JULY EDITION 2015 Making Good Food Affordable Phase II In the December 2015 and January 2016 editions of The Scoop, we highlighted the reasons behind lower prices on over 150 items in the new Co+op Basics everyday low price program, as well as the new affordably-priced natural and organic line Cadia. This month we have equally exciting news for our budget savvy natural foods enthusiasts. Over the past 3 weeks, Basics has rolled out lower prices on hundreds of our regular priced items, too! I talked to Basics General Manager Lynnette Wirth and Grocery Buyer Seth Graham, to get the lowdown on these most recent price reductions. Where in the store are the decreases most notable? Lynnette: We have been changing prices in all categories, but the largest decrease was in the Baby section, followed by Grocery. Seth: Especially in the middle of the store, and the Grocery cooler and freezer. Are these price decreases related to the 2015 discount restructure? Lynnette: Yes. The Co-op works with very tight margins. Because of the restructure, we are now able to lower prices on the shelf- and offer an even deeper reduction on hundreds of items throughout the store, such as our house brands Field Day and Cadia. In doing this, shoppers do not have to try and figure out what the price will be after various discounts. We want to be transparent with our pricing while providing the highest quality items we can. Co-op Owners still save even more off the shelf price with Owner discounts, Owner Rewards and case purchases. FEBRUARY 2016 EDITION Meatballs 1 pound ground turkey 3 green onions, minced 2 tablespoons minced garlic 1 tablespoon minced ginger 1 egg, lightly beaten 1/2 cup panko breadcrumbs 2 tablespoons sriracha 1 teaspoon tamari 1/2 teaspoon ground white pepper 1 teaspoon sesame oil Glaze 1/3 cup apricot preserves 1 to 2 tablespoons sriracha 1 1/2 tablespoons rice vinegar 1 tablespoon tamari 1 tablespoon sesame oil Preparation 1. Preheat oven to 375°F. 2. In large bowl, combine meatball ingredients. Form mix- ture into small balls, using 1 to 1 1/2 tablespoons of meat per ball. Place onto a rimmed baking tray and into the oven. Bake for 10 minutes and turn. Bake for another 10 minutes until cooked through. 3. While meatballs bake, combine glaze ingredients in a small pot. Whisk and cook over medium heat for 5 minutes or until slightly thickened. To serve, toss or brush meatballs with warm glaze. This month we have equally exciting news for our budget

FEBRUARY 2016 EDITION

Meatballs 1 pound ground turkey

3 green onions, minced

2 tablespoons minced garlic

1 tablespoon minced ginger

1 egg, lightly beaten

1/2 cup panko breadcrumbs

2 tablespoons sriracha

1 teaspoon tamari

1/2 teaspoon ground white pepper

1 teaspoon sesame oil

Glaze 1/3 cup apricot preserves

1 to 2 tablespoons sriracha

1 1/2 tablespoons rice vinegar

1 tablespoon tamari

1 tablespoon sesame oil

Preparation 1. Preheat oven to 375°F.

2. In large bowl, combine meatball ingredients. Form mix-

ture into small balls, using 1 to 1 1/2 tablespoons of meat

per ball. Place onto a rimmed baking tray and into the oven.

Bake for 10 minutes and turn. Bake for another 10 minutes

until cooked through.

Reduced Prices, continued…

Seth: Yes- by restructuring our discounts for both

Owners and the general public we have been able to

lower prices in most areas of the store. That was part

of the goal of the restructure.

How were the new prices determined?

Lynnette: We used industry standards for variable

pricing recommended by our primary supplier, United

Natural Foods, as well as Natural Cooperative

Grocers. This allows us to be more competitive while

still maintaining enough of a margin to be sustainable.

Seth: We want our prices to be comparable with

other grocers in the area, while also bringing in enough

income to keep the store running successfully for our

Owners.

What is variable pricing?

Lynnette: Variable pricing is a strategy that allows for

a regular margin* on most items and a reduced margin

on items that will have a higher volume. In this case, it

*Margin = the difference between what the store pays for a product and its shelf price.

Price Reduction Examples

is used to further reduce prices on essential items and

house brands. We have taken an even lower margin

than suggested to save the customer money on items

that most households use on a daily basis.

Seth: Variable pricing means we don't have a set

margin across any department or the store. In

addition to the value-priced items, there are many

specialty items that are local, unique, highest quality,

or have other differentiating factors that allow for a

higher margin. This does not mean they are

excessively marked up - it just reflects the higher

market value. We do not want to lower the value of

those items, or give the consumer the perception that

they should be low priced. With variable pricing we

are able to offer a range that both makes sense and helps make staple items more affordable.
