SACREDHILL.COM NEW ZEALAND VINTAGE SUMMARY The Hawke’s Bay 2020 growing season was a little warmer than average and quite a bit drier, with some fantastic sunshine late in the summer. Disease pressure was non-existent, and the fruit was in perfect condition across all varietals. This allowed us to pick the grapes when they were showing good natural acidity relative to their sugar and flavour ripeness. Perfect for all our wine styles. WINEMAKER’S NOTE This vibrant and plush wine offers an abundance of dark fruits - blackberry confit, Black Doris plum and cassis. These fruit driven aromas are supported by black liquorice, wild fennel, and dark cocoa. The palate is juicy and rich offering berry fruits flowing seamlessly to firm round tannins. VINIFICATION Merlot, Cabernet Sauvignon and Cabernet Franc were all picked in optimal conditions from our Deerstalkers vineyard in the Gimblett Gravels. The different varietals were fermented separately in a mixture of open top fermenters and stainless-steel tanks before blending. The resulting wine was aged briefly with French oak and was lightly filtered prior to bottling.
