Growing degree days are calculated by taking the average temperaturefor the day and subtracting the base temperature (50 degrees) from theaverage to assess how many growing days are attained.

The meteor season has been underway since the Perseids of mid-August. Now it’s time for the bigthree autumn spectacles to commence, starting first with October’s Orionid Meteor Shower, followedby the Leonids of November, and finally, the biggest shooting star event of the year, the DecemberGeminids. Orionid activity peaks on the morning of Sunday, October 21, with meteors radiating froman area above and to the east (left) of Orion’s super red giant star, Betelgeuse. Even the crescent moon

is cooperating by setting around 11 p.m. local time on the 20th. Orionid meteors begin “to fly” in earnest after midnightwhen the radiant is about 30 degrees above the eastern horizon. As the hours roll by, Orion and the area from which themeteors are diverging, get higher and higher in the sky. By 5 a.m. this point reaches its maximum altitude, about 65degrees, allowing observers to see shooting stars streaming from above and below the radiant. This is when events maxat about 25 meteors per hour from a rural locale. In addition to the Orionids, there are two other minor showers whichbear mentioning. They are the Northern and the Southern Taurids with meteors emanating from the constellation of thebull. Even combined, these streams produce little activity, but when a Taurid flares, often it is in the form of a slow mov-ing, long duration fireball which can be really spectacular. In comparison, the normal Orionid meteor is swift and muchfainter. Remember that for mid-latitude observers, October nights are not for the fainthearted. When contemplating yourapparel and the equipment you should be bringing, think winter. Although the shower might be “rocking and rolling,”you will be lying stationary looking towards the SE. Ground tarps, sleeping bags, headgear, gloves, and thick socks willhelp keep you comfy so that you can enjoy the show in style. www.astronomy.org

Back From the Grave CakeMakes about 12 servings 2-3/4 cups all-purpose fl our 2 teaspoons baking powder 1-1/2 teaspoons ground cinnamon 1/4 teaspoon salt 1 cup (2 sticks) butter, softened 1-1/4 cups granulated sugar 3 eggs 2 teaspoons vanilla extract 3/4 cups sweetened applesauce 1-1/4 cups diced Granny Smith apple (about 1 medium apple) 1 can (16 ounces) White Decorator Icing

Preheat oven to 325°F. Prepare 3D Skeleton Casket pan with vegetable pan spray.

In medium bowl, combine fl our, baking powder, cinnamon and salt; set aside. In large bowl, beat butter and sugar with electric mixer until light and fl uffy. Add eggs, one at a time, and vanilla; mix well. Alternately add fl our mixture and applesauce to butter mixture. Spread about 1/2 of cake batter so that it reaches the fi rst horizontal line inside the pan. Sprinkle diced apples evenly over batter. Top with remaining batter, smoothing out the top.

Bake 58 to 62 minutes, or until toothpick inserted in center of cake comes out clean. Cool 15 minutes; remove from pan and cool completely on cooling grid.

Decorate cooled cake with tip 5 and decorator icing.

In large microwave-safe bowl, microwave marshmallow crème 1 minute at 50% power. Remove bowl from microwave and divide marsh mallow crème in half; stir icing color into each half (tint slightly darker than how you want your fi nished treat to look).

Melt Candy Melts candy following package instructions. Mold pretzels following package instructions. Refrigerate until set, about 15 minutes. Remove from mold.

Roll-out cookie dough (recipe available at wilton.com)Buttercream Icing (recipe available at wilton.com)Leaf Green, Black and Brown Icing Colors

Prepare and roll out cookie dough following recipe instruc tions. Cut cookies using the Graveyard Cookie Cutter Set. Bake and cool.

Using icing colors, tint buttercream. Ice all cookies using a spatula. Pipe the outline of the tree with tip #22 brown buttercream icing. Tint coconut fl akes green using icing color; sprinkle over base cookie. Attach all cookies to base cookies with icing.

Preheat oven to 325°F. Spray 3D Sandwich Pan with vegetable pan spray.

In large bowl, beat shortening and peanut butter with electric mixer until light and fl uffy. Add brown sugar and granulated sugar; mix well. Add egg and vanilla, mixing until smooth. Add fl our; mix well. Press dough into pan cavities, fi lling 2/3 full.

Bake 10 to 12 minutes or until lightly browned. Remove from pan to cooling grid; cool completely.

Meanwhile, tint portions of icing green and orange. To assemble cookies, spread icing on half of the cookies; sandwich with second cookie. Pipe details with icing.

Stir 2 cups popped popcorn into each marshmallow mixture mixing until evenly coated. Press popcorn treat mixture in bottom cavities only of pumpkin pan to 1 1/2 in. deep; reserve some unmolded popcorn. Let set; unmold.

Attach 2 popcorn ball halves together on one edge, using unmolded popcorn to prop opposite edge open. Using melted candy, attach Candy Eyeballs and sprinkles and candy corn teeth, and Jumbo Confetti nose. Attach candy strings for hair.

Fright Night Costume Ideas and TipsScare Factor, Safety Play a Part in the Perfect Costume

With Halloween on the horizon once again, it’s that time of year to dream up scary costumes.

If you’re the type of person who likes to make costumes for your children (or for yourself), you may need a month or so to gather all of the supplies and put the costume together. Or, if you prefer to buy a pre-made costume, the early bird will have fi rst pick of the costumes and not end up with whatever is left over come October 30.

This year, based on hit movies and certain events, there may be a tendency to see some of the same costumes on trick-or-treaters parading through neighborhoods.

* With the passing of the “King of Pop,” there may be a number of Michael Jacksons walking around. Considering the song “Thriller” is already a popular Halloween staple, trick-or-treaters clad in Jackson’s signature red leather jacket of the 1980s and video zombie make-up may be making a comeback.

* Older trick-or-treaters, or children of parents with a witty sense of humor, may want to pay homage to another individual who passed before his time this year: top pitchman Billy Mays. All it takes is the requisite khaki pants, blue button-down shirt, and signature thick black hair and beard to pull off this look.

* Fans of the “Transformers” movies, may be creating their own Decepticon and Autobot costumes

and acting out this larger-than-life action adventure.

* With the latest installment of “Harry Potter” drawing audiences this past summer, there’s bound to be a few more witches and wizards strolling the sidewalks this year.

* Wannabe Wolverines are sure to don the signature sideburns and blades of this popular X-Men character after being reinvigorated by the “X-Men Origins: Wolverine” movie, starring Hugh Jackman.

* And let’s not forget the scores of “Trekkies” who, based on the new “Star Trek” movie released earlier this year, will be dressing up as Kirk or Spock.

There also will be plenty of costumed revelers dressed in unique or old standards when it comes to costumes. From goblins to vampires to cowboys, when creating costumes this year, keep in mind some safety precautions, courtesy of the Consumer Product Safety Commission (CPSC).

1. When purchasing a costume, masks, beards, and wigs, look for the label “Flame Resistant.” Although this label does not mean these items won’t catch fi re, it does indicate the items will resist burning and should extinguish quickly once removed from the ignition source.

2. Purchase or make costumes that are light and bright enough to be clearly visible to motorists.

3. For greater visibility during dusk and darkness, decorate or trim

costumes with refl ective tape that will glow in the beam of a car’s headlights. Bags or sacks should also be light colored or decorated with refl ective tape. Refl ective tape is usually available in hardware, bicycle, andsporting goods stores.

4. Costumes should be short enough to prevent children from tripping and falling.

5. Apply a natural mask of cosmetics rather than have a child wear a loose-fi tting mask that might restrict breathing or obscure vision. If a mask is used, however, make sure it fi ts securely and has eyeholes large enough to allow full vision.

6. Swords, knives, and similarcostume accessories should be of soft and fl exible material.

7. Children should wear well-fi tting, sturdy shoes.

8. Hats and scarfs should be tied securely to prevent them from slipping over children’s eyes.

9. As an added safety measure, children should carry fl ashlights or glow sticks. Young children should be accompanied by adults, and be restricted to daylight trick-or-treating, if possible.

Apart from costume safety, it’s important to warn children not to eat any treats before an adult has carefully examined them for evidenceof tampering. Although incidencesof candy tampering have declinedconsiderably, there’s always the risk.

A Where the optic nerve exits the eyeball is a gap in light-sensitive retinal cells, creating a “blind spot.” You can locate your own spot by marking two X’s side by side on a sheet of paper about three inches apart, then closing your right eye and

viewing the X on the right with your left eye. Start with the paper about a foot and a half from your face, then bring it slowly toward you. At some critical distance (which you may need to “hunt” for), the left X will fall entirely on your blind spot and disappear. What good is all this? Now you’re ready to play the decapitation game, say V.S. Ramachandran et al. in “Phantoms in the Brain”: From about 10 feet away, shut your right eye and stare at your boss’s head with your left eye, then slowly move your open eye horizontally toward the right until the head falls onto your blind spot and disappears. “When King Charles II heard about the blind spot, he took great delight in walking around his court decapitating his ladies in waiting or beheading criminals with his blind spot before they were actually guillotined. I must confess I sometimes sit in faculty meetings and enjoy decapitating our department chairman.”

Poached Norwegian Salmon with Stewed Vegetables and Cucumber SaladServes: 4 3/4 pound Norwegian Salmon fi llet, boneless, skin removed 4 1/2 cups water 1 tablespoon salt 1 lemonStewed Vegetables 1 1/4 cups water 4 potatoes, cut into cubes 3 carrots, cut into cubes 1 medium celeriac root, cut into cubes 2 onions, cut into cubes 1 medium size leek, cut into cubes 2 tablespoons fresh parsley or chives, chopped Salt and pepper, to taste 3/4 cup milk Cornstarch, to thicken sauceCucumber Salad 1 pound cucumber 1 tablespoon sugar 2 tablespoons white wine vinegar 2 tablespoons olive oilCut salmon into 4 even pieces and rinse well under cold water.

In large pot, bring water to boil, add salt and then salmon. Immediately remove from heat and let stand to poach for 4 to 6 minutes, depending on thickness of fi llet. Be careful not to overcook — the fl avors and texture of salmon is at its best when served opaque throughout. Remove from pot with slotted spoon and let water drain off on towel before arranging salmon on plate.

For vegetables, sprinkle water with salt and bring to boil in a large pot. When water is boiling, add potatoes, carrots, celeriac root and onions. Lower heat and simmer until soft.

Add leeks and fresh herbs and simmer for 2 more minutes. Drain vegetables carefully in colander and make sure you keep cooking water.

In same pot, bring milk and cooking water to boil; season with salt and pepper.

Dilute cornstarch in small amount of cold water and add to boiling liquid until you have thick sauce. Add vege tables to milk mixture to reheat before serving.

For cucumber salad, peel cucumber, split lengthwise and remove seeds with small spoon. Cut at an angle in thick slices and mix with sugar, vinegar and oil.

Serve salmon with stewed vegetables and cucumber salad on the side. Serving Suggestion: A few drops of lemon juice on the salmon is a must.

Smoked Norwegian Salmon and Pearl Barley SaladServes: 4 3/4 pound smoked Norwegian Salmon 1/2 cup pearl barley, soaked in cold water overnight 4 1/2 cups water, divided 1/2 cup olive oil 2 tablespoons wine vinegar 3 tablespoons fresh orange juice Salt and pepper, to taste 1 cup broccoli fl orets 1 carrot, cut into small cubes or strips 1/2 onion, chopped 1 red bell pepper, cut into small cubes or strips 1 cucumber, cut into large cubes 2 tablespoons chives, chopped 1 tablespoon parsley, choppedDice salmon into 1/2 x 1/2-inch cubes (or if already sliced, cut in strips) and set aside in refrigerator.

Drain water from barley. Simmer on low heat in 1 cup water with sprinkle of salt for approximately 30 minutes or until soft.

Drain barley and transfer to bowl. Immediately add oil, vinegar, orange juice, salt and pepper, mix well and set aside to cool.

Bring remaining 3 1/2 cups water to boil and add plenty of salt. When water boils vigorously, add broccoli and carrots and let cook for 30 seconds. Remove vegetables immediately with slotted spoon, plunge into ice water, and then take out of water to drain.

When barley is cold, gently mix all ingredients together and serve with whole-grain bread or sprinkling of bread croutons on top. Vegetables and herbs can be varied according to your own preferences.

Norwegian Salmon in Aluminum FoilServes: 4 4 sheets aluminum foil (12 x 18 inches, slightly larger than yellow legal pad) 2 tablespoons canola oil 2 medium carrots, cut into thin strips 1 small leek, cut into thin slices 1 onion, cut into thin slices 1 head iceberg lettuce, cut into 8 wedges 1 1/2 pounds Norwegian Salmon fi llet, boneless, skin removed, cut into 8 portions 1 tablespoon water for each package 4 tablespoons crème fraîche or sour cream Salt and pepper, to tastePreheat oven to 350°F.

Place aluminum foil on table with shortest side facing you. All food will be placed in middle of bottom half of foil. Top half of foil will eventually be folded over food. Brush center of bottom half with oil.

Mix all vegetables and spread 1/4 of them over oil. Arrange 2 portions of salmon with vegetables. Add water. Season with salt and pepper. Repeat with remaining three sheets of foil.

To seal pouches, fold top section of foil over. Fold and squeeze edges together to form well-sealed pouch. Place packages on large baking sheet and place in preheated oven. When packages enlarge, they’re ready to serve — usually after about 6 to 8 minutes.

To serve, carefully place each package on plate and open at table with pair of scissors or knife. Spoon crème fraîche or sour cream onto fi sh and sprinkle with lemon juice. Fresh herbs can be added before or after cooking. Eat straight from package.
