MANZANILLA granted its own classification due to its distinct sea spray aroma as influenced by the Atlantic ocean in the bodegas of DO Manzanilla Sanlúcar de Barrameda on the West Coast. Manzanilla Fina is younger, fresher & lower in alcohol, whilst Manzanilla Pasada (Goya XL) spends more time in barrel. Delgato Zuleta ‘Goya XL’ 500ml 12/90
FINO elegant and sophisticated with a dry tang & blanched almond complexity that showcases Sherry at its peak of refinement. A rare local sherry-style wine, legally called ‘apera’, is a fine Aussie example of this Spanish treat. AMONTILLADO traditionally a dry style of fino that has been aged without the protection of flor- the veil of yeast that forms atop the Sherry to allow a slow & desirable oxidative stay in barrel. Some are produced with the addition of a sweeter Sherry, as is the case here with this example actually from DO Montilla Moriles, where the style takes its name. Tora Albalá Solera 1922 11
OLOROSO literally translating to ‘fragrant’, oloroso fills your nose with punchy aromatics. A wine where the flor has been suppressed from the get-go. ALMACENISTA a dwindling breed of individuals with small, usually inherited, family soleras. Almacenistas do not actually produce finished Sherries, but rather mature them in their soleras before selling them back to the bodegas for bottling where both names appear on the label, showcasing their individuality. Cayataño del Pino Palo Cortado ‘Solera 15yr’ 11 EAST INDIA is now a name owned by Lustau. after reviving the style by blending soleras of up to 50 years of age. Upon return from long sea voyages where the barrels were used to stabilize the ships the wine was discovered to develop an accidental, yet desirable richness and smoothness. CREAM originally created for the British export market (think Bristol’s). Blended to medium sweet with finished Pedro Ximénez and Oloroso sherries. Bodegas Fernando de Castilla 8
MOSCATEL made from the Moscatel grape, a translation of Muscat, confusingly a name given to more than 200 distinct varieties. This Sherry produces a rich style with noticeable levels of acid and a medium sweet finish, a good stepping stone to the unctuous flavours of PX. Sanchez Romate ‘Ambrosia’ 12 PEDRO XIMÉNEZ sweet wine made from the grape of the same name left to raisin in the sun and intensify its sugars. Not actually grown in Jerez but instead further inland in the warmer climate of Montilla Morilles where the grapes are then shipped to Jerez for pressing and ageing. Gran Barquero 750ml 10/95

VORS (Vinum Optimum Rarum Signatum) a new category created in 2000 allowing nothing younger than 30 years of age in the bottle, this very old rare sherry “really dances”. Sanchez Romate ‘Old + Plus’ Pedro Ximénez 28
A Solera System is only ever stacked 4 butts high (butts are 600litre old American Oak (heavy!). Any higher crushes the bottom row (learnt that the hard way!)
Sherry will be drawn off from the solera row and bottled for sale. Only 30% is permitted to be drawn off each year.
Each time Sherry is drawn off from the bottom row (also known as the solera row from ‘suelo’, Spanish for floor), each barrel is replenished from the one above, and so on. This ‘fractional blending’ of younger wine into older wines means we never really know just how old a Sherry is.

“Grapes grown under the singing of the birds” is what it says on the label. Harmonious, balanced, calming ; perhaps these are the qualities the birds have shared with the vines? Outside of the spiritual attachment, the wine stands up. It has hints of brioche toast, is linear on the palate and finishes bone dry.
1+1=3 BRUT ROSÉ NV CAVA, PENEDÈS - SPAIN 11/65 The name refers to a partnership of two winemakers creating something more than one man could ever be capable of. The wine carries itself with clarity and precision. Excellent red-berried fruit presence. Floral and pretty, with a sharp, focused line that is very, very drinkable.
TROUILLARD BLANC DE NOIRS NV BRUT MONTAGNE DE REIMS - FRANCE 23/132
Lucien Trouillard’s grandson, Bernard, sits at the helm of this 15ha estate with burrows of limestone caves buried deep beneath his plantings in Dizy. Long maturation on lees contributes richness to the vibrant, floral character that is the house style, in this case a powerful example from 100% Pinot Noir grapes

DANDELION ‘Wonderland of Eden’ ‘13 Riesling BAROSSA (Eden Valley) - SA 10/36/50 The name is indicative of the liquid in glass (Wonderland of Eden). From Bulgarian winemaker Elena Brooks comes this high altitude Barossan Rizzo. Purity, poise, with a sense of youth. Loaded with lemony citrus and matched by a taut mouthfeel.
MIDDLESEX ‘08 Verdelho PEMBERTON - WA 9/32/45 An iconic West Aussie grape with a modern twist. It’s got years under its belt yet has retained incredible freshness in bottle whilst developing gentle subtleties of preserved lemon and terpenoid aromas - those you may see in an aged Riesling.
LUCY MARGAUX ‘Wildman’ ‘13 Sauvignon Blanc ADELAIDE HILLS - SA NAT 11/38/55 Talk about some wacky & crazy booze, you’ll need an open mind here. Late pick some Sauvi-B, yank the head off of an old and very neutral barrel. Take these 'noble' grape bunches (whole bunch), toss ‘em in and let it go, carbonic and wild style.
SILKWOOD ‘12 Chardonnay PEMBERTON - WA 11/38/55 A small, boutique producer with first plantings going down in 1999. Lively nose of fresh citrus, white grapefruit and expressive minerality. Subtle background of toasted French oak offers punchy texture and impressive length.
FOSTER e ROCCO ‘12 Fiano HEATHCOTE - VIC 10/36/50 Native to Campania in Italy’s south, Fiano enjoys the warm climates of McLaren and Heathcote. Aussie winemaker Adam Foster captures typicity with waxy generosity & lifted aromatics whilst maintaining modest alcohol. Clever winemaking.
KRACHER ‘13 Pinot Gris TROCKEN BURGENLAND - AUSTRIA 12/40/60 This is every bit Pinot Gris, with aromatic lift, yellow flesh stone fruit and floral prettiness. Couple that with Austrian clarity and we have a Kracher, not just by name. This is a Gris that has character and presence.

DOMAINE du MAS BLANC ‘Le Petit Parcé’ ‘11 Maccabeu ROUSSILLON - FRANCE 14/50/70
This wine is classified Côtes Catalanes IGP, which draws fruit from the regions along the French Riviera in the south. This fellow is full of tropical & aromatic complexities, viscous, quite powerful and perfect for a plate of spicy chorizo.
BOUTINOT ‘Réserve Personelle’ ‘12 Chardonnay MÂCON-CHARNAY - FRANCE 12/40/60 Affordable Burgundy is increasingly hard to find, this ticks all the boxes. Classic unoaked white Burgundy that shows white grapefruit pith, mealy depth with excellent length and concentration that has a limey, elegant finish.
‘DUENDÉ’ by Dani Sánchez ‘13 Viura NAVARRA - SPAIN 9/32/45 Dani Sánchez is at the forefront of the organic wine movement in Spain and produces this wine for us from old vine Viura plantings. Perfumed nose, fragrant white flowers, crisp stone fruit and amazing value. Gracias Amigo.
1+1=3 ‘13 Xarel.lo PENEDÈS - SPAIN 11/38/55 We’re lucky here at Duende, the best Spanish whites come to us first, this one exclusively. An aromatic variety usually made into Cava. Lively white flesh stone fruit supported with generous fruit weight & length. Spain’s Pinot Grigio?
PARDEVALLES ‘13 Albarín Blanco TIERRA de LÉON - SPAIN 12/40/60 Albarín is indigenous to the South and bares no relation to Albariño. Almost extinct, this rare offering comes from just
3ha of vines. It has an impressive fruit profile with underlying vegetal & mineral characters. Clean, expressive, yummy.
MENGOBA ‘Brezo’ ‘13 Godella/Doña Blanca BIERZO - SPAIN 12/40/60 We’re big fans of Grégory Pérez, he nails every variety. This is from cool-climate Galicia in the northwest where he
captures freshness in Godello without the usual heady alcohol. Lifted, vibrant, very well made wine from a rising star.

WILLOUGHBY PARK ‘14 Shiraz GREAT SOUTHERN - WA 9/32/45 Hard to imagine Shiraz producing such an elegant, dry rosé. Modern approach with bright pink grapefruit & pomegranate and a stint in neutral cask to soften the edges whilst bringin’ the texture.
VERGET du SUD ‘13 ‘Méditerrannée’ Grenache/Cab PROVENÇE - FRANCE 10/36/50 To the French Riviera we go with this rosé - fragrant with spritely ripe strawberry and raspberry. Salmon pink (looks Provençal) with savoury, herbal edges housing zesty lift and persistent cassis.
‘DUENDÉ’ by Gavin Berry ‘13 Tempranillo - WA 9/32/45 Tempranillo is starting to show true varietal typicity in WA. This is a combination of fruit from Perth Hills & Frankland River. Juicy, plump fruit & silky tannins. Made for us by Gavin Berry who has over 25 yrs of serious winemaking credentials.
ZAREPHATH ‘11 Shiraz/Cabernet Sauvignon GREAT SOUTHERN - WA 10/36/50 It gets cold down in the Porongorup ranges and this cool climate blend represents. It’s perfumed and jubey on the nose with a plump, dark fruit profile that combines well with lashings of meaty goodness.
FIKKERS ‘Two Bricks’ ‘14Sangiovese YARRA VALLEY - VIC NAT 11/38/55 Gotcha, natural wines are trending. This is unfined, unfiltered, foot stomped, co-fermented, whole bunch & left in old oak for 8months. Mousy nose unmasks a pallet of tart cherry fruit and pretty Yarra Valley-ness. Adventurous and successful.
STARBOROUGH ‘12 Pinot Noir MARLBOROUGH - NZ 11/38/55 A new release from this 4th generation family estate run by brothers Michael & Andrew Jones, who still tend to sheep on the property. Lighter than other NZ’ers, Marlborough’s strawberry & raspberry fruit is elegant with soft spice to finish.

LOPEZ de HARO ‘11 CRIANZA Tempranillo RIOJA - SPAIN 11/38/55 Crianza in Rioja must to be aged for a minimum of two years, one of which must be in oak, traditionally American. Bodega Classico’s example is restrained with sophistication and politeness…not your usual Spanish traits.
PEIQUE ‘13 Mencía BIERZO - SPAIN 10/36/50 Mencía is an oddity, unless you come from Bierzo where it’s the only red grape they grow. Soft and gentle and loaded with purple mulberry fruit and lifted violets. A great value drop and a default wine for us.
CABIROL ‘11 Tempranillo/Garnaxta MONTSANT - SPAIN 13/39/58 Vibrancy of fruit, density on the palate and length on the finish? Check, check check. There is plenty of juicy punch here with plush plums, peppery mid palate spice supported by a well-integrated grainy, earthy underbelly.
MARC BRÉDIF ‘12 Cabernet Franc CHINON - FRANCE 12/40/60 Touraine’s Chinon has historically been the benchmark for Cab Franc in the Loire Valley. Brimming with raspberry and green tobacco aromatics and framed by silky tannins. Try and compare with the Chinese wine below.
HANSEN ‘11 Cabernet Gernischt WUHAI VALLEY - CHINA 9/32/45 It’s The Year Of The Sheep & we’re celebrating with this rare find. You could almost be in France’s Loire Valley ; Cab Franc land. Tart red fruit, dusty middle with unlikely grip and impressive length. Hella interesting

CAVA (& other worldly bubbles)
D.O. Cava is unique in its classification in that it is more concerned about how it is produced rather than limiting itself to just one geographical zone. Penedès, just south of Barcelona, is the most important region for Cava production, however there are
also Cava DOs in other regions including Rioja, Navarra, Basque Country and Valencia. All Cava is produced using the ‘traditional method’ as it is called in Spain, with secondary fermentation in bottle.

THE ORANGE STUFF (extended skin contact)
So this is all the rage in Oz amongst the trendsetting cool cats, although has been a traditional form of winemaking in places such as Georgia and recently popularized by Italian winemakers in Friuli-Venezia Giulia
and also across the Northern Italian border in Slovenia. The pressed juice of white grapes is left in contact with their skins for an extended period of maceration. The resultant
wine offers a delicacy of flavours that is both textured, and, you guessed it, orange. Go’on give it a try.
