Driving home from church on the ides of September, my wife, Susan, and I were greeted by the sight ofan incredibly bright sundog to the left of a nearly setting sun. A friend of mine, Willard Clewell, hadonce remarked that he had seen a sundog that was so intense that it was hard to view. The brightness ofthis apparition, as in Clewell’s description, made me want to turn away, even through it would not havecaused any eye damage. Sundogs and halos will become more common as we head into the autumn and

winter months because they are not the result of sunlight being refracted through raindrops, like a rainbow, but rather lightbeing bent inside hexagonally (pencil) shaped ice crystals. Indeed the deeply saturated lapis sky of September 15 was filledwith high altitude, wispy cirrus clouds which were perfect for creating these effects. When sunlight enters a tiny ice crys-tal, there is a concentration of light refracted at an angle of 22 degrees, causing sundogs which are bright rainbow coloredspots in the sky, and halos which appear to surround the sun, to begin their visibility at this angle from Sol. Whether or nota dog or halo is seen depends solely upon the length and orientation of the ice crystals. Halos represent a random orienta-tion of long hexagonal crystals so that everywhere in the sky there are some crystals at the proper position to refract lightback to the eye. Sundogs are different. Here, the hexagonal crystals are like plates, still six-sided but not very thick. Thesecrystals fall through the air like leaves from a tree keeping an orientation which is essentially parallel to the ground. Becauseall or most of the ice crystals are positioned in the same manner, they refract light back to the eye in only one direction caus-ing bright spots called sundogs to become visible at 22 degrees on either side of a low sun. Conquering Cataracts By the age of 70, over half of all Americans will develop cataracts. In fact, the older

you are, the more likely it is that you will not escape cataracts. There are effective treatments for cataracts, including surgery. Not only can this type of surgery remove cloudy lenses, it can also improve vision for those who are near- or far-sighted.

A surprising benefi t of cataract surgery is a lessened risk of breaking a hip in a fall. A study of Medicare patients showed that patients who had cataract surgery had a signifi cant reduction in the number of hip fractures, with a 16 percent decrease in this type of injury. Vision loss is a major factor in seniors’ risk of falling, and a reduction in visual sharpness and depth perception can lead to a loss of balance, stability, and mobility.

Many people believe that they are “too old” to receive cataract surgery. But researchers have found that you can never be too old. In fact, they found the greatest benefi t in terms of reduced hip injury was in patients over 80 years of age.

Cataract correction is more than just improving vision. It should be considered part of a comprehensive approach to better health and overall well-being.

Vacationing for Your Health A vacation can do more than just get you away for some fun and relaxation. It can

actually extend your life. Researchers have found that men who do not take at leastone week-long vacation per year increased their risk of dying from heart disease by 30 percent. There was also an increased risk of stress-related high blood-pressure, obesity, and type 2 diabetes.

It is not just getting away that helps to keep you healthy. Studies have shown that people sleep about one extra hour per day while on vacation away from home. They also get three times more deep sleep. There are also benefi ts to being removed from the stresses of daily life. In fact, it is not just the time away that gives you a health benefi t. It is the planning too. Dutch researchers found that the best benefi ts to mood come in the eight weeks before a vacation.

It does take some effort to get the most out of your vacation. Try not to pack too much into each day and plan for some down time. You should also pay attention to your diet and avoid overindulging. Finally, stash your electronics. Plan to only check for messages, emails, or texts at certain designated times and leave these devices off otherwise. This way you can truly unplug and get the most out of your well-needed vacation time.

Forest Berry Cobbler FillingMakes 3 quarts 3 1/2 to 4 pounds blueberries, raspberries, blackberries or cherries 3 cups sugar 3 cups water or fruit juice 1 pouch Mrs. Wages Forest Berry Pie Filling MixPrepare and process home canning jars and lids accord ing to manu facturer’s instructions for sterilized jars.

Wash berries or cherries. Blanch pitted cherries in hot water (200°F) for 1 minute, drain and keep in covered pot. Do not blanch berries. (Do not use strawberries.)

Combine sugar and water/fruit juice with 1 pouch pie fi lling mix in a large, non-reactive pot. Do not use aluminum. Cook mixture over medium heat (180°F), stirring constantly, until thickened. Remove from heat. Fold prepared berries or cherries into sauce.To can berry fi lling: Ladle berries or cherries and sauce into sterilized jars, fi lling evenly. Leave 1/2-inch headspace. Remove air bubbles, wipe rim and cap each jar as it is fi lled.

Process in a boiling water bath canner, 30 minutes for pints or quarts. Test jars for airtight seals accord ing to manufacturer’s directions. If jars do not com pletely seal, refrigerate and consume within 2 weeks. Pie fi ll ing is ready to eat after 24 hours.

Pour pie fi lling into a greased 8-inch baking pan; set aside.

In large bowl, combine fl our, sugar, baking powder and salt. Using a large fork or pastry blender, cut butter into fl our mixture until mixture resembles coarse crumbs. Stir in milk slowly, until just combined.

Drop dough by tablespoonful over fruit fi lling. Bake for 30 to 35 minutes or until toothpick inserted into the top ping comes out clean. Serve warm with ice cream, if desired.

Rinse and clean fruit thoroughly — dirt can harbor bacteria. To take the skin off peaches, dip them in boiling water for 30 to 60 seconds. Remove them with a slotted spoon and immediately dip into cold water. Slip off the skins.

To keep apple slices from browning, put them into water contain ing ascorbic acid until you’re ready to use them.

If jars do not completely seal, refrigerate and consume within 2 weeks. Spray a 9 x 13-inch cake pan with non-stick spray and lightly coat with fl our.

Combine applesauce, cake mix, eggs and water in a large mixing bowl. Beat on medium speed for 2 minutes. Pour batter into prepared pan.

Bake for 40 to 45 minutes or until toothpick inserted in center comes out clean. Cool com pletely on a wire rack.

To make frosting: Combine all ingre dients and beat on medium speed until smooth and fl uffy. Spread frosting over cooled cake and cut into 24 pieces.
