2011 Fall Arts Festival Wines Have Arrived

Chef Michael Burke from the newly redesigned Garage restaurant (formally Burke’s Chophouse) in downtown Jackson, Wyoming shares his BBQ sauce recipe. Smother some chicken, ribs, or brisket with this sauce and pair with our $20 red wine, the NxNW Cabernet Sauvignon.

100% Malbec. Manual harvested.35 years old vines. 4 day maceration on skins in temperature controlled steel vats;10 day-fermentation with selected yeasts at 27°C; 5 days post fermentative maceration; malolactic fermentation.10% aged in American oak for 3 months.

This Malbec has a deep purple color with violet tints, complex plum, fig, strawberry, spices and floral aromas; rounded and velvety tannins, excellent length with a distinguished character. Excellent when paired with game, roasted red meats, pasta or pizza.

Made from 100% Malbec Unoaked, this wine is typical of Cahors from the Plateau the “Causse” as they call it here. The climate here is much more severe and continental than in the valley of the Lot where most of the Cahors are grown. The grapes for this wine are grown on soils rich in limestone.

This explains the purity of the aromas and the fruit. Dark color with violet reflection. The nose exhibits fresh notes of violet and blackberries that are typical characteristics of wines made from

Malbec in the Cahors district. On the palate, the fruit is very obvious (again blackberries and dark cherries). The wine is very tensed and long. Despite the hot vintage, it is extremely fresh and lively.

A great wine to sip away with some cold meat or just a nice pasta dish with tomatoes.

This wine is from Argentina, Cuyo region, Mendoza sub-region. Aromas of cinnamon and blackberries lead to abundant flavors of plums, dark cherries and blackberry jam. Sweet tannins and a gratifying finish. Great balance and structure allows it to stand up to Mexican, Cajun, Indiana and

Italian fare. Also matches well with BBQ.

On Line Review“The Trivento Reserve Malbec begins with wonderful aromas of ripe, dark fruit and spice along with a hint of chocolate. The wine tastes rich and spicy with an abundance of good juicy fruit, primarily

black raspberry, blackberry, plum and blueberry. It might be a tad oaky when first popped but it give it a little air and the fruit really comes to the front. The excellent spice notes last all the way through the long finish. You might have a hard time making this one last until day 2, but if you have the willpower

it will hold up just fine. Buy a case or two and use it as your house red!”

$20 Red WineTasting Notes This wine showcases concentrated flavors of blackberry, cranberry and raspberry with hints of black pepper and spice on the nose. Dark fruits, plum, raspberry jam and spicy oak coat the palate finishing with vibrant acidity. This cool year helped retain its natural acidity, which aided in maintaining the freshness of this wine and will continue to develop in bottle over the next 2-3 years. It has been barreled for 18 months in American oak and has warm toasty aromas weaved throughout.

Technical notesThe 2010 vintage produced wines with concentrated aromas, rich fruit flavors, nicely balanced acidity and supple tannin structure. The most noteworthy of the 2010 vintage is one of extremes; between cool, early season temperatures and extreme late season heat. Above average rainfall in the winter months ended the streak of several average water years and ensured ample soil moisture for early season growth. Bud break initiated in late March and was somewhat delayed due to cool, rainy weather. Summer brought unseasonably cold daytime temperatures with the morning marine layer that didn’t clear up until 1 pm to 2 pm each day. The brief sunny days were followed by cool evenings, which gave the grapes great flavor and color development while preserving its natural acidity.

Recipes From the ValleyElk Meatballs With Homemade Pasta

Ingredients for Elk Meatballs • 1 pound of ground elk

• 1 Tablespoon of chopped onion• 2/3 cup heavy cream

• 1/8 tsp. of each: allspice, ginger and nutmeg1 tsp. salt

1/2 tsp. pepper1/2 tsp sugar

RecipeRoll the meat mixture into balls, brown them slightly in a frying pan with cooking oil

and bake them for 15 minutes at 400o

Ingredients for Tomato Sauce • 1 can of stewed tomatoes

• 1 onion chopped• Several cloves of garlic (depending on how much you like garlic, I LOVE it!)

• 1 can of puree• Pinch of sea salt and sugar

• Fresh (if available) basil, oregano, thyme and parsley. About 1/2 - 1 Tbs. of each

RecipeCombine all ingredients in a large pot on the stove top and bring to a boil over a

low temperature. Be sure to stir regularly and cover to avoid splatter.

Serve over your favorite type of pasta or noodle.

I like to use whole wheat spaghetti.

You can also mix vegetables such as

mushrooms, peppers, tomatoes or squash in with your sauce. I also like to include some

Parmesan cheese as well. Enjoy!
