Ingredients• 1.8kg pork shoulder• ¼ cup honey• 4 cloves garlic, crushed• 2 tsp grated root ginger• 8 slices canned pineapple, drained• 2 Tbsp brown sugar• 1 Tbsp each of canola oil & balsamic vinegar
Method1. Preheat the oven to 190°C. Line a roasting pan with foil
bringing it up over the sides.
2. Score the skin of the pork as you would for ham. Place the pork in the centre of the lined pan. Combine the honey, garlic and ginger and brush firmly over the pork.
3. Roast for 10 minutes then reduce the temperature to 170°C for 30 minutes per 500g or until the internal temperature is 71°C.
4. Meanwhile, place the pineapple in a nonstick frying pan. Drizzle with the combined brown sugar, oil and vinegar. Simmer over low heat for about 10 minutes. Turn the slices over and simmer until almost all the liquid has evaporated.
5. Cover and rest the pork for 15 minutes before carving. Serve with the pineapple.

IngredientsTopping• ½ cup each: rolled oats, brown sugar & flour• ½ tsp mixed spice• 50g chilled butter, gratedBase• 6–8 apples, peeled, sliced and stewed • Finely grated rind 1 lemon
Method1. To make the topping, combine the dry
ingredients in a bowl. Rub in the butter.
2. Combine the apple with the lemon rind and juice. Place in a 20cm x 15cm microwave baking dish.
3. Sprinkle with the topping and gently pat down. Microwave for 4 minutes, until hot.
4. Great served with yoghurt, custard or ice cream.

Leftovers to MakeoversIngredients• 1 tsp olive oil
• 8 streaky bacon rashers, fat trimmed
• 1 Tbsp maple syrup, plus extra to serve
• 4 fruitless hot cross buns, halved, toasted
Ingredients• 4 leftover brioche or
traditional hot cross buns
• 1 Tbsp olive oil
• Sea salt
• Selection of cheeses to serve
• Fresh fruit to serve

‘Crackers’
Method1. Preheat oil in a large frying pan over
medium heat. Add bacon and cook for 6-8 minutes or until crispy.
2. Add maple syrup and cook for a further minute or until bacon is coated and sticky.
3. Divide bacon among toasted hot cross buns and drizzle with a little extra maple syrup to serve.
Method1. Preheat oven to 170°C. Use a sharp knife to slice hot cross
buns as thin as possible.
2. Lay out on two baking trays and brush lightly with olive oil, sprinkle with a little salt and bake for 10 minutes or until golden and crunchy.
3. Serve with a selection of cheeses and fresh fruit, such as figs and grapes, in place of regular crackers.
