Simmered to perfection with carrots, thyme and onions and served over creamy mashed potatoes, this yummy beef stew will surely become a classic in your family meal repertoire year round. Use an Irish stout beer for the simmering liquid, or you can easily substitute beef broth. Make the meal extra festive with some Irish soda bread, or a green-themed dessert. Cheers!

What You Need1 lb beef stew meat4 medium carrots, sliced6 sprigs fresh thyme1 1/2 bottles Guinness (or good stout beer
1 package frozen pearl onions
1/2 cup water1/2 cup flour1/4 cup honeysalt and pepper
Directions• Trim and dry stew meat. Heat a bit of oil in a large pot, add meat and brown. Add sliced carrots. Add beer till

meat and carrots are covered. Simmer for about an hour.
• Add onions and thyme. Continue to simmer for 30 minutes more.
• Mix flour and water in a bowl until smooth, add to stew and cook until thickened. Add honey, salt and pepper. Taste and adjust seasonings. Serve over mashed potatoes.Serve over mashed potatoes.

Kool-Aid (any green flavor)2 cups water1 6-oz. can frozen orange juice1 pt. pineapple juice1 qt. pineapple sherbet2 liter bottle of ginger aleMix sugar, Kool-Aid and water in a saucepan.
