Ceramic Egg

Providing a unique alternative to traditional fermentation vessels, the 675lt ceramic egg is arguably the largest slip cast ceramic object ever made. It comes with 12mm thick walls that have the dual purpose of providing structural integrity and micro-porosity. The iconic egg shape also promotes passive convection within, allowing developing wine to “live and breathe”. The other huge advantage of these vessels is the ease of storage and cleaning, the eggs can be emptied and then just pressure washed and le empty. Treated well the egg also has an indenite life period. Each egg is tted with a 2 inch BSM bottom valve.

Artenova Terracotta Amphorae - Made in Italy

Artenova amphorae are all handcraed from Tuscan clay. One of the benets of the amphorae is, that unlike wooden barrels, terracotta has no avour of its own so imparts nothing to the wine. It does though, like oak, have the advantage of oering some form of micro-porosity enabling the wine to breath. These unique vessels also come with stainless steel lids so post fermentation, they can also be used as a secure storage vessel.

The liing cylinder is powered by compressed air. During the immersion movement, the moving blades of the paddle push down on the must and immerse part of the pomace in a horizontal position. During the upwards emerging movement, the paddles tilt to 45°, so that the lateral pressure from the pomace automatically rotates the paddle a little further, causing it to emerge in a dierent location (the paddle is "screwed" upwards through the pomace). This means that the pomace is always submerged in a dierent position. This process is based on traditional must fermentation - the old practice of breaking up/submerging/stirring the must manually with a paddle. The rotation corresponds to the displacement of the masher. The rotary movement allows the surfaces of the paddle to be kept small, without having an eect on the quality of the must treatment. Consequently, less force is required to submerge the paddle. The electro-pneumatic control unit can adapt interval and pause times to current requirements on an individual basis.

armbrUSter - rotovib

- The Armbruster Rotovib destemmer/crusher is very gentle on the grapes.- A specially shaped, slow-rotating pin-sha ensures optimum distribution of the grapes in the destemming cylinder, reduces suspended solids content, and increases output and performance. - Can achieve up to 50% whole berry recovery on certain varieties, is considerably gentler than other destemmers on the market.- This gentle action is a result of that the central “pin-sha” in the Rotovib oscillating in addition to rotating relative to the cage. This additional vibration allows a much slower pin-sha rotation speed relative to the cage.- Equipped with a silicone feed auger which means that the grapes are fed into the destemmer without hitting the sharp edge of a stainless steel ight.

SOCMA - Cube - Vibrating Destemmer

“The Cube” achieves the most gentle destemming of the harvest, taking the berries from the stems with the least damage to the composition of the grapes. The machine is made up out of exible destemming ngers which form a vertical passage for the bunches. These exible ngers with the help of the vibration, detach the berries from the stalks and both fall onto the vibrating table with the adjustable screen. The green matter is separated by the conveyor of the Viniclean, and the berries are recovered without the unwanted MOG.

The Cube can be congured in a multitude of ways to best suit your processing needs and each function can be controlled individually or as a whole. The exibility of this equipment give you complete control over the handling of your fruit. Advantages: - Extremely gentle on fruit - Greater simplicity which limits the risk of break downs. - A smaller size which allows better integration in the grape intake. - Easier to clean to reduce water use and labour

6 processes in one cubic metre: - Removal of berries from stems - Distribution over the vibrating table - Separation of the juice from small solids - Recovery of free run juice - Elimination of leaf and green matter - Recovery of clean berries

DELLA TOFFOLA - Grape sorting and washing lines

The new grape sorting lines are used to facilitate the manual grape sorting process required before the grapes are crushed or pressed: this has become increasingly necessary and important to companies seeking to achieve the best quality for their wines. These lines are particularly suitable for: - automatically spreading and levelling the grapes on a at surface to make it quicker and easier for operators on either side of the line to complete the manual sorting process; - manually separating the mass of grapes from leaves, branches, bunches containing grapes that are damaged or show signs of anthracnose, stalks, etc.

The sorting lines are modular, with a great variety of devices to choose from to suit dierent needs including;- grape washing and drying tunnels- vibrating dosing units- sorting benches with PVC conveyor belts- stainless steel vibrating sorting benches- elevator belts- grape destemmers - crushers- roller crushers- mohno or peristaltic pumps

Della Toffola - high solids Cross-flow Filter w/ ceramic membranes

Already widely adopted during traditional ltration due to their strength, durability, reliability, and sanitisation capacity, ceramic membranes are now being increasingly applied in lees separating lters as well. This CKFK Series high solids cross-ow lter is equipped with 6mm channels as opposed to traditional 2mm which allow the ow of higher solids material. This is supported by 2-brush strainers - one, a nylon vacuum head at the top of the membranes which sweeps away bers and the other, a traditional centrifugal brush on the inlet to also remove solids and aid ow rates.

As margins get tighter, the need to lter these types of products is increasing. The Della Toola lter models are the only ones capable of achieving a nal concentration of more than 90%. CFKF Series lters are designed and constructed to eciently process lees from grape must, cider and otation caps. In particular regard to winemaking, they permit the ltration of:- Grape lees aer fermentation- Grape lees aer clarication- Claried wines- Non-claried wines

The use of ceramic membranes overcomes practically every diculty that arises during lees ltration, while constantly ensuring unequalled product recovery.
