Behind the city of Colorado Springs, at the back of the U.S. Air Force Academy stands a mountain called Eagle Peak, which is popular among local hikers, and Scouts in particular. From its summit you can peer into the depths of the Rocky Mountains on one side or overlook the vast expanse of the Great Plains on the other. Each summer the trail leading to the peak is trod by those who’ve walked its track before as well as those who make of it a new experience.

The inexperienced hiker is generally always told, if he cares to ask, that the hike will take all day to go up and back. He is told to start early and to set a strong, steady pace for the journey will be difficult and rigorous. The inexperienced hiker who follows this advice and plans a c c o r d i n g l y can be easily disappointed and even become angry or confused upon reaching the beginning of the trail, because he can see with his own eyes from the parking lot that the hike to the summit and back would take far less than half a day with little difficulty at even the most leisurely pace.

And so he changes his plans. He meanders up the trail wandering frequently from the path, taking numerous side-trips and detours. He stops to play and to snack on some of the supplies he had brought since he obviously won’t need so much for such a short trip. He goes well out of his way to avoid some of the more difficult parts of the trail. This he does until about half way through the day when he finally climbs to the summit only to discover that it was his eyes which had deceived him and not the words of those who had gone before. For he now stands on a false summit which had blocked his view of the higher summit far above.

Realizing his lack of foresight, this hiker now quickly reevaluates his time and decides that if he pushes himself hard enough he can still make it to the summit and back before it gets too dark. And so he sets off at a frantic pace; stumbling, crashing through the brush, receiving bruises, scrapes and scratches as the sun moves steadily toward the horizon. Until at last he reaches his mark

and looks up at still another summit. You see, Eagle Peak has two false summits,

both of which must be traveled over before reaching the real goal. Our

inexperienced hiker now sadly begins his trek back down the

mountain knowing he fell short of the goal he had

sought after. He will try again another day,

for there are many beautiful days in Colorado Springs.

Wiser for his experience, he will doubtless reach his

goal on the next occasion.

In our journey through life, however, we are not so fortunate. There are many false summits and if you strive toward only those goals which you can see, you will fall far short of the genuine goal.

What is fructose?Fructose is a sugar, which the body can use for energy. Because it does not cause blood sugar to rise significantly (has a low glycemic index), it was once thought that fructose was a good substitute for sucrose (table sugar). However, recent scientific studies show that it may actually be worse for you than regular sugar.

Is fructose bad for me?A small amount of fructose, such as the amount found in most vegetables and fruits, is not a bad thing. In fact, there is evidence that a little bit may help your body process glucose properly. However, consuming too much fructose at once seems to overwhelm the body’s capacity to process it. The diets of our ancestors contained only very small amounts of fructose. These days, estimates are that about 10% of the modern diet comes from fructose.

What happens if I consume too much fructose?Most of the carbohydrates we eat are made up of chains of glucose. When glucose enters the bloodstream, the body releases insulin to help regulate it. Fructose, on the other hand, is processed in the liver. To greatly simplify the situation: When too much fructose enters the liver, the liver can’t process it all fast enough for the body to use as sugar. Instead, it starts making fats from the fructose and sending them off into the bloodstream as triglycerides.

Why is this bad?This is potentially bad for at least three reasons:

•High blood triglycerides are a risk factor for heart disease.

•Fructose ends up circumventing the normal appetite signaling system, so appetite-regulating hormones aren’t

triggered--and you’re left feeling unsatisfied. This is probably at least part of the reason why excess fructose consumption is associated with weight gain.

•There is growing evidence that excess fructose consumption may facilitate insulin resistance, and eventually type 2 diabetes. This means that it will cause your body to have a hard time metabolizing other forms of carbohydrates.

What are the major sources of fructose?Fruits and vegetables have relatively small, “normal” amounts of fructose that most bodies can handle quite well. The problem comes with added sugars

in the modern diet, the volume of which has grown rapidly in recent decades. The blame has often been pinned on high fructose corn syrup (HFCS), which is made up of 55% fructose and 45% glucose. However, sucrose (table sugar) is half fructose and half glucose. So, HFCS actually doesn’t have a whole lot more fructose than “regular” sugar, gram for gram.

High fructose corn syrup has become incredibly inexpensive and abundant, partially due to corn subsidies in the United States. So really, the problem is more that it has become so cheap that it has crept its way into a great number of the foods we eat every day.

Which foods have high fructose corn syrup and other sugars?

Today, almost all packaged foods have sugar added in some form, which almost always includes a lot of fructose. Honey has about the same fructose/glucose ratio as high fructose corn syrup. Fruit juice concentrates, sometimes used as “healthy sweeteners,” usually have quite a lot of fructose (never mind that the processing of these concentrates strips away most of their nutritional value). Sweetened beverages like soda and fruit juices are one of the most concentrated sources of fructose. Just by exchanging sweet drinks for water, one could dramatically reduce sugar intake.

Ingredients:2 T. Fresh garlic; 4-5 large cloves, peeled

2 T. Extra virgin olive oil

1/4 Cup Butter; softened

1/4 Cup Margarine; softened

1/2 Cup shredded Parmesan (optional)

1/2 cup mozzarella cheese (optional)

2 Tbsp chopped fresh basil, or 2 tsp dried basil (you could use parsley if you prefer)

1 loaf Italian Bread*

A dash of Kosher salt

Preparation:Heat olive oil in a small saucepan. Crush the garlic into the warm (or slightly hot) oil. Add a dash of salt and basil, and allow to stand for at least 10 minutes while it cools off. .

Cream together butter and margarine. Gradually blend in the oil/garlic mixture until you have a creamy mixture. It should not be melted or runny. If it's too soft, allow it to firm back up to a spreadable consistency in the refrigerator.

Divide the loaf of bread (challah or Italian loaf) into four pieces and warm them in the oven. When they are fairly hot, split each one lengthwise and spread it with the garlic butter. Set them face-up on a cookie sheet and sprinkle with the parmesan and mozzarella cheese.

Turn the oven to broil and preheat. Place the bread under the broiler about 8-10 inches away from the heat. Watch closely, as the change from white to golden brown to burnt happens rather suddenly.

When it's golden brown and the cheese is melted, it's ready to be served, eaten and enjoyed!

*For all those balabustas who have extra challah in the freezer and are looking for ways to use it before Pesach, a medium challah can be used instead
