IntroductionsThe what, when and how behind our new look

A fter months of frenzied excitement and a heap of hard

work from our talented team, the new look Stanley Plaza has finally opened its doors!

The new look Stanley Plaza is home to over 50 shops and restaurants – a mixture of familiar faces and fantastic new retailers. An amphitheatre, kids playgound and The Piazza are also brand new to Stanley Plaza. To celebrate such a momentous few months, we’ve put together a

jam-packed schedule of exciting events for the Grand Opening starting on 19th November. Read up on the highlights of our festivals including Sounds by the Sea, World of Food and Music and Paws by the Sea on the following pages.

Also in this mini-mag you’ll find all the latest lifestyle news coming out of Island South’s latest and greatest development: Stanley Plaza.

We look forward to welcoming residents, local visitors, tourists and even your four-legged friends!

Our role was really to enhance what the centre already had going for it. The existing building was quite solid and heavy

– we felt that given its unique coastal location it should have a much lighter, more permeable feel.

We came up with a tropical theme. The result was lots of cantilevered canopies – which give dappled light and shade – almost like reflections of water. This effect changes throughout the day as the sun moves around.

We wanted to minimise disruption to the public so we came up with the concept of creating a ‘new skin’ rather than knocking the whole thing down. That way, elements could be manufactured off site and bought in and bolted on.

We’re really pleased with the result. One of the highlights for us is that we’ve really celebrated the waterside location, and there are now lots of opportunities to view the water as you shop.

I think the most enjoyable thing about being on site is that I have witnessed the satisfaction first hand from our customers.

I have also seen Stanley Plaza changing from the old design into the modern, stylish and relaxing place it is today. It has so much more energy; I imagine it will become a landmark in Island South! There has been so much positive feedback on the design from our retailers and shoppers. One of my favourite things here is the newly built viewing deck on the 4th floor. And the fact that we are dog friendly!

The Stanley Plaza project was so enjoyable, we were working with a very diverse team of professionals from Hong

Kong and overseas. We managed to turn an incredible yet underutilised asset into a vibrant destination and unlocked the potential of the unique location. There were challenges along the way of course, but by engaging with our retailers and keeping the community informed of our plans, we got through them. I am proud to have helped to create somewhere for a wide spectrum of people to enjoy, any time of the year and at any time of the day! My favourite part is probably The Piazza. My daughter can play safely, plus we can have great food (fast or not so fast!).

Food and music, what better way to celebrate? This

festival sees talent from all over the globe come to Stanley to entertain the masses. Some of the world-renowned chefs appearing at the event include Jacky Yu and Richard Blais, while musical talents include Chris Polanco and 9 Maps. We caught up with three stars of the show to find out more about what to expect over the weekend.

Yeshe - Global Musician‘The label I use these days to describe my musical genre is “African inspired Global Roots”. The 2 main

perform songs from my recently released CD Roots & Wings, my previous CD World CitiZen and new compositions, with me on lead vocals, mbira and kamele ngoni.’ www.yeshemusic.com

Akasha - Malaysian band ‘In this genre- centric world, we fall under the category of world fusion music. You are deemed world music because of the involvement of ethnic instruments and styles of playing and you are deemed fusion when you combine different styles of music. Its a mumbo jumbo myriad of musical delights which works fabulously!

instruments that I play are the mbira dzavadzimu (a traditional instrument from the Shona people of Zimbabwe) and the kamele ngoni (from the Bamara people of Burkina Faso). I was born in Germany, but left when I was 16 years old to tour with my first band. I now see myself as a World Citizen, as I have lived all over the world and am still moving around with my music all the time. I’ll be coming to Hong Kong as a duo with Cye Wood, who will accompany me on violin, 5 string octave violin as well as backing vocals. We will

Being a fusion band the inspirations are many. The key composer/ song writer in the band Jamie Wilson draws a strong bluesy liking into his compositions. The pianist Eric Li brings a strong Latin presence into the music. The Indian percussions bring together a whole different feel of ethnic influence.Visitors to the Stanley event should put on their dancing shoes! The band has highly trained Indian classical instrumentalists and a variety of music styles. You will see and hear brilliant music interplays between the sitar and guitars and thunderous drumming from the drummers. I’ve always loved cooking. I am local, very local – so I love local food, but I also appreciate international dishes. I love Stanley, it’s so free of stress and feels so peaceful.’

We told you Stanley Plaza was a stylish spot! So stylish that we got one of Hong Kong's top designers to design the uniforms. It's all in the details! Inspired by The Great Gatsby – the uniforms are a hip mix of elegance and functionality. Churros – these fried donuts are popular in Spain and are usually served with thick chocolate. Now you can try them in Stanley, head to Chugurt – one of the only places in HK serving this delicious crispy snack! Stanley plaza g08B at the piazza

Sourdough – this unique-tasting bread uses a fermented dough starter and is given a slow rising period that gives it its special ‘sour’ taste. Try this and other pastries and sweet treats at Saffron bakery. Stanley plaza g04 at the piazza

Pomelo cocktail – Classified is better known for its cheese platters and yummy lunch dishes, so it’s a nice surprise to find that they serve delicious cocktails to boot. ‘The Pomelo’ is made up of campari, pink grapefruit juice and soda. Sounds almost healthy! Stanley plaza g08a at the piazza

Chef Tak from Saigon shares a recipe he promises is

easy to recreate at home!Pomelo Salad with Shrimps

(Serves 4, takes 20 minutes)

1 full Thai pomelo 200 g. fresh shrimps, cleaned with shell 20 g. dried shrimps, soaked in hot water

2 tbsp. roasted peanuts 2 tbsp. roasted sesame seeds 15 g. fresh mint, thinly sliced

15 g. crispy shallots

Salad Dressing 4 tbsp. fish sauce 160 g. palm sugar

4 tbsp. fresh lime juice

Preparation

Take off the pomelo skin and keep the flesh of the fruit aside.

Boil water and add shrimps to poach. Reduce heat to low for 5 minutes. Take out the shrimps and place in cold water for 2 minutes. Take off the shell of the

shrimps set aside.

Mix fish sauce, fresh lime juice and palm sugar together in salad bowl.

Add the pomelo flesh, poached shrimps, dried shrimps, roasted nuts, crispy

shallots and thinly sliced mint in the bowl and toss.

Plate the salad and garnish with a sprig of fresh mint.

Mijas Spanish Restaurant Fans of tapas and all things Spanish will love Mijas. The location is incredible with tables looking right out to sea. Grab a seat around 6pm for the ultimate dinner at sunset. Murray House 102

Saigon at StanleyThink rattan fans, grand French doors, panoramic views and authentic Vietnamese food – and you’re in Saigon, the Stanley version. On the menu you’ll find spring rolls, soft shell crab, black cod filet with Vietnam-ese sticky rice among other national clas-

sics. Those with a sweet tooth should finish with a roasted pineapple pancake! Chef Tak is the man in the kitchen, his obsession for Vietnamese food shining through in the taste-packed menu. Murray House 101.

King Ludwig BeerhallOne for the beer fans – take your pick from the four draft options including King Ludwig’s Bavarian and a wheat beer, Masel’s Weiss – or go for one of the six bottled options. WildfireFreshly baked pizzas are hard to resist – especially at Wildfire where the wood stone ovens give them that authentic flavour. Delicious! Couple that with incredible sea views and an extensive menu including steaks, pastas and salads – and you’re onto a winner. The selection of cocktails is perfect for watching the sun go down. Chef Patrick of Chez Patrick shares a recipe:

recreate a French treat at home

Eggplant “caviar” (Caviar d’aubergine) and Mouillette (toast)

(Serves 4)

300g eggplant ( 2 pieces)40g anchovies

50g capers on vinegar 100g black olives

30g garlic 5 cl olive oil

tabasco (optional)2 slices of white bread

50g butter

Preparation Clean the eggplant

Bake them in the oven for 35-40 min-utes until they are soft.

Peel them and place in fridge.

Put the eggplant in a mixer, add the garlic, capers, pitted black olives,

anchovies in a food processor, mix very well and add the olive oil. Keep in the

fridge in small dishes

Mouillette: Cut the white bread in strips. Pan-fry them slowly in the butter until

they get a nice golden color

Arrange the mouillette around the eggplant caviar, serve with a nice mixed

green salad.

It’s not so hard to show a bit of savvy in the wine department. A tiny amount of research and you’ll soon be able to tell your Riesling from your Rioja. Here’s a quick head start with three of the most popular reds.

Cabernet Sauvignon: Considered the world’s best grape and the mainstay of Bordeaux, this grape produces deeply coloured wines. Say: ‘What striking aromas of cigar box and cedar.’

Shiraz: This grape’s natural habitat is Australia and wine produced here can be extremely rich. Say: ‘I sense this one is a Shiraz, the black pepper aroma gives it away.’

Pinot Noir: This grape produces some of the world’s best wines but is best known for the reds of Burgundy. Say: ‘Cherries, strawberries, violet, rose, it must be a pinot!’Do your own research (and get up to 20% discount) at Taste’s wine tasting event 2-7pm on 26th November. 1 MaritiMe MuseuM This homage to all things seaworthy is located in Murray

House, one of the oldest public buildings in Hong Kong. The museum explores how China, Asia and the West have contributed to developments in boats, ships, naval warfare and also accounts for Hong Kong’s growth as a major world port.

2 Beaches The humidity has dropped, so it’s the perfect weather for some beach time.

Stanley’s two beaches, Main and St Stephen’s – the former is popular for windsurfing while the latter is more secluded, accessed by steep steps. Take your pick! 3 stanley Market

7 hike to stanley Stretch those legs and hike to Stanley! The stunning trail from Park View and across The Twins is one sure fire way to ensure you deserve a hearty lunch! It takes about 2.5

hours and constitutes 4.8 kms and an impressive one thousand steps. The current cooler climbes make for perfect hiking weather, so no excuses!

8 Blake Pier - the ferry to Po toi Spend a lazy Sunday heading out to Hong Kong’s Southernmost island Po Toi, where the only restaurant, Ming
