RAMEN GUIDE

Ramen has become a Japanese cultural phenomenon, and the ramen scene in Singapore has grown since, with many ramen restaurants popping up all over the island. Since foodies like us are always in search for the best, it is

no surprise that restaurants included in your first go-around could have fallen off the list, and been replaced by another better option.

Instead of letting someone else online help you pick the winners, here are some things to noodle over about so that you can draw your own conclusions on what Ramen truly is the best.

RAMEN = BROTH + NOODLES + TOPPINGS.Broth is the most important part of ramen, and as the body of the dish, it takes more than a day to prepare a perfect bowl of broth. There is an overwhelming variety of different broths that can be easily recognized - tonkotsu (white, milky, pork-based soup), shoyu (brown, transparent, soy sauce-based soup), miso (brown, non-transparent, miso-based soup), and shio (transparent, salt-based soup).

Ramen noodles can come in different sizes - thick, thin, ribbon-like, straight, wrinkled, long or short. These noodles are made from four very basic ingredients - wheat flour, salt, water, and kansui (a type of alkaline mineral water). Kansui gives the noodles a yellowish hue as well as a firm texture - which makes it slightly al-dente.

Toppings added to Ramen bowls usually consist of chashu (braised sliced pork belly), ajitsuke tamago (Japanese marinated soft boiled eggs), negi (spring onion), nori (dried seaweed) and shinachiku (fermented bamboo shoots). These toppings complement and complete what a bowl of ramen should be like.

So what to expect in a bowl of ramen? The savoury broth is complex and flavourful, the chewy noodles gives it texture, and the toppings added should make the whole combination extremely satisfying.

FOR A TRUE RAMEN EXPERIENCEThe most important part of the ramen experience, is to slurp it like the Japanese. This could be a useful tip for anyone who goes to a ramen restaurant in Japan, because slurping a bowl of noodles is an expression of good food.

First, take a minute to indulge in your perfect bowl of ramen and take a whiff. Then grab your chopsticks and start tasting the noodles first. The noodles soak up the flavours from the broth, leaving an explosion of flavours in your mouth. Coat your noodles in the broth and just slurp it. Thereafter, sink the Chashu into the soup and leave it to enjoy later, for it gets softer as it absorbs the soup. Keep slurping the bowl of delish and once you finish till the last drop, exclaim with great delight.

WHAT IS CONSIDERED A PUBLIC PLACE?Parks, void decks, corridors and pavements, basically any place that is out in the open or enclosed and doesn’t have a security guard to chase you away.

FOR HOW LONG WILL THE BAN BE IN EFFECT?Between 10.30pm and 7am. This is to minimize noise and disturbances to residents in the area - learn to be considerate to your neighbours.

Singapore has passed a Bill that exerts tougher controls on the supply and consumption of alcohol in public places. This means alcohol cannot be consumed in public during certain hours and the sale of take-away alcohol will end at 10.30pm island-wide.

DRINK, DRANK,BUT NEVER DRUNK

WHAT ABOUT DRINKING AT COFFEESHOPS OR F&B OUTLETS AFTER 10.30PM? Yes! But only within the premises of these outlets. It also depends on the liquor licenses that the shops hold. The cut-off time may vary from 12am till past midnight, and strictly no alcohol take-aways after 10.30pm.

WHAT IF I HAVE A BARBEQUE AT THE PARK OR AN EVENT?On top of booking the NParks barbeque pit, you will also have to apply for a liquor consumption permit. Basically, apply for an alcohol permit if you are consuming liquor for any gathering in public spaces.

THAT’S EASY, I’LL JUST HIDE MY ALCOHOL AND DRINK IT FROM MY BOTTLE/CONTAINER THENUnless you are really desperate, that is certainly not worth the effort or trouble. Police officers are empowered to do a search if they suspect some fishy business going on.

BUT… CASUALLY DRINKING WITH FRIENDS OVER ONE CAN OF BEER SURELY WON’T MAKE ME GO CRAZY OR ROWDY? Fair enough, the new law is imposed to encourage responsible drinking and considerate behaviour. Fingers crossed. We are adults and mature drinkers. Police will probably not step in unless you try to be funny.

WHAT IF WE GET CAUGHT FOR BEING A PUBLIC NUISANCE? If the police catches you, you’ll be up to $1,000 poorer. Push your luck any further and be ready to face fines of up to S$2,000 or even 3 months in jail.

HOW DO I PREVENT ANY UNPLEASANT DRINKING BEHAVIOUR AND HAVE A GOOD TIME WITH MY FRIENDS? Never drink on an empty stomach! Eat while you drink. This will help to slow down the absorption of alcohol into the circulatory system.
