2011 Fall Arts Festival Wines Have Arrived

Chef Michael Burke from the newly redesigned Garage restaurant (formally Burke’s Chophouse) in downtown Jackson, Wyoming shares his BBQ sauce recipe. Smother some chicken, ribs, or brisket with this sauce and pair with our $20 red wine, the NxNW Cabernet Sauvignon.

Produced from 100% Tempranillo grapes, which are hand harvested from the Montebuena vineyard. Brilliant deep ruby red color, fruity aromas. Montebuena Red has a spicy vanilla bouquet and is smooth and fruity in the mouth with some well-integrated secondary nuances, full-flavored and a persistent pleasant finish.

Ratings“(100% tempranillo, raised entirely in American oak): Vivid ruby. Ripe cherry and blackcurrant on the nose and in the mouth. Pliant and seamless in texture, with good heft and back-end energy. Finishes smooth and sweet, with fine-grained tannins providing shape and grip. Still on the young side but this wine drinks very well with an hour or so of decanting; it’s an excellent value for Rioja.”- Stephen Tanzer’s International Wine Cellar (September 2012), 90 pts

A blend of tempranillo, monastrell and cabernet sauvignon, aged in American oak. Fresh red berry and floral aromas are complemented by notes of vanilla, mocha and white pepper. Supple, spicy, open-knit

raspberry and cherry flavors show good clarity but are a tad thin in the mid-palate.

Ratings“While the wine is promising and reasonably tasty right away, it is a bit tart and reserved, benefiting from

an hour in a decanter (no sediment). Then, in a lighter full body, the flavors deepen to the elderberry or choke cherry of Mourvèdre, the purplish Bing cherry of Cabernet and slight red fruit punch, maybe from the Tempranillo, still with plenty of black raspberry acid. While I’m excited by the nice representation of

Mourvèdre, I do find it a little tart and bitter. Overall, I’ll give it a qualified “thumbs up.” I think it would be good with meaty dishes that would bring out its fruit and balance its acid and bitterness.”

This is Terra Grande Crianza, Almansa, Spain, 2008, finished at 14% alcohol. It is a blend of 50% monastrell (mourvedre), 30% tempranillo and 20% cabernet sauvignon. In the glass it is a deep

ruddy red with some bricking at the edge.

On the nose: Poured cool with a brief decant and swirled vigorously, shows light, bright fruit, some purpleness.

From the aroma, seems like this will be tangy and perhaps simple.

On the palate: The primary elements on the palate are in fact surprisingly generous, deep and layered, with chewy

black oak and unsweetened caramel. Some tobacco as it moves to a modest and full finish.

In summary: Overall, rates three stars on the five-star Spirit of Wine scale, with a plus for depth. Good value.

$20 Red WineCeleste was the first Torres wine produced in Ribera del Duero and not in their

native Catalonia. Made from Tempranillo grapes this is a spicy, intense wine tasting of ripe blackberry and cherry fruit. Complexity and a full-bodied it has a very long

finish.The nose has an opulent floral fragrance with ripe red fruits and a hint of cassis. Rose petals, cherry, sweet blueberry, and boysenberry. In the mouth it is ripe and

juicy with flavors of blueberry and boysenberry. The texture is creamy smooth. Tannins are mild as is the acidity; this is borderline “fat”. The finish is a bit hot, but

that’s what you get with such a ripe flavor profile. Due to the fatness and heat this is a little difficult to match with food. But, I like it as a “cocktail” wine or “fireside” wine;

something to drink on its own.

Ratings“A sensational Tempranillo from the Ribero del Duero region of Spain. Everything

Torres creates seems to be pure magic! Well balanced tannins & fruits; gentle spice & dark berry flavours (blueberry, blackberry) characterize this wine.”

• 1 lb. small red potatoes, cut in half• 16 oz. pkg. baby cut carrots

• 1 onion, chopped• 2 cloves garlic, minced

• 3 lb. pork loin roast• 1/4 cup Dijon mustard

• 1 tsp. dried tarragon leaves or 1 Tbs. fresh chopped tarragon• 1 tsp. dried thyme leaves or 1 Tbs. fresh thyme leaves

• 1/2 tsp. salt• 1/4 tsp. pepper

• 1 1/2 cups beef broth

Cut onion and mix with the beef broth. Place in the bottom of the crockpot. Add the pork loin roast to the center of the crockpot. Surround with the cut potatoes and carrots. Combine the garlic, mustard and spices. I used 1/2 a cup of yellow mustard in this mixture and reserved a 1/2 cup of high quality garlic Dijon mustard. After pouring the mixture over the roast, I spread the

rest of the Garlic Dijon mustard on top of the exposed part of the roast. Cook for 6-9 hours on low heat. Mine took about 8 hours for the meat to hit 150

degrees F. Remove the roast, cover and allow to settle.

GravyStrain some of the remaining sauce into a sauce pan. Combine 2 Tbs. of cornstarch with a 1/4 cup of sauce until cornstarch is

dissolved and add to the sauce pan. Bring

to a boil and cook until it thickens to a gravy. You may need more

cornstarch depending on how much sauce

you strain.
