This beer gets its name from a new hop vari-ety named “Mosaic,” which is predominantly where the immense, raw hop aroma and flavor is derived. Mo-saic IPA has a notice-able malt backbone to help soften the high level of hop bitter-ness and flavor, while keeping the body fairly light.

This warm weather liba-tion is brewed it tradi-tionally using unmalted wheat as our base and lightly spice the kettle with freshly ground sweet and bitter or-ange peel and corian-der seed. The hops are minimal, keeping the focus on the wheat, spices and the unique character contributed by authentic Belgian yeast strains.

In honor of all things inspirational, we offer this Belgian Style Dark Strong Ale. The deep ruby hue comes from the use of several English and Bel-gian crystal malts as well as a touch of roasted malt. The rich malt char-acter is balanced by a high ABV, a blend of highly attenuative and expressive Belgian yeast strains, and just the right amount of hops.

After years ofbastardization and watering down, mostly by earlier American brewers, the style has been taken back to its former glory world wide. We’ve decided to take it further and reinvent American-style Pilsner. Unfiltered, dry hopped, mashed with rye malt and brewed with American hops of noble Germanic descent.

With summer fast ap-proaching, we wanted a beer in our lineup that we could drink all summer long. Neato Bandito to the rescue! Neato is Deep Ellum’s interpretation of a Mexi-can Style lager. Light in color, but big in flavor, Neato Bandito wants to help you enjoy all of your summertime activi-ties! Viva la RAZA!

These brews are usually only wine-like in alco-holic content, they are all beer. In fact they are biggest baddest brews in the Pale Ale family. Malt flavors, hop bitter-ness and aroma, yeasty esters, everything has been turned up to ’11’. Our Numb Comfort is the continuation of the American interpretation of the style originally of British origin.

A straightforward malt body supports the dis-tinctive bouquet of Co-lumbus and Falconers Flight hops that impart citrus, grapefruit and pine notes character-istic of the West Coast style. F5 is a belliger-ent hop reckoning.

This Belgian-style dark ale is the culmination of central and western European malts, Noble hops, candy sugar and a traditional Trappist yeast. Notes of dried fruit, cinnamon and va-nilla make DNR a very complex experience to be enjoyed in modera-tion.

This Double IPA is infused with a fierce American hop pro-file and a delicate, bee-crafted orange blossom honey from Northern California. A sting of dankness, floral notes and many a compelling nuance make this spring sea-sonal delicious. Buzz on, not off.

It’s fitting this experi-mental pale ale was the first beer brewed at our Portland Pub. This XPA gets its bit-ter twist from Nugget and Northern Brewer hops, then delivers a pronounced citrus kick from Cascade, Cen-tennial and Citra hops. Consider this your next hop obsession.

This mouthwateringly delicious IPA gets its flavor from a heavy helping of citra and mosaic hops. Don’t worry, no fruit was harmed in the making of this beer.

A Belgian-style abbey ale crafted like those that Trappist monks brew for their own session beer. It is light bodied, light in color and relatively lower in alcohol with spicy phenolics and complex fruity esters of cherries, nectarines, peaches and bubblegum with a characteristic slightly tart and dry finish from the Belgian yeast.

Our Leipzig-Style Gose undergoes a spontane-ous fermentation and exhibits a complexity of acidic, flavor and aro-ma contributed by wild yeasts and bacteria in the fermentation. Gose is pale gold in color, has a fuller mouthfeel from added oats, and its hop character and malt flavors & aromas are negligible.

The aroma and flavor of this classic hefewei-zen are decidedly fruity with clove, nutmeg-like and even vanilla-like phenolics. Banana-like esters are also present. This beer is made with over 50 percent malted wheat, and hop rates are quite low, with hop flavor and aroma being absent.

Opalisanunfilteredinterpretation of the classic saisons that originated from the 18th century farm-houses of southern Belgium’s Wallonia region. In true agrar-ian beer fashion, Opal is loaded with rustic grains and spicy Bel-gian yeastiness, with a hazy namesake opales-cence in the glass.

DBA is the trailblaz-ingflagshipbeerthatstarted it all in 1996. Partially fermented in our patented Firestone Union oak- barrel brew-ing system, DBA quickly took the Central Coast by storm and set the pace for future beers to come. Pale malts cre-ate a smooth middle with ribbons of cara-mel, English toffee and toasted oak.

A riff on the familiar Black IPA style, Wookey Jack is gnarly on the outsideyetrefinedonthe inside. Malted Rye and a dash of Cara Rye impart a spicy grain quality to the pal-ate, while double dry- hopping with Citra and Amarillo hops brings a citrusy dimension to thearomaprofile.

A witbier bursting with good karma. Made with dried organic orange slices, fresh-cut lemongrass and a bit of coriander, this Belgian-style white beer is a great thirst quencher.

What you have here is a serious India Pale Ale shacking up and hunkering down with mango and apricots. At the same time! Romantic Chemistry is brewed with an inter-mingling of mangos, apricots and ginger, and then dry-hopped with three varieties of hops to deliver a tropi-cal fruit aroma and a hop-forward finish.

An unfiltered, unfet-tered, unprecedented brown ale aged in handmade wooden brewing vessels. The caramel and vanilla complexity unique to this beer comes from the exotic Paraguayan Palo Santo wood from which these tanks were crafted. Palo Santo means “holy tree.”

Franconia’s early spring beer is a light golden German style Pils. Brewed with tradi-tional Cech Saaz Hops and a german Lager yeast, this a true Ger-man pilsner with a nice hop aroma and dry finish.

A German “Dunkel” (dark) brewed as a La-ger with Two Row Malt, Munich Malt and some Roasted Malts. Spiced up with German Hops from the Hallertau and a German Lager Yeast gives this Brew a nice dunkel (dark) color and some Malt sweet-ness with a nice finish of balanced Hops and a little chocolaty tast for the finish.

Belgium is the next stop on the World Tour. Brewed with a mix of pale and pils malt, a traditional yeast strain and a single hop va-riety, this beer is fruity and funky, with a touch of spice. The funky comes from the yeast while the fruit and spice comes from the hop known as Nuggetzilla, which gives the ale a pop of pineapple flavor.

Com-plex in finish, with hints of smoke and peat, paired with a malty richness and a right hook of hop power to give it the bad attitude that a beer named Dirty Bastard has to live up to. Ain’t for the wee lads.

“Sweep the Leg” Peanut Butter Stout is based on an American Stout with the unique addition of peanut but-ter. The peanut butter is added during the fermentation process for maximum flavor. The beer has a roasted peanut butter nose, smooth body, light hop profile and a notice-able but subtle peanut butter finish.

Based on President Thomas Jefferson’s “Plug Nickel” Pale Ale recipe, circa late 1700’s. A heavenly body founded on grits and blueberry honey. Plentiful amounts of Fuggles hops finish off this incredible adapta-tion.

A blend of Crystal malts create a unique roasted maltiness backed by a light hop profile

Originally brewed to celebrate our 10th Anniversary, Indepen-dence TEN is a barley-wine brewed and dry-hopped with Chinook and Columbus hops. We ran the wort through 50 pounds of whole leaf Chinook and Colum-bus using our giant hop back. And then gener-ously dry-hopped with Chinook and Columbus in the fermenter.

Expect a bold, full bodied ale that marries the rich plum, fig, and cara-mel maltiness of Trap-pist Quadruples to the nutty and dessert-like aromatics of Southern Pecan.

A Belgian-Style Golden Ale brewed with a “Southern” infusion of Honeysuckleflowers.Itpours pale gold under afluffywhiteheadwithfruity esters of orange, banana, and traces of sweet honey in the nose. Marriestheflavorsofor-anges, apples, a honey-sweet malt character, andadrypepperyfinish,with a soft, warm alcohol presence on the palate.

Our American Pale Ale is golden in color, mildly bitter, and character-ized by floral/citrus-like aromatics which are the result of an addi-tional dry hopping with a very large amount of Cascade Hops. Crisp, crystal clear, and completely enjoyable. Currently, the top selling beer within our Nebras-ka brewpub.

This medium to full-bodied beer, pale to golden in color, is most accurately described as a Bavarian wheat beer. The aroma and flavorofthisunfilteredbeer is decidedly fruity and spicy evoking tastes and aromas of cloves, nutmeg or sometimes vanilla with banana-like esters. Somewhat sweet-er in style with a barely noticeable tartness.

Our version of the clas-sic English-style Brown Ale has a blend of six different malts and a hop schedule that results in a low hop character. The unique malt character brings to mind the taste of a blend of various nuts. Coffee, toffee, cara-mel tend to come to mind in this excellent session Ale.

This titanic, immensely viscous stout is loaded with inimitable flavors of chocolate-covered caramel and coffee and hide a hefty 65 IBUs underneath the smooth blanket of malt. Ten FIDY (10.5% ABV) is made with enormous amounts of two-row malt, choco-late malt, roasted barley, flaked oats and hops.

Our “Velvet M-80” is a hefty, dry hopped double-red ipa with a nose full of aroma, a sticky mouthfeel, a malty middle and unctuous hop flavors. G’Knight sports a sur-prisingly sensuous finish for a beer of its size. It’s brewed in tribute to a fellow Colorado craft beer pioneer and Vietnam vet.

This drinkable IPA uses several varieties of hops to target the ev-er-evolving flavor. With tropical fruits, citrus juices, pineapple and spice berry up front in the aroma and flavor, the biscuit & toasted bread at the back bal-ance out all the hops and make a great finish to go on to your next can of PINNER. It’s the perfect beer for a little sip, sip, give.

Creamweaver is an im-perial cream ale with a subtle zesty spice nose from the orange peel with hints of willamette hops. The body will be easy to drink but flavorful from the big malt bill. It will finish dry and crisp. Don’t let the color fool you. This brew will knock you on yer butt with the high abv.

This Scottish style strong ale showcases amaz-ing malts with a won-derful deep ruby red color. A roasty nose reveals a chocolaty middle with a hint of sweetness. East Kent Goldings hops comple-ment specialty malts, caramel, chocolate, and roasted barley.

This Imperial IPA boasts a huge malt bill to bal-ance the bitterness of Ahtanum hops. A nice caramel middle blends citrusy hops, cracked coriander, and a mel-low citrusy zest creat-ing a beautifully bal-anced IPA. Careful, It’ll getch’ya!

Va-va-voom! The Temptress is seduc-tion in a glass. Curvy in all the right places, this Imperial Milk Stout pours with a thick, milk chocolate head. Chocolate and cara-mel malt give it a rich and complex body while the lower car-bonation gives the beer a silky mouth feel. Take your time with her and she’ll reward you.

All Call Kölsch is re-freshingly light, coura-geous, and serves as a summons for both new and veteran craft beer drinkers alike. It’s a beer that brings peo-ple together. A portion of the proceeds of All Call benefits the Guns & Hoses Foundation of North Texas, a non-profit organization pro-viding aid to families of fallen first responders.

Lakewood is more than a place. Tradi-tions hook up with fresh ideas. It’s the same with our Lakewood Lager. We’ve taken old world Vienna-Style lager and reintroduced it to beer lovers. Subtle caramel aromas, a coppery pour and a light malty sweetness paired with noble hop bitterness set this beer apart. In with the old, in with the new.

This ale was inspired by the most august of abbey brews and is a mystery worth explor-ing. A bounty of dried fruits, subtle roastiness, and a surprisingly dry finish combine for an ale of delicious dark complexity. All of this is complimented by the spiciness and fruit char-acter provided by our house Belgian yeast strain.

Inspired by the pil-sner beers of Northern Germany, Hans is crisp, brightly hoppy and full of flavor. At 50 IBUs and featuring Tettnang hops, it’s even hoppier than many pale ales. The German malt helps create a nice pale golden color and pro-vides the perfect com-panion to the hops.

This noble brew evolved from its common cous-ins, porter and stout, by necessity to endure the long voyage to the Russian royal court. Colossal additions of American hops are used to balance the robust malt character and infuse this ale with their distinctly citrus-like qualities. The Commis-sar can be consumed now or laid down for further enjoyment.

The noticeably amped-up nutty-chocolate and coffee aroma and flavorofthiscoldbrewcoffee-infused version of Rapture truly Mystical. Mystic rapture is sure to get you through your daily grind.

Hatter is crazy about time, and about finely crafted beer. The Rab-bit Hole Brewing 10/6 English IPA features a prominent English hop character supported by a smooth, bready malt backbone. This Rabbit Hole Ale is crafted with the finest floor-malted Maris Otter winter bar-ley and flavored with three different varieties of English hops.

A clean, crisp, yet deceptively complex brew which features a delicate balance be-tween soft malt and a subtle fruity hoppiness. 561 showcases Ger-man pilsner malt, noble hops, and a meticulous fermentation regimen. The 561 experience is smooth, crisp and won-derfully refreshing—a lighter beer, without the compromise.

Bishop’s Barrel 13Belgian Quadruple

Boiler Room is a light bodied but surprisingly flavorful sour wheat beer. The sourness is created by souring the wort prior to boil-ing and fermentation (unlike Belgian-style sours which sour dur-ing fermentation and have active bacteria in them when pack-aged).

A double IPA, the color is deep amber with a light, creamy head. The nose starts off with a touch of citrus but then turns decidedly into peaches. This beer is best enjoyed at 45° or even a little warmer. Though the recipe and style indicate this beer to be enjoyed fresh, we expect this beer to develop interestingly over the years.

Saint Arnold Brewing Co., the oldest craft brewery in Texas releas-es Saint Arnold Bishop’s Barrel No. 13, the latest offering from the brew-ery’s barrel aging pro-gram. Bigfoot is a beast of a beer, brimming with bold flavors of bitter-sweet malt and heaps of aggressive whole-cone Pacific Northwest hops. First introduced in the winter of 1983, Bigfoot is a cult-classic beer brewed in the barleywine style, meaning a strong, ro-bust, bruiser of a beer with the refined inten-sity of a wine.

DefinitionsAlcohol by volume: Amount of alcohol in beer in terms of percentage volume of alcohol per volume of beer.

Ale: Beers distinguished by use of top fermenting yeast strains, Saccharomyces cerevisiae. The top fermenting yeast perform at warmer temperatures than do yeast’s used to brew lager beer, and their byproducts are more evident in taste and aroma. Fruitiness and esters are often part of an ale’s character.

Barley: A cereal grain that is malted for use in the grist that becomes the mash in the brewing of beer.

Bitterness: Theperceptionofabitterflavor,inbeerfromiso-alpha-acidinsolution(derived from hops). It is measured in International Bitterness Units (IBU).

Body: Thicknessandmouth-fillingpropertyofabeerdescribedas“fullorthinbodied”.

Carbonation: Sparkle caused by carbon dioxide, either created during fermenta-tion or injected later.

Dry-hopping: The addition of dry hops to fermenting or aging beer to increase its hop character or aroma.

Hard Cider: A fermented beverage made from apples.

Hops: Herb added to boiling wort or fermenting beer to impart a bitter aroma and flavor.

Lager: Beers produced with bottom fermenting yeast strains, Saccharomyces uvarum (or carlsbergensis) at colder fermentation temperatures than ales. This cooler environment inhibits the natural production of esters and other byproducts, creating a crisper tasting product.

Malt (ing): The process by which barley is steeped in water, germinated, then kilned to convert insoluble starch to soluble substances and sugar. The foundation ingredient of beer.

Mead: Meads are produced by the fermentation of honey, water, yeast and optionalingredientssuchasfruit,herbs,and/orspices.Accordingtofinalgravity,they are categorized as: dry (0.996 to 1009); medium (1010 to 1019); or sweet (1020 or higher). Wine, champagne, sherry, mead, ale or lager yeasts may be used.

Mouthfeel: A sensation derived from the consistency or viscosity of a beer, de-scribed, for example as thin or full.

Yeast: A micro-organism of the fungus family. Genus Saccharomyces.

What’s an Ale?This category of beer uses yeast that ferments at the “top” of the fer-mentation vessel, and typically at higher temperatures than lager yeast (60°-75°F), which, as a result, makes for a quicker fermentation period (7-8 days, or even less). What’s a Lager?The word lager comes from the German word lagern which means, “to store”. A perfect description as lagers are brewed with bottom fermenting yeast that work slowly at around 34 degrees F, and are often further stored at cool temperature to mature. Lager yeast produce fewer by-product charactersthanaleyeastwhichallowsforotherflavorstopullthrough,such as hops.
