Job Title: Food and Beverage Manager Responsible to: Operations Director Responsible for: Cafe and Bar team Rate of pay: £20,,000 - £22,000 pa depending on experience 37.5 hours per week (flexible due to the nature of NTR’s business) Effective date of job description: August 2015 Purpose of the Job: The Food & Beverage Manager is responsible for managing the day to day food & beverage, including Phipps Cafe/Bar, Matcham Bar and theatre operations of New Theatre Royal in a professional manner, while continually exceeding customer expectations. Key Responsibilities: Duties and Responsibilities: Overall management of the of the food & beverage operation. Ensure all customers are provided with an outstanding service. Ensure café, and bar operations are opened and closed according to policy. Implement strict stock controls to ensure food and beverage rotation. Responsible for ordering supplies and account control and establishing relationship with suppliers ensuring the business receives competitive terms. Responsible to assist in menu planning, development and meal specials. Responsible for food quality, and presentation. Ensure that New Theatre Royal operates within the Public licence. Ensure waste is minimised and properly recorded. Work with other team leads to assist with special events and Minghella Studio programming. responsible for high levels of hygiene control and health and safety throughout the department Ensure all kitchens and eating areas are organised and maintain a high level of cleanliness. Financial Manage the Food and Beverage budget. Maintain accurate accounting and review of PnL accounts to ensure KPI`s are met Ability to really drive the team and achieve targets. Ensure proper cash management controls are followed by all food & beverage staff members, as per policy. Team management Provides leadership and guidance to all team members. Ensure the food & beverage operations are properly staffed with trained competent individuals. Responsible for staff development and ensuring high levels of customer service.

Experience of meeting financial targets E Must be able to work flexible hours including evenings, weekends and

holidays E

First aid D Personal licence D Health and safety D Minimum two years’ experience in managing a small team. D
