Breaking for flowers. . . that’s what a carload of us didrecently when traveling across thenew Rocky Broad River bridgelinking two North Carolina towns:Lake Lure and Chimney Rock.

“Oh, I’ve read about this bridge!We’ve gotta stop,” said one of thefriends nestled in the car. And I’mso glad we did.

The Lake Lure Flowering Bridgeis a sight to see – and a pedestrianstop that delights all the senses.

A winding path leads the wayonce you walk under a welcomingarchway announcing it as a“Gateway to SomewhereBeautiful.”

It snakes around established bedsof seasonal flowers, all of which areidentified – in case you want to takeideas home with you. Foundobjects also have found a happyhome in this extensive garden ofperennials and annuals.

John Everett took the photoabove during our leisurely stop. Iwas impressed with what 80-plusvolunteers did to turn this old aban-doned bride into a community gar-den. It was dedicated as the LakeLure Flowering Bridge(www.lakelurefloweringbridge.org)in 2011.

Since it’s a time when we thinkmore about giving, it seemed natu-ral to share this project with you allnow. Who knows what it mightinspire.

When my clients, jewelry designer Holly D’LaneMiller and her husband, Hugh Heslep, called me,they finally had their first home,

with Joetta. We had a fabulous museum-grade amethyst geode andalmost no furniture, so we knew that with her insights, we couldbuild our new space in a cohesive way over time,” says Holly.

After meeting with the couple, Holly said they felt very encour-aged.

“Honestly, to start, we really only had a desert rock that offeredan inspiring color palette of yellow, tan, and terra cottas that Hughand I both liked. You took that rock and brought its colors schemeto life in terms of paint and furnishings that retained a contempo-rary feel. It was design alchemy!”

When I returned, the couple had bought furniture, painted thewalls and had hung artwork. Meeting with Holly, post-children, weupdated the living room with low, stained custom bookcases.

TIP: Painting existing walls and building a low bookcase looksgreat, and adds functionality, too.

Holly admits that they were surprised by some of my sugges-tions – “but in a good way” — and would never have thought ofthem on their own. One of my suggestions was to stain the newbookcase cabinets dark, like their furniture. I thought they neededto look like “wood.”

“We were hoping to maintain an adultspace with two small children. The bookcasesdisappear into the room, leaving a very ‘clean’look. I think my favorite thing is the overallcohesive aspect of the house — everything iswarm and contemporary, but not white, Plus,everything blends so well,” Holly says.

One thing she recalls me being very specif-ic about were the dimensions for the lowbookcase units behind their sofa, which werebuilt by Brad Alleman, a custom carpenter inAbbeville, Louisiana.

They now perfectly house toys and booksfor their two young girls and can even beflipped around to hide everything completelyfrom sight. Additionally, they are strongenough to be used as extra seating during par-ties. They ended up staining them withBenjamin Moore oil- based stain in OldMasters Wiping Stain-three parts dark wal-nut/one part Spanish Oak.

What has she learned? “I had seen an arti-cle showing Joetta’s skill with a ‘before andafter’ in another space. From the momentJoetta and I started to talk, I knew we spokethe same language, and she could bring herexpertise into what was for us a huge, daunt-ing project. We had a sofa, the geode, and aguest room bed. That’s it! Her advice tostart with an organized plan and to workmethodically in order to achieve it was excel-lent. Her ‘homework’ was critical to keepingsight of everything.” Holly explains.

“I think my favorite thing is the overall‘look’—everything is modern, up to date andeverything blends so well,” Holly says.

“Even though there are many different col-ors, they still go together wonderfully,” sheadds.

1.Find a small stepladder or other vertical place to hang thewreath as you work on it. It should be secure enough to keepthe wreath in place.

2. A lighted faux wreath 30 inches ($69.99) suits a standard-width front door.

3. Fluff your wreath before beginning as they are shipped flat.

4. Select three decorative sprays to fasten on first. Fresh flowerscan quickly lose their appeal, so artificial is recommended – oryou could go with dried blooms if it’s to hang in a protectedarea. Faux sprays – such as the one Bullion uses above – havemultiple stems fastened together, making decorating so mucheasier ($16.99 each spray).

5. Plan placement of flower sprays; work in threes to avoid“headlight” appearance on wreath.

How to Make Your Own Holiday WreathCornelius designer Gail Bullion says a step ladder like the one above best holds the wreath in place when decorating.

6. To fasten sprays on wreath, use 18-inch, #20 floral wire. Wrapwire with floral tape found at any craft store to make twisting easier.You don’t want your wire too long or it could scratch your door;loop it under the wreath if it seems too long on backside.

7. After flower sprays are fastened on – spacing them to please –create a three dimensional effect by fluffing them out so all thepieces don’t lay flat against the wreath.

8. Additional décor (optional) would be added next: Real pre-served magnolia leaves with wired veins and glitter ($10 stem); golddusted vine for a glamorous wild look as it curves around thewreath but goes where it wants to go ($24.99). For a temporary(one party) wreath, you can use fresh décor on your wreath.

9. Add a famous Cornelius bow using three different prints (2yards of each ribbon). When selecting colors of wired ribbon: Darkgreen is recessive; light red and gold pop out – you want people tosee wreath from the curb! Prices of ribbon vary per yard.

Celebrating 20 Years!

It is said, “necessity is the mother of invention.”The adage certainly describes the birth of Houston House &

Home.When magazine owners Mike Harrison and Tim Beeson

began renovations on a 1930s-era bungalow in the Montrosearea 20-plus years ago, they lamented that no one resourceexisted to help them.

With the help of family and friends, the two men created thefirst issue of HH&H. It hit the stands on November 1994.

Initially, it was called the Houston Renovator and focused ona DIY market. Most of the stories, sprinkled throughout thefirst issue’s 24-pages, relayed step-by-step approaches on sten-ciling, refinishing doors, and where to begin when remodeling.

Printed on newsprint, it was entirely in black and white. Beeson and Harrison hit on an idea – and a need – that hasgrown and endured for 20 years.

Sweet and Spicy Golden Beet Puree with Cilantro Oil2 tablespoons olive oil1 large yellow onion, cut in small cubes2 cloves garlic, chopped1 tablespoon Thai Red Curry Paste1 pound golden beets, peeled and diced2 medium carrots, peeled and diced1 quart water or chicken stock1/4 cup Thai Sweet Chili Sauce (mae ploy)

For the Soup: Sauté the onions in olive oil until softened withthe garlic, red curry paste and a pinch of salt. Add the diced beetsand carrots and sauté for 15 minutes. Add the water or stock andsimmer until the vegetables are tender.

Add the sweet chili sauce and blend the soup. Dot or drizzlecilantro oil (recipe below) atop the soup in a decorative pattern.

Cilantro Oil:one-half bunch cilantroone-half cup olive oildash of rice wine vinegarpinch of salt

For the Cilantro Oil: Blend the cilantro, olive oil, vinegar and salt until smooth.

Filet Mignon with Red Wine Reduction and Roquefort2 1/2 pounds filet of beef, trimmed and cut into 3/4-inch slicesSaltFreshly ground black pepper6 tablespoons butter4 tablespoons red wine1 1/2 cup veal demi-glace

(can be purchased pre-prepared at Central Market)3 ounces Roquefort Le Vieux Berger

In a heavy skillet, large enough to hold all the filets easily, onenext to the other, heat 2 tablespoons of butter until sizzling and arrange the meat in the pan. Sear the filets for barely 2 min-utes on each side. If you don’t have a pan large enough, workquickly in batches. Remove the filets and keep warm on a hotplate inverted over a larger plate so that the meat will not stew inits own juices.

For the sauce, pour off the cooking butter from the skillet andreserve for possible use with accompanying vegetables. Deglazethe pan with the wine and reduce it until completely evaporated.Add the demi-glace and bring to a boil over low heat. Simmervery gently until only 1 cup remains, then add the juices whichhave escaped from the cooked filet. Take the skillet off the heatand whisk in the Roquefort. Taste for seasoning and return thefilets to the pan. Carefully simmer them for about 20 secondswithout letting the sauce reach the boiling point.

Serve the filets, drizzled with the sauce.

Local Cauliflower and Goat Cheese Gratin1 large head of local cauliflower1 cup heavy cream1 cup local goat cheese1 local yard eggSalt and pepper to taste

Preheat oven to 375 degrees. Cut the cauliflower intosmall florets.

Mix the cheese, cream and egg together. Season the mix-ture with salt and pepper. Toss the cream mixture and cauli-flower together and place in a baking dish.

Bake until the mixture is bubbling and starting to brownon top.

During Christmas, Barron and Lisa Wallace's Riverside Terracehome is filled with the spicy aroma of family recipes – favoritesthat recall their bayou country roots.

Louisiana staples like dark duck gumbo, boudin, dirty rice,and jambalaya are prepared alongside traditional holiday dishes.

As a family, they try to keep it simple and personal.“For us, the holidays are about making space in our home

and our lives for family, food and fellowship,” Lisa Wallace says.The house on Roseneath is a meticulously restored, 3,700-

square-foot English Tudor, built in 1939, on a third of an acrelot in the historic Houston neighborhood.

Dressed in greenery and decorated with poinsettias, keep-sake ornaments, and a sweet-smelling live tree, it’s a perfectholiday haven, and a gathering place for the family’s large

extended clan. In addition to their own three children, the couple together

has 10 married brothers and sisters, and dozens of nieces andnephews. Lisa’s parents live in Houston, and Barron’s motheris in Beaumont. Their home is central to the annual festivities.

The house has ample entertaining space in rooms paneled inPecky Cypress, in addition to a 675-square foot swimmingpool added by the previous owner in 2001.

To spruce up the exterior, Wallace hangs wreaths festoonedwith bows of traditional red, green, and ivory on the exterior’s20 front windows, and the couple lines the yard in about 50strands of elegant white lights.

“Before we bought this house, we lived elsewhere in theneighborhood, so we often drove by it. Both of us were drawn

to the house, so when it came on themarket 10 years ago, we knew immediate-ly that we wanted it,” she says.

Constructed of attenuated artisan brickand featuring more than 100 windows,the three-story house has a sweeping,peaked roofline and is framed by sprawl-ing oaks and a lofty pine.

This will be the family’s tenthholiday season in the house, and it’s achallenge to slow down and make time forwhat matters, say the couple. She is a cer-tified public accountant, and he is a lawpartner.

On top of their own work, the rosterof activities involving their children can beoverwhelming. The oldest son is at theUniversity of Texas Austin; their daughteris a junior at Kinkaid, and their son is an8th grader at St. John’s.

A few family traditions, however, arerock solid.

In the week before Christmas, all thecousins gather at the Galleria for a photo-

“On Christmas Eve, as many familymembers as possible attend a religiousservice together, and then my husbandand I make a late dinner for both of ourfamilies,” she says.

They all gather for Christmas lunch atLisa’s mother’s home in Pleasantvillewhere everyone pitches in to help withthe cooking. Later, dinner is shared withBarron’s family.

“It wouldn’t be Christmas without myhusband’s special tenderloin,” Wallacesaid.

Her youngest son contributes maca-roni and cheese and there’s always home-made eggnog from a recipe contributedby her grandmother, Emma Meloncon ofAbbyville, Louisiana.

“The club wasfounded 75 years agoand each year, theyhost an annualChristmas tour ofhomes on the secondSunday inDecember,” Wallaceexplains.

A group of mem-bers assist the home-owner with shoppingfor appropriate deco-rations and to insurethat the décorenhances the archi-tectural traits of thehouse and reflects theowner’s lifestyle.

In the Wallacehome, natural fibersand traditionalthemes were high-lighted, and thehouse was decoratedin traditional Englishstyle with Scottishplaid bows on thetrees and Lenox chinaon the dining roomtable trimmed inplaid. Other decora-tions included ivytopiaries, magnolialeaves, berries andpinecones.

Lisa’s regular dec-orating method iswhat’s practical for abusy mother in theholiday season. “Istart with the basicsand each week I adda little bit more,” shesays.

As for gift giving,the extended family

gathering is a free-for-all but gifts are only given to the chil-dren.

Wallace buys gifts for her parents and in their own family,they draw secret names so each person gets one special gift.

Wallace loves displaying the vintage ornaments that weregiven to her by her mother and mother-in-law.

“We have keepsake decorations from our childhoodChristmas trees,” she says.

Wallace said her mother-in-law started a tradition of buyingeach grandchild a Christmas ornament every year until theywere 10 years old. Now, each child has his and her box ofornaments.

“When they have their own families, they will have theornaments they grew up with, purchased especially for them bytheir grandmother,” Wallace adds.

Other favorite ornaments are ones the children made overthe years; she puts out a few each year.

Much loved by the couple, the house has taken quite a bitof maintenance. “It was built without a central air-conditioningsystem and had to be retrofitted,” she says. As a result, some

rooms are always too cold or always hot.The plumbing has been completely replaced and one by

one, the windows are being redone. All improvements are donewith a desire to maintain the original style of the originalbuilder.

On the positive side, the views from all those windows showa landscape of trees, azaleas, and blooming plants.

Riverside Terrace has large lots, rolling green vistas, andgroves of enormous oaks and mossy ponds as well as wonderfulneighbors who are actively involved in their community,Wallace says.

Riverside Terrace is a historic Houston neighborhood justeast of the Medical Center and Hermann Park. It was established in the 1930s by wealthy Jewish families likethe Weingartens and the Sakowitzes who were not allowed tosettle in River Oaks.

Later it became a predominantly African-American neigh-borhood with a rich history in the civil rights movement. Since2000, the neighborhood has continued to be home to adiverse group of Houstonians.

The Wallaces carved out a formal dining space in their spacious living room. The community’s garden club members decorated the table, using nat-ural fibers, Lenox china, and English plaids.

Holiday RecipesBeef Tenderloin:This is incredibly easy to make but can be ruined if it is overcooked.Every year, Barron changes it up a little each time he makes it.

One prime (or choice, if the marbling is adequate) beef tenderloin(four to five pounds); have butcher trim excess fat and any silverconnective tissue.

Sufficient amounts of salt and whole red, black and green pepper-corns; add peppercorns to pepper mill and grind out as needed.Jalapeno, seeded and diced12 cloves of garlic, minced3-4 slices of bacon2 cups of red table wine

Let the tenderloin come to room temperature in roasting pan, pokea few holes in it at and pour wine over the meat. Let sit for about anhour while you are prepping other ingredients.

Mix garlic, jalapeno, salt and sufficient pepper and set aside.After an hour or so, discard wine and place meat in roasting pan.

Make three or four slits in the top and stuff with the garlic mix-ture; then salt and pepper the entire tenderloin and place in theoven on highest broil temperature for 10 minutes or until a browncrust has formed.

Remove from oven and place bacon in X pattern across the topof the tenderloin. Reduce heat to 250 and cook for approximatelyone hour to a medium rare finish.

Dark Duck GumboShe generally follows Paul Prudommes’s recipe for roux along withthe suggested seasoning with a few modifications: always watchthe ratio of flour to oil; actually use only as much oil as needed/pre-ferred.

It takes about 45 minutes to make the roux dark. It is past chocolateon the verge of being black; however, it can burn so very low heatand constant attention is required.

Once the roux is the proper color add three-quarter cup of onions,celery and bell pepper, minced, to the roux and sauté for 10 min-utes then set aside.

The key to this gumbo is the stock. In a large stockpot, liberally addone onion, carrot, bell pepper, garlic, shallot, ginger and sauté untilsoft. Add duck pieces – can also include goose, chicken, shrimpshells, lobster shells for a touch of seafood -- and fill stock pot withwater just past half way and bring to a boil. After it reaches a boil,simmer for about an hour. Cool and strain the stock throughcheesecloth, if available. Debone the duck and shred for inclusionlater. Bring the stock to a soft boil and add roux slowly until thegumbo thickens; add duck and Andouille sausage and simmer foran hour.

2 small packages of vanilla pudding or one large package (Not theinstant pudding.)1 quart of water1 quart of milk1 large can of evaporated milk3-4 eggs separatedSugar to taste2 tablespoons of flour1 tablespoon of vanilla extract

Combine the vanilla pudding and a little milk. Add egg yolks, flour,water, milk, evaporated milk and sugar. Cook on medium heat untilmixture starts to thicken. Cool, then add vanilla. Beat egg whitesuntil still. Fold into mixture and sprinkle with nutmeg.

Event Planner and holiday decorator extraordinaire ReginaGust went big and colorful when decorating Bill and NedaDorsett’s house in Friendswood for Christmas.

The Dorsetts’ recent move from a smaller-scale home into amuch larger one spotlighted some needed changes in theirdécor. For starters, they needed larger scale furnishings.

So, they first called Regina Gust’s twin sister, Janet Gust, tohelp them shop for new selections and – while she was at it –jazz up their look.

With the main room now filled with slipper and club chairsupholstered in happy blues and greens – in stripes and polka

dots – and with the piano room decked out in pink curtains, itdidn’t take Regina Gust long to map out a holiday decoratingplan.

If given carte blanche, Gust typically takes her clue from thehome’s color scheme.

“I didn’t want to go with the traditiona gold, or red andgreens (in the Dorsett home),” says Gust. Her twin’s choice offabrics and color inspired her to wrap the room in a comple-mentary palette for the holidays.

The end-result is bold, sophisticated and rather unexpected.And it is undeniably fun.

The show-stopping mantelswag hangs becomingly.

Draped from one side to theother, the Dorsetts’ holidaygarland is thickly filled withapple green and light turquoiseornaments; all of which is inter-twined with a rich satiny blueribbon.

Because the typical mantelgarland can weigh up to 40 or50 pounds, it is always assem-bled on site. Gust takes a fewhours to carefully install it,strategically placing each glassornament in its spot.

When she removes it afterthe holidays, it will take a littlelonger to undo it all. She willplace each ornament in tissueand store them all in a plasticbin. The artificial garland usedhere will be rolled up andstored for future use.

In an alcove area just off theliving room, where the grandpiano normally resides, stands aspectacular 12-foot Christmastree. It is the focal point, dic-tated by its height and colorfulallure.

Gust has dressed up the treein varying shades of pinks andgreens, primarily. A few blueaccents – in terms of balls andribbon – are tucked here andthere to provide continuitywith the room’s existing decor.

Tree skirts, she says, can getpricey. Really nice ones start at$200 and go up. For clientswho change out their décorand color palettes on occasion,she uses fabric boosted up bycotton balls arranged under-neath.

• Artificial trees and garlands pro-vide more strength and flexibilitywhen decorating. As for real trees,Gust prefers Noble and Fraser firs.

• Intertwine two different types ofartificial garlands to create a morecustom look. (Maybe one is ladenwith pinecones.)

Where are you from, and what isyour design background?.I’m from Merritt Island, Florida,and I’ve been in the interiordesign field for 34 years. Ireceived a Bachelor’s of FineArts with a major in InteriorDesign from the Ringling Schoolof Art in Florida.

Who influenced you, and whom didyou work with before going out onyour own?When I arrived in Houston, Iworked as the personal assistant toBeau Theriot who owns theBrownstone Gallery. While Idon’t do the same type of interi-ors he favors, I learned so muchfrom him.

I also had the great opportunityto work with the late JamesNorthcutt, the renowned LosAngeles interior designer whoworked with resorts worldwide.He called to talk to me about oneof his projects when I was alreadyhere in Houston. I flew to LA,where he hired me on the spot.

The client we worked on together was the Rosewood Corporation.We were given carte blanche . . .it was an amazing growth period forme. That was over 25 years ago.

As for interior designers today, I am influenced by the late MichaelTaylor, known for creating the “California look.” (ArchitecturalDigest name him as being one of the 20 Greatest Designers of alltime.) I also like a lot of what Belgium-based Interior Designer AxelVervoordt does. I like his minimal, lived-in looks.

What do you personally favor for the looks you design, and what doyou hope to achieve for your clients?I want an uncomplicated look; one that offers a mix of natural andtextured materials. I prefer neutral palettes, gravitating toward solidwhites, beiges or subtle repetitive patterns. The color in my projectscomes from the light hues on the walls, although I prefer white, andarea rugs. Our lives are often so hectic that it’s easy to be caught upin a visual overload.

My interiors are calm; places that people feel comfortable living in.I go for the best quality, which doesn’t necessarily translate intobeing the most expensive. I love a shabby old table and dressing it upwith an amazing fragment piece. It’s like pairing old blue jeans with aChanel jacket. It’s that kind of juxtaposition that I like.

The feeling I want my projects to evoke would be somethinglikened to walking on the beach or driving in the country. Free,uncomplicated, natural.

What fabrics and rugs do you like, since those are starting points foryou?Yes, each room begins with the floor. I like seagrass, which is a greatlook and the best option for those with kids and pets. Not jute; wihleit’s pretty, it;s not as durable. I also like old faded Oushaks. Themore worn and muted, the better.

You say you like found objects. What items call to you?In keeping with my less is more approach, I like things that are oneof a kind. It can be a stone or wood fragment, or some sort of reliefwork that you can’t find anymore.

I don’t care for collections that sit and collect dust. It’s too much. I like a mix of stone and wood, and I love painted distressed furni-

ture. My fabric preference is cottons and linens.

What are some of your favorite shops – other than the one you own,The Sitting Room on Alabama?Well, it’s hard to name just a couple. There’s so much great shoppinghere. But I do like these:

Getting PersonalWhat can you NOT live without?Being at the barn on weekends. As a kid, I was always at the barn.We had 10 acres on the river and so many animals. I loved horsesand still do.

What do you like to do when not working?What do you like to do when not working?I am passionate about Habitat for Horses(www.habitatforhorses.org). I’m currently on their board.

While out birding on Galveston island a while back with a friend, Icame up a neglected horse in a field. He was tied to a post. I endedup being directed to Habitat for Horses in Hitchcock, a volunteergroup and sanctuary who rescued him.

Surprisingly, even a roaring city the size of Houston harborsplenty of native animals we think of as wild. Their habitatsare scattered through patches of urban green space and

connected by corridors of wild growth alongside the bayous. Largeparks like Memorial Park provide a haven to flying squirrels, pileat-ed woodpeckers, migratory birds, reptiles, amphibians, and evencoyotes, and foxes.

Our native animals require continuous corridors of suitable habi-tat to survive in our urban environment. You can create these cor-ridors in your own backyard by providing them with the habitatbasics.
