2011 Fall Arts Festival Wines Have Arrived

Chef Michael Burke from the newly redesigned Garage restaurant (formally Burke’s Chophouse) in downtown Jackson, Wyoming shares his BBQ sauce recipe. Smother some chicken, ribs, or brisket with this sauce and pair with our $20 red wine, the NxNW Cabernet Sauvignon.

Thousands of art enthusiasts are drawn each year to experience the diverse artwork and breathtaking natural surroundings that make Jackson Hole a leading cultural center. $75 Red WineLocated in the eastern hills of Napa Valley, California, Ackerman Family Vineyards has three vintages of Cabernet to their credit. They farm organically, using cover crops and composting, creating complex and subtle food-friendly wines.

The Ackerman’s have learned a lot about grape growing since they bought the property in 1994. The first few years were spent just getting to know the vineyard and its various nuances. Over time, they began to fine-tune the vines through new trellising, pruning, installing irrigation and replanting. In 1998, they replanted all 11 acres to Cabernet Sauvignon on drought-resistant rootstock and changed the trellis system to expose the fruit in order to take better advantage of the long, warm days and cool nights on their hillside vineyard. Finally in 2003, the Ackerman’s produced their first commercial vintage-- a 2003 Cabernet Sauvignon designed to be a balanced, smooth wine that blends well with food -- not competing with it. It is created in the style of good French Bordeaux – complex yet subtle.

While this may be the youngster in the group, it’s also the biggest, richest and most immediately impressive wine in the bunch. Velvety-textured and full bodied with lots of super ripe blackberry, brown sugar, charcoal, earth, and incense. Finishes smooth with a touch of oak and spice.

Wine maker notesRich soil, warm Lodi sun and cool San Francisco Bay breezes, in combination with natural viticultural practices enable us to produce this fine wine. Our great, great

grandfather recognized the potential of this region when he homesteaded 160 acres on the western edge of Lodi, California in the 1860’s. Today, the 6th generation of wine grape growers carries on the tradition of nurturing the old vines as well as promoting

new varietals.

The calcareous soil and temperate micro-climate of Tuscany rewards the wine grape with unequaled fruitiness. Among the noble grape

varieties that thrive here are Sangiovese, Cabernet Sauvignon and Merlot. Centine is a bright ruby-red youthful wine, intensely fruity with

a lingering finish - a testament to its overall balance. It is an ideal companion to pasta, grilled or roasted red and white meats. Grape

Bright ruby. Scents of dark berries, cherry and allspice, with a subtle floral overtone. Juicy cherry and blackberry flavors show good clarity and decent concentration, with a spicy quality on the back end. Closes with gentle sweetness and good length, the floral note repeating. This fruit was grown in an Ecocert-certified, full-on hippie vineyard, by the way.

Wine maker notesClassic Côtes du Rhône, this wine is produced from organically grown grapes. Grenache and Syrah complement each other in this soft wine with aromas of red fruit and Garrigue. The finish is velvety. Organic is good!

• 2 large garlic cloves, crushed• 1 tablespoon fresh rosemary leaves

• 1 teaspoon fresh thyme leaves• Pinch cayenne pepper

• Coarse sea salt• 2 tablespoons extra-virgin olive oil• 6 lamb chops, about 3/4-inch thick

In a food processor fitted with a metal blade add the garlic, rosemary, thyme, cayenne, and salt. Pulse until combined. Pour in olive oil and

pulse into a paste. Rub the paste on both sides of the lamb chops and let them marinate for at least 1 hour in the refrigerator. Remove from refrigerator and allow the chops to come to room temperature; it will

take about 20 minutes.

Heat a grill pan over high heat until almost smoking, add the chops and sear for about 2 minutes. Flip the chops over and cook for another

3 minutes for medium-rare and 3 1/2 minutes for medium.
