    December is centeredaround celebrating theholidays. Each family has

    their own traditions they followeach year.

    The News Messenger spoke with downtown merchants todiscover what they do each hol-iday season.

    For Sarah Stidham, a barista

    at Brickhouse Coffee, Christmashas two meanings: Apple Hilland crab legs.

    Every year, the Stidham fam-ily goes to Apple Hill and cutdown our Christmas treestogether, usually the week afterThanksgiving, Stidham said.We have to walk up and downthe mountain for the tree and

    its fun.One aspect of the Apple Hill

    trip Stidham said she enjoys isbeing together with about 18family members.

    For Christmas dinner, Stid-ham said, the tradition is for herfather to cook king crab legs forthe family.

    My dad started doing it one

    year and it just stuck, Stidhamsaid. We get the crackers outand everything, and my dadeven wears an apron when hecooks.

    Next door at the Lincoln CityBarber Shop, owner Al Hollandsaid he likes getting togetherwith his three sons for Thanks-giving dinner.

    Two of Hollands sons live inUtah, and one lives in SouthernCalifornia. The four rotate thelocation they meet at each year,be it Hollands home in Wheat-land, Southern California orUtah.

    On Thanksgiving, the com-munities in each area seem tohave a feed the hungry type of

    walk and so we, as a family, participatein that type of walk, Holland said.

    For Terry Friebel at the Old Carrousel,Christmas is celebrated with her familyon Christmas Eve at her parents cattleranch in Lincoln.

    We always have prime rib, everyyear, Friebel said. We play games afterdinner and open gifts.

    Friebel celebrates with her husband,

    daughter, parents and her sisters fam-ily.When the kids were small, we had

    Santa come to the house. He wouldring the bells and leave presents on atreasure hunt, Friebel said. He wouldleave them a map and they would haveto find the gifts. Sometimes, they couldbe hidden in a hay loft.

    Now that the kids are older, Friebelsaid, they play games such as Uno andCatchphrase after dinner, followed by atrip to the movies on Christmas Day.

    When Jean Cross, a partner of ThePlace! was growing up, her mother

    would serve the same meal every year.One tradition my mom had is mak-

    ing Swedish meatballs, Cross said. Idont know why because theres noSwedish in the family.

    When her children were growing up,Cross said, she and her husband wouldallow them to open one present onChristmas Eve.

    I would put a stocking in their room

    so we could sleep until 6:30 a.m., Crosssaid. I tried to make it so they wouldhave something to eat and somethingto play with so they would stay in bed.

    Now the tradition for Cross and herfamily is to plan an activity together,which could mean going to the movieson Christmas Day.

    No matter what holiday you cele-brate or how you celebrate, The NewsMessenger wishes you a happy and safeholiday season.

    Christmas is almosthere, which meansits time for holiday

    dinners, complete withdesserts and sweets.

    Here are some treats todeliver some holidaycheer when you visit fam-ily this month.

    The pie takes on a localflavor if you buy persim-mons from roadside fruitstands in the area.

    The teacakes short-bread cookies and peanutbrittle can make a nicehostess present if you boxthem up with some festivered and green ribbon.

    Holiday cookies and desserts sure to please this seasonPersimmon Holiday PieINGREDIENTS:

    Two graham cracker crusts2 cups persimmon pulp (12 persimmons total)3 eggs1 cups sugar

    1 cups flour1 tsp baking powder1 tsp baking soda1 tsp vanilla tsp salt cup melted margarine or butter2 cups milk2 tsp cinnamon1 tsp nutmeg1 cup walnuts, chopped (optional)

    DIRECTIONS:

    To make the persimmon pulp, slice the stemsoff the top of the persimmons and then chop

    into small pieces. Put the persimmon piecesin a blender and blend until smooth, whichwill make a paste.Place persimmon paste into a strainer andput the strainer over a large mixing bowl.Mash the persimmon paste into the strainerusing a spoon, which will release the pulp

    into the bowl. Expect to spend about 10 min-utes mashing the pulp into the bowl.Once you have your two cups worth of pulp,mix everything but the walnuts and the

    piecrusts into the bowl. Divide the mixtureevenly between the two crusts and bakeeach at 325 degrees for one hour, or untilfirm.Top with whipped cream and walnuts.

    Serves 16(makes two pies)

    Scottish ShortbreadINGREDIENTS:

    1 cup butter2 cups all-purpose flour1/3 cup sugar cup rice flourSilver balls or candied cherries, to decorate

    DIRECTIONS:

    Beat softened butter until creamy, and mix inthe flours and sugar.

    Chill in the fridge for an hour.Roll the doe out 1/3 to thick.Cut out diamonds or circles with cookie cut-ters.Place a silver ball or piece of candied cherryin the center of each, pressing a little.Bake at 300 degrees for 15 minutes.

    I cup butter cup sugar1 tsp vanilla2 cups flour tsp salt cup finely chopped nutsone cup confectioners sug-ar

    DIRECTIONS:Mix butter, sugar andvanilla.Stir flour and salt togeth-er.Blend the flour into thebutter mixture and thenmix the nuts in.Firm the dough into inchballs.Place on an un-greasedbaking sheet, and bakefor 10 to 12 minutes at

    325 degrees.While warm, roll the cook-ies in the confectionerssugar.Cool the cookies and thenroll them in confectionerssugar again.

    RECIPE BY BETH SOGAARDSPECIAL TO GOLD COUNTRY NEWS SERVICE

    Buttermilk Plum CakeThis festively spiced, buttery and moist cake has

    been a family favorite of Catering Chef Beth Sogaardfor three generations.

    Yield: 1 bundt cakeIngredients:2 1/2 cups all purpose flour2 cups sugar2 teaspoons apple pie spice2 teaspoons ground cinnamon1/2 teaspoon plain salt1 cup vegetable oil4 large eggs1 cup stewed prunes, pits and skins discarded1 cup pecans, chopped1 cup buttermilk2 teaspoons baking soda1/4 pound butter1 cup sugar1/2 cup buttermilk1/2 teaspoon baking soda

    Directions:Stir together the flour, 2 cups sugar, spices, salt, oil,

    eggs, prunes and pecans. Stir the 2 teaspoons bakingsoda into the 1 cup of buttermilk and then add to thecake batter. Pour batter into a greased tube pan withremovable bottom or a bundt pan and bake at 300degrees for 1 1/2 hours.

    Meanwhile, combine the butter and sugar in a smallsauce pan. Stir the 1/2 teaspoon baking soda into the1/2 cup buttermilk and add to the butter and sugar.Bring to a boil and boil for one minute.

    Remove cake from the oven and immediately pourglaze over the top. If using a bundt pan, let cake cool 10minutes, then turn out onto a serving platter. Pourglaze over the top and sides of the cake.

    This peanut brittle cooks up in less than10 minutes in the microwave. They

    INGREDIENTS:

    1 cups dry roasted unsalted peanuts1 cup white sugar cup light corn syrup1/8 tsp salt1 tbsp butter1 tsp vanilla1 tsp baking soda

    DIRECTIONS:Line a baking sheet with foil andgrease it.In a glass bowl or casserole dish, com-bine peanuts, sugar, corn syrup andsalt.Cook, covered, in microwave for sixminutes on high. Mixture should bebubbly and peanuts browned.Stir in butter and vanilla, cook, cov-ered, two minutes longer.Quickly stir in baking soda, just untilmixture is foamy.

    Pour immediately onto greased, foillined baking sheet. Do not spread.Let cool about one hour until set.Break into pieces and store in an air-tight container.

    Nature always provides us with what weneed to eat at exactly the time weshould be eating it.

    Thus, we have mandarins in winter,berries appear early summer, and in latefall, winter squash are on many growerstables at weekly farmers markets.

    The squash end up in a big woven basketand add color to my kitchen or dining roomtable until theyre ready to pop in the ovenfor a quick roasting. A pile of squash is edi-ble art at its finest.

    As daylight hours decrease and tempera-tures go down our bodies seem to wantheavier more dense vegetables and severalvarieties of winter squash fill the bill. Some

    winter squash are ideal for pies, others havethe flavorful texture for soup, and theres alarge number that are excellent roasted:acorn, butternut, delicata, Marina deChiogga, spaghetti.

    As a child my father always grew acornsquash and it was the traditional squash ofchoice for Thanksgiving dinners. My moth-er roasted it, mashed it with butter and atouch of brown sugar, and I loved it withgravy. Acorn squash and cranberry relishstill remind me of Thanksgiving.

    Another tasty way to serve acorn squashis to garnish the plate with walnuts sautedin butter. The buttered squash is a nice

    choice to serve with lamb chops or slicedham.

    ROASTED ACORN

    SQUASH WITH

    WALNUT BROWN

    BUTTERINGREDIENTS

    3 acorn squash, cut into

    wedges, seeds removed

    2 tablespoons olive oil

    salt and pepper to taste cup butter

    cup walnuts, chopped

    2 tablespoons parsley,

    chopped

    DIRECTIONS

    Preheat oven to 350

    degrees.Season squash with oil, salt

    and pepper. Place on sheet

    tray. Cover with foil, and

    roast 30 to 40 minutes,

    until tender.

    Meanwhile, in a largesaut pan, heat butter.

    When foamy, add walnutsand continue to cook until

    brown flecks appear in the

    butter. Season lightly with

    salt and pepper.

    To serve, place squash on aplatter, skin side down,

    and top with brown but-ter. Garnish with chopped

    parsley.

    The squash end up in a big woven

    Squash is one seasonal delight you can eat, or use as art
