Vegetable Chow Mein Serves 4 Ingredients: 2 medium carrots, sliced 1/2 red onion, small dice 1 red bell pepper, small dice 1 cup broccoli florets 2 cloves garlic, minced 1 tablespoon ginger, minced 1 bunch bok choy, stems diced and leaves torn in bite size pieces 1 tablespoon sesame oil or coconut oil 1 pound Chow Mein noodles (see homemade noodle recipe) 3 green onions, sliced Sauce 2 tablespoons soy sauce 2 teaspoons cornstarch 2 teaspoons brown sugar or honey 2 tablespoons rice wine vinegar 1/2 tablespoons sesame oil Directions: 1. Prep all vegetables. If using store bought chow mein noodles, follow package instructions on how to cook them. 2. Whisk together sauce ingredients and set aside. 3. In a large sauté pan or wok, on high heat, add oil. Once oil begins to smoke, add carrots. Stir constantly and cook for about 1 minute. Continue to add each vegetable in the order as they are listed on the ingredient list and cook for another minute per vegetable. Place bok choy leaves in last. Add ginger and garlic. 4.
