhoang 880 tan san pham (so lieu phong van).Trong o, san lng cua cac c s c tnh nhsau:

    - C s Trng Hai: 10 tan/lan x 4 lan/thang x10 thang = 400 tan/nam

    - C s Nam Tan: 05 tan/lan x 4 lan/thang x 10thang = 200 tan/nam

    - C s Anh Quoc: 03 tan/lan x 4 lan/thang x 10thang = 120 tan/nam

    - C s Hai Ton: 02 tan/lan x 4 lan/thang x 10thang = 80 tan/nam

    - C s Hong ao: 02 tan/lan x 4 lan/thang x 10thang = 80 tan/nam

    Theo quy trnh san xuat cua c s kho ca Traphong Nam Tan tren, chung toi nhan thay comot so van e can ban luan nh sau:- Ca c cat au xe bung ngay khi mua ve e

    Trong thi gian au (t 18h en 22h) lng NH3tao ra khong nhieu bang vao thi gian sau (t 22hen 24h) va ham lng NH3 tang dan theo thigian ngam t 21,27 mg/100g tht ca 18h en 31,41mg/100g 24h. Tuy nhien tat ca ham lng NH3nay eu nam trong gii han cho phep ( 40 mg/100g-TCVN).

    Chung toi cung nhan thay ca tra la nguyen lieucha nhieu chat beo, di tac ong cua nhiet ode dang tao thanh cac peroxide; khi thi gian keo

    dai, nhiet o tang cao, ham lng peroxide sansinh ngay cang nhieu va ham lng peroxide cuatht ca tang theo phng trnh tng quan z = -7,06 + 0,13x + 0,15y (R2 = 96,7%).
