Kadim 1 Personal Statement At Sultan Qaboos University I have conducted research that will lead to improved meat production and quality and have delivered innovative education that has stimulated students to learn. I introduced the study of meat science to the University and developed the teaching and research components for undergraduate and post-graduate programs. Personal Statement At Sultan Qaboos University I have conducted research that will lead to improved meat

production and quality and have delivered innovative education that has stimulated students

to learn. I introduced the study of meat science to the University and developed the teaching

and research components for undergraduate and post-graduate programs.

Instructional Activities

Over the past ten years I have contributed to the planning and development of undergraduate

and graduate programs in Animal and Veterinary Sciences. This included developing the first

Veterinary Technology program, a specialization for which there is high demand throughout

the region.

My teaching has been recognized twice with Teaching Awards (2004 and 2007). I have

taught and developed curricula for 11 undergraduate and postgraduate courses and supervised

and co-supervised 16 graduate students.

Research

I established the first meat science laboratory in Oman and used it to initiate high quality

research in the area of meat science. This will be instrumental to the Sultanate for establishing

criteria for carcass and meat quality assessment.

Camel meat is a potentially valuable local food source because of its ability to produce high

quality, low-cost meat in harsh environments. The demand for camel meat has increased over

the past few years due to its low fat content, but its meat quality characteristics have received

little attention. To shed light on this issue I have researched the effects of age and electrical

stimulation on the quality, composition and histochemsitry of meat from dromedary camels.

Sultan Qaboos University is now recognised as an international leader in research on camel

meat as a result of this research. Advancing the understanding of factors affecting the quality

and marketability of camel meat resulted in Sultan Qaboos University being selected, from

three proposals, to host the 3rd Conference of the International Society of Camelid Research

and Development in 2012, which I will be chairing.

The findings of my research on the effects of heat stress on carcass and meat quality of local

animals has important implications for livestock production in the region as high ambient

temperature is one of the main constraints on animal production. Further, my research on the

relationship between the nutritive value of local feeds and animal health identified several

low cost feed alternatives which could reduce the cost of local animal production.

My research has been widely published in leading refereed journals and I have presented the

findings of my research at both national and international conferences and workshops. My

160 publications include 69 in press, or published in refereed journals; 3 submitted

manuscripts, 7 book chapters, 51 conference presentations, 4 invitations to present research

findings, 6 popular articles, and 20 technical reports. I am currently writing a book on carcass

and meat quality characteristics of camel and co-editing a book on goat meat production and

quality.

I have obtained funding grants for eleven of my research projects to support my research

including from His Majesty’s Research Fund for two projects for which I was co-investigator.

In addition I am currently preparing an application for funding from The Research Council

for research on meat contamination. My research was recognized by Sultan Qaboos

University with the presentation of an Achievement Award for Excellence in Research in

2009.

Leadership, Extension and Community Service The effectiveness of my academic leadership during my two years as Head of Department of

Animal and Veterinary Sciences has been recognised by the extension of my contract for this

position for a further three years. My major professional undertakings include associate editor

of the Journal of Camelid Science and the Sultan Qaboos University Research Journal:

Agricultural and Marine Sciences, as well as being a referee for ten international journals.

I have also served on various departmental, college, and university committees including

serving as a member of the scientific committee for the first international conference on food

safety in Oman. I continue to play a leading role in the training of technicians and students

such as training Omani technicians and postgraduate students on laboratory and farm

techniques in the area of meat quality assessment and poultry production. I have supervised

many students in the special problem course on applied research studies that are pertinent to

Omani animal production problems.

I have also participated in College open days, met with farmers and extension workers, and

promoted departmental activities through the media. The strong links I have developed with

many public and private sector bodies have helped in providing jobs for many graduates of

the program.

Future Objectives

Championing the exploitation of camel meat as a healthier alternative to other commonly

consumed meat products in the Sultanate and thereby assisting in the optimization of human

health through nutritional strategies. To achieve this objective, proteomic techniques will be

employed to expand our knowledge of camel meat quality and to establish the ideal

conditions for its processing. As a second objective I will continue to study safety issues

pertaining to meat and meat products marketed in Oman. In addition I hope to continue to

develop innovative teaching that stimulates students to learn theoretical and practical ways to

improve the animal sector in Oman.

Special Problems Course The special problem course in the Department of Animal and Veterinary Sciences is considered by both faculty and students as one of the most important undertakings in the undergraduate program. I have supervised many students in various aspects of animal and poultry production and meat science.

Student Advising (Sultan Qaboos University) I have advised more than 100 students during my tenure at Sultan Qaboos University. I have always maintained an open door policy and encouraged students to discuss various issues. 2. Research Background, Future and Skills My research interests include: carcass characteristics and classification; manipulation of carcass composition in relation to human health; hazards of chemical, hormone and antibiotic residues in meat and meat products; meat quality evaluation; heat stress and its effect on meat quality, camel meat quality and its improvement by applying electrical stimulation, use of proteomic methods s on blood chemistry, histochemical and meat quality characteristics of Omani goats and sheep. 3. Establishment of a Meat Science Laboratory Meat is an important source of protein for the rapidly growing population of Oman. There is lack of information on the general hygiene and meat quality characteristics of meat and meat products in Oman. Our meat science laboratory was established to support teaching and research activities at Sultan Qaboos University. However, it also aims to provide services to Omani society and government and private companies. The meat science lab has been used as a place for training Omani technicians and students. Established an Open-Sided Poultry House To undertake heat stress studies, an open-sided poultry house was constructed at the Agricultural Experiment Station to conduct research on performance and meat quality characteristics of broilers.

Extension

1. Consultation on the analysis of feed ingredients was provided to the following companies:

a. Modern Nizwa Poultry Farm hatchery b. Sohar Poultry Farm Co. c. Small scale private poultry farms. d. Evaluate meat quality and nutritive value of broiler carcasses for Rayaf Farms.

2. A talk on the poultry vaccination program in the Sultanate of Oman was presented at the Omani Flour Mills workshop (2003).

3. A talk on the animal wealth and the meat safety in the sultanate of Oman was presented at the 2nd Conference on Consumer Protection of Muscat Municipality (5-6 May 2002).

4. The significant steps to improve meat quality of Omani livestock in Oman were highlighted in Al-Watan News paper (Issued on 10th of December 2001).

5. The performance of different strains of commercial broiler reared in Oman was evaluated as a service to various sections in the poultry industry.
