Vines planted on the slopes of Monts Damnés (which translates to ‘damned mountain’ due to the incredibly steep
gradient) collectively make up the most iconic, sought-after vineyards of Sancerre. The Kimmeridgian marl soil,
made up of fossilized sea shells and clay, and the maturity of the Sauvignon Blanc vines make this site unique. The
Bourgeois’10 generations of devotion to tending the vines of Chavignol is evident by the quality shown in their
expressive wines. The 2015 is chalky with a touch of gunflint minerality - the palate opens to a broad array of
flavours ranging from white flowers to ripe tropical fruit, blackcurrant leaf, vegetal notes and a wonderful clean,
lengthy finish.

The Clos Floridène vineyard, located in the Graves Region of Bordeaux, has been slowly developed since 1982 by
Denis and Florence Dubourdieu. The vines are grown on a thin layer of red clay sand above a bedrock of
limestone, which ensures a real depth of minerality. The wine is a blend of 55% Sauvignon Blanc, 44% Semillon
and 1% Muscadelle, all of which are picked by hand after several passes through the vineyard to ensure optimum
ripeness. Fermentation is carried out in French oak barrels, followed by 8 months of aging and regular stirring of
the lees. The 2011 is aromatic and complex with flavours of white peach, grapefruit and honeysuckle. The finish is
savoury with a hint of spice and baked fruits.

With winemaking roots dating back to the 1200’s, Piero Antinori is the most famous name in Italian wine and his
influence in the last 25 years has been nothing short of revolutionary. Castello Della Sala estate was purchased by
the Antinori family in 1940, and they have been making this particular wine from a blend of Chardonnay and the
indigenous Italian varietal Grechetto since 1985. The grapes undergo a brief period of skin contact before
crushing, and both the primary and malolactic fermentations occur in the barrel. The wine is bottled and aged for
several months at the estate before being released. The result is a rich, luscious, and full-bodied style, with intense
aromas of citrus, pear and vanilla. The palate has sweet notes of creamy peach, butter, and tropical fruit, with
well-balanced acidity and a soft, mineral finish.

While the fame of this wine grows exponentially, the quality in the glass incredibly continues to march forward.
Château d’Esclans is located on elevated ground close to the Mediterranean coast. The original Château - of
which now only the cellar structure and foundations remain - dates back to before the 12th century, making it the
oldest in the region. This beautifully pale, rose-petal coloured Rosé shows fine flinty/stony notes on the nose with
fresh redcurrants, herbs and ripe citrus. It is medium bodied with good length and refreshing acidity, making it
exceptional to drink both on its own and as a perfect companion to our seafood.

The La Crema winery is dedicated to the production of the Burgundian varietals Chardonnay and Pinot Noir.
Established in 1979, the winery is owned and run by two sisters, Laura and Jennifer Jackson, with the help of
winemaker Melissa Stackhouse. For this Willamette Valley Pinot Noir, the team chose a blend that they felt best
displayed the classic elegance, acidity, earthiness and vibrant fruit of the region, whilst emphasising balance and
supple texture. The grapes are all hand sorted and undergo cold soaking to enhance complex aromas before being
aged in French oak barrels. The result is a wine with rose petal and pipe tobacco notes, the palate offering smooth
cranberry, red cherry and pomegranate.

Wine from the Jura is considered to be one of France’s most ‘funky’ and unusual styles. This "Cuvee des
Geologues" (a nod to the geologists who were instrumental in helping Lucien Aviet identify the best sites for his
vines in the 1960s) is made from 100% Trousseau. Lucien and his son Vincent are traditional in their methods - the
grapes are entirely hand harvested and their bottles always sealed with wax. Cuvee des Géologues comes from half
a hectare of 40 year old vines, with spontaneous fermentation in old Alsace foudres, and 18 months of aging. The
result is an elegantly structured, peppery red with cherry, cranberry and a pure mineral finish.

specialising in Zinfandel. Son Andrew is in charge now, while mother and father Lee and Doug Nalle share

on elegance, moderate alcohol and a balanced fruit style. Their Zinfandels are a revelation, criss-crossing the line
between dry and juicy, and exploring complex, aromatic flavours of tar, leather, spice and rose petal.

Château Rieussec was classified 1er Grand Cru in 1855. This is one of the great wines from the estate that is
versatile enough to work with many desserts. The 2009 vintage is a blend of 84% Semillon, 12% Sauvignon Blanc
and 4% Muscadelle, which were picked over a four week period with many passes through the vineyards, to ensure
the optimum ripeness of each individual grape. It has a rich and decadent bouquet of ripe quince and honeysuckle,
leading into a multi-layered palette of botrytis-rich fruit, with marmalade, peach and beeswax balanced by a
wonderfully refreshing acidity.

The domaine was established in 1895 by Michel Cazes, the wines are now made by the fourth generation of wine
makers, headed up by Emmanuel Cazes. The vineyards have been farmed both organically and biodynamically
since 1997. Situated in a natural amphitheatre, between the Pyrenees and the Mediterranean creating the ideal
microclimate in the vineyard to produce sweet fortified wines. Fermentation of this wine is halted by adding a
neutral grape spirit, leaving a naturally sweet wine of 17.5% Abv. The wine underwent 11years of aging in oak
casks which causes the wine to gently oxidise. The result is deep amber in colour, hence the name Ambré, with
aromas of dried fruits and candied citrus peel. It is rich and unctuous on the palate with a lovely balance of
acidity, which prevents it from being cloying, dark and nutty with great intensity and a clean mineral finish.
