The term was first used by London brewers in the late 17th century to describe their products, such as mild ale, though the term had a rather different mean-ing than it does today. 18th-century brown ales were lightly hopped and brewed from 100% brown malt. Pale AlePale ale is a beer made by warm fermentation using predominantly pale malt. The higher proportion of pale malts results in a lighter color. The term “pale ale” first appeared around 1703 for beers made from malts dried with coke, which resulted in a lighter color than other beers popular at that time. Different brewing practices and hop levels have resulted in a range of taste and strength within the pale ale family. Indian Pale Ale (IPA)India Pale Ale or IPA is a hoppy beer style within the broader category of pale ale. It was first brewed in England in the 19th century. The first known use of the term “India pale ale” is an advertisement in the Sydney Gazette and New South Wales Advertiser in 1829. It was also referred to as “pale ale as prepared for India”, “India Ale”, “pale India ale” or “pale export India ale.” American Pale Ale (APA)American Pale Ales are generally around 5% ABV with significant quanti-ties of American hops, typically Cascade. Although American brewed beers tend to use a cleaner yeast, and American two row malt, it is par-ticularly the American hops that distinguish an APA from British or Euro-pean pale ales. The style is close to the American India Pale Ale (IPA), and boundaries blur, though IPAs are stronger and more assertively hopped. The style is also close to Amber Ale, though Amber Ales are darker and maltier due to use of crystal malts. Barley WineBarley wine (or barleywine) is a style of strong ale originating in England. There are two primary styles of barley wine: the American which tends to be more hoppy and thus more bitter with colors ranging from amber to light brown and the English style which tends to be less hoppy and thus less bitter with more variety in color ranging from red-gold to opaque black.

Lager:Lager is a type of beer that is fermented and conditioned at low tempera-tures. Pale lager is the most widely consumed and commercially available style of beer in the world. Bock, Pilsner and Marzan are all styles of lager. There are also dark lagers, such as Dunkel and Schwarzbier.

Pilsner:Pilsner (also pilsener, pilsen or simply pils) is a type of pale lager. It takes its name from the city of Plezn, Bohemia, Czech Republic, where it was first produced in 1842. The original Pilsner Urquell beer is still produced there today.

Porter:Porter is a dark style of beer originating in London in the 18th century, de-scended from brown beer, a well-hopped beer made from brown malt. The name is thought to come from its popularity with street and river porters. The history and development of porter and stout are intertwined. The name “stout” for a dark beer is believed to have come about because a strong porter may be called “Extra Porter” or “Double Porter” or “Stout Porter”.

Stouts:Stout is a dark beer made using roasted malt or roasted barley, hops, wa-ter and yeast. Stouts were traditionally the generic term for the strongest or stoutest porters, typically 7% or 8%, produced by a brewery. There are a number of variations including Baltic porter, dry stout and imperial stout. The first known use of the word stout for beer was in a document dated 1677 found in the Egerton Manuscript, the sense being that a stout beer was a strong beer not a dark beer.

Hefeweizen (Wheat Beer):“Hefe” means yeast, “Weizen” means wheat. Hefeweizen is a top fermented, unfiltered, bottle conditioned wheat beer with a noticeable yeast sediment and a cloudy appearance. Wheat beers are also referred to as Weissbiers (white beers) because before the invention of pale lagers and pale ales, most beers were dark. Wheat beers were the exception as the wheat content light-ened the colour of the beer. Hefeweizens are usually quite sweet and fruity, with a full body. The typical hefeweizen taste, which distinguishes it from its Belgian wheat beer cousins is produced by the types of yeast used in Bavaria. Cider:Cider is a fermented alcoholic beverage made from apple juice . Cider alco-hol content varies from 1.2% ABV to 8.5% or more in traditional English ciders. In some regions, cider may be called “apple wine.” The flavor of cider varies. Ci-ders can be classified from dry to sweet. Their appearance ranges from cloudy with sediment to completely clear, and their color ranges from light yellow to orange to brown. The variations in clarity and color are mostly due to filtering between pressing and fermentation.

IBU (International Bittering Units):Bitterness scales attempt to rate the perceived relative bitterness of beer. The bitterness of beer is provided by the hops used during brewing. The Interna-tional Bittering Units scale, or simply IBU scale, is measured through the use of a spectrophotometer and solvent extraction. The bittering effect of hops is less noticeable in beers with a high quantity of malt, so a higher bitterness scale rating is needed in heavier beers to balance the flavor and achieve the same perceived bitterness as compared to a lighter beer. For example, an Imperial Stout may have an IBU of 50, but will taste less bitter than an English Bitter with an IBU of 30, because the latter beer uses much less malt than the former. The technical limit for IBU’s is around 100; some have tried to surpass this number, but there is no real gauge after 100 IBUs when it comes to taste threshold. Light lagers without much bitterness will generally have 5 IBUs, while an India Pale Ale may have 100 IBUs or more.ABV (Alcohol By Volume):Alcohol by volume is a standard measure of how much alcohol (ethanol) is contained in an alcoholic beverage (expressed as a percentage of total volume). It is defined as the number of milliliters of pure ethanol present in 100 milliliters of solution at 20 °C. The number of milliliters of pure ethanol is the mass of the ethanol divided by its density at 20 °C, which is 0.78924 g/ml. The ABV standard is used worldwide.
