Our chapter president making a difference!

These sweet cream cheese stuffed strawberries are the most delightful finger food for

just about any party. They're also fun for Valentine's Day or girl's night in! Either way, this

spectacular table display will be the hit of the party.

Ingredients

18-24 large strawberries

1 (8 ounce) package of cream cheese (softened)

1 cup heavy whipping cream

1/3 cup sour cream

2/3 cup white granulated sugar

1/2 cup graham cracker crumbs

1 tsp vanilla extract

1 tbsp fresh lemon juice (optional)

Instructions

Prep the strawberries by cutting off the stems and slicing them in half. Next, cut a small sliver off of the

back of each strawberry half so that they sit up straight. Then use a small melon baller to carefully hol-

low out the middle (you don't need to take out much, just make a small enough indent so that the cream

cheese filling doesn't slide off).

Place the softened cream cheese, sour cream, sugar, vanilla extract and lemon juice in a medium sized

mixing bowl (DO NOT add the heavy whipping cream). Beat with an electric mixer until smooth.

In a different medium sized mixing bowl, beat the whipping cream until stiff peaks form (about 5 min-

utes).

Fold the whipped cream into the cream cheese mixture until well incorporated.

Fill a piping bag with the cream cheese mixture (I used a star tip), and pipe it onto each sliced straw-

berry.

Finish with a sprinkle of graham cracker crumbs.

Serve and enjoy!

Recipe Notes

The number of strawberries you need to match the amount of cream cheese mixture really depends on

the size of the strawberries. I bought a large container of medium sized strawberries from Costco, and

still ended up with a bit of leftover cream cheese mixture.

You CAN make the cream cheese mixture (including whipped cream) the day before. My leftovers were

the perfect consistency the next day. I may or may not have been eating it with a spoon.

The strawberries can also be cut and prepped the day before, just be sure to place them in an air tight

container with a paper towel so that they don't get soggy or end up with that weird refrigerator taste.

Name: Jennifer Wulff Birthday: March 18 City of Residence: Ramsey Occupation: Realtor Tell us a little about your family (children/grandchildren/significant other/pets etc.) I am a mother of 4, two boys and two girls, and grandmother of two little girls. Vivi is 4 and Lily is 5. I am divorced with a long-term boyfriend, Rich. We have two Bernedoodle puppies. They are in training to become therapy dogs. Favorite things to do/hobbies/interests? I quilt and garden. I love to cook and workout. I am in training for a body building show in May! I did my first show last year and loved it. I am in the “masters 50+” category! Last year I was the only one in that age range! It was scary and exciting and fun all at the same time! I can’t wait to do it again this year! Favorite Color: It changes, but probably blue and purple. Favorite Store: It depends on what I’m shopping for, but I spend most of my money at Target. Favorite Food: Chocolate Favorite Holiday: I’d say Christmas, but it can be stressful, so maybe Easter, because it’s the beginning of spring! Most memorable vacation and why it was so memorable: We went to the Dominican Republic two years ago and it was beautiful! I’d love to go back. What are you most looking forward to right now: Summertime and boating! Anything else you would like us to know: I’m happy to be part of this great group of ladies! Women of Today related questions: What made you decide to join Anoka Women of Today and how long have you been a member: I’ve seen AWT around town for years and have always wanted to join, so I finally contacted someone and here I am! I’ve been a member for about 3 months. What are your favorite Women of Today project(s) and activi-ties? I am pretty new, but so far I have enjoyed them all mostly because of the amazing group of women I get to work with. Are there any new activities or projects that would interest you for the upcoming year? I’m willing to try many things!

Welcome, Jennifer!

As promised Erin and Stephanie are hosting a Murder Mystery Dinner at Bonnie's house the evening of Sat. Feb 16th. Bonnie's house will be transformed into the Lady Lux Casino, Dona Mancini (the wealthy owner of Lady Lux) would like to personally invite each of you to what is sure to be a fun filled evening full of gam-bling, entertainment and murder. We have enough roles for everyone. However, if you would like to participate, but unsure about playing a role, there are some non character assignments to be filled, please contact Stephanie for more details. This is a social event for us, therefore, if you have a friend who would like to participate please let me know, so I can extend the invitation. This Murder Mystery dinner is 2 acts and will take about 90 minutes to com-plete. We will start at 6:30, dinner/drinks will be served, and there will be a murder to solve. Prizes will be given out for best actress, best costume, and to the person who identifies the killer. You have been invited to an evening of gambling and entertainment at the Lady Lux, a casino owned by the wealthy Dona Mancini. The guest list includes a number of gambling enthusiasts—from high rollers to nov-ices—as well as the performers, dealers, and other staff employed by Dona Mancini. Everyone is expecting an evening replete with games of chance, dinner, drinks, and maybe a show—they aren’t expecting a power outage, the murder of a member of the surveillance team, or a lockdown that prevents them from leaving the casino.

Anoka Winterfest Report

On Jan 26th, Brooke, Kate, Jennifer, and Erin helped to setup and run a craft for the kids attending. We made a donut snowman and it was hit! There was low attendance this year due to the snow and cold. Around 60 kids were able to enjoy our snowman donuts. No profit comes from this event. The city of Anoka pays for all supplies. We continue to receive great feedback with having our presence visable to the community. The city of Anoka coordinator made sure to thank us and has invited us to return at next years event. A special thank you goes out to those that helped to volunteer for this event. THANK YOU!!

A suggestion to consider from Patsy Ajax

Random Act of Kindness Week, February 17, 2019 Celebrated on February 17th, National Random Acts of Kind-ness Day has grown in popularity each year. It is celebrated by indi-viduals, groups and organizations, nationwide, to encourage acts of kindness. It is a favorite day to many, as people everywhere are en-joying doing these acts of kindness. Pass It On! Share with Nancy D. for the next newsletter a Random Act of Kindness that you have witnessed or done yourself.

How to Prepare for a Board Position in the New Year

Plan on attending LOTS on May 4th in Monticello. This important day of training will start you off on the right foot your

new year.

Read your chapter Bylaws and Policies. They should spell out the requirements for the various positions.

There are manuals issued by our organization for most positions. Make sure you have the current one and read it of-

ten. If you can’t find one for your position, they are available at the State Store for a nominal charge.

Don’t be afraid to try something new.

Be sure to attend the outgoing/incoming board meeting/training session.

Set goals for the year that are measurable and realistic. Goals should challenge but not defeat you. Examples of

measurable goals are: Sign 2 new members each trimester. Orientate all new members within 60 days of joining.

Raise $500 for the Priority Project area (or your local Relay for Life, True Friends, a local Youth of Today project, etc).

Have 75% of the chapter certify in Living and Learning.

Attend any training offered by your district.

Make your position fun!! Choose a theme, offer inexpensive incentives, and plan a unique way to present your officer

reports.
