The gluten-free diet is becoming more and more prevalent. Many people are affected by celiac disease and gluten intolerance. Many more have friends and family that are affected. Awareness of these issues are at a all-time high, but most people don't understand the basics, and have many questions about the gluten free diet. Why would someone eat gluten free? Should I eat gluten-free? What is celiac disease, and how do I know if I have it? These are the types of questions that I cover in this presentation.

When ingested, gluten is seen as a foreign body by the immune system. causing the area to be attacked by white blood cells. This Causes damage to the small intestine.
