Bruno Clair (Official Importer)The grapes are partially de-stemmed before being put into open wood vats. Fermentation begins slowly using only naturally occurring indigenous yeasts.

The temparature is controlled to ensure it does not exceed 32°C to 34 °C. Punching down of the cap ensure takes place between 2 to 8 times per day

and fermentation takes from between 14 to 21 days depending on the vintage. The wines are then put into the oak barrels and transffered to the cellar.

Malolactic fermentation takes place in the spring when the cellars are heated gently by the warming of the weather.

The wines are aged in French oak and the percentage of new oak varies from 20% to 50% and for between 16-22 months depending on the vintage.

A property of Albert-Bichot, Domaine du Pavillon is 15 hectares, walled manor built in the 18 th -centuary. The domaine practices organic viticulture.

The red grapes are handpicked, fermented in temperature-controlled vats and mature in 20% to 30% new oak for a period of 14 to 16 months for Villages and Premiers Crus.

The Grand Crus are aged in 40% to 50% new oak for a period of 14 to 15 months. The white grapes are also handpicked, fermented in 60% new oak barrels and mature in 30%

20% new oak for Villages, 30% for Premiers Crus and 50% for Grand Crus. Charles Van Canneyt took over his grandfather’s Domaine in 2008, since then the style of Hudelot Noellat

remains unchanged with noticeable refinement and precision in the wines. Very few producers make both Richebourg and Romanee-Saint-Vivant with the exception of Domaine de la

Romanee-Conti and Domaine Leroy.

Jean Noel Gagnard (Official Importer)The white grapes are sorted and then lightly crushed and pressed carefully so as not to crush the seeds, to prevent undesirable aromas and an oily taste.

The must is stored in vat for 24 to 48 hours in order to settle. After settling, the juice is racked off the lees and put into 228-litre French oak barrels and the fermentation proceeds with

naturally occurring yeasts. After 2 to 4 weeks the alcoholic fermentation is finished and the malolactic fermentation takes over which transform the harsher malic acid into lactic acid,

helping to stabilize the wine and reduces its acidity. Less stirring and racking occur and prior to bottling the wines are fined.
