This Week’s Feature Chef – Luke PalladinoChef Palladino has remained true to his acclaimed culinary sensibility by putting forth a menu that is innovative yet traditional; intriguing yet authentic at his name saked restaurant inside Harrah’s Resort in Atlantic City. The menu features artisanal dishes and recipes that incorporate the lessons he acquired while studying and traveling throughout Italy. As a special nod to his home state of New Jersey, Chef Palladino will source all of his seasonal offerings from local farms; in turn allowing for a menu of fresh ingredients and frequent surprises. Luke Palladino’s at Harrah’s Resort, offers antipasti; pastas, daily entrées including fresh meats and seafood. Palladino, also features a “spontaneous tasting menu” showcasing chef specialties and favorites for that evening. This provides guests the opportunity to choose and experience a mix of dishes that are Palladino classics or “of-the-moment” discoveries. There is also an extensive wine menu available to diners featuring premium choices from Italy, as well as, special selections from small California vineyards owned by friends of the Chef.

This 200-seat restaurant at Harrah’s Resort is comprised of a front-of-house dining area, a cozy yet spacious dining room, and bar seating overlooking the open kitchen in which Palladino and his team can be seen in action. The restaurant will feature a variety of seating options and styles including a casual lounge-like bar area as well as a private dining room which can seat two parties of 12 or one large party of 25. For the overall design concept, Chef Palladino commissioned Scott Eccard, Principal of Eccardesigns, to conceptualize the restaurant’s warm, classic design with sleek, modern accents. Palladino’s private photography collection is scattered about the dining room, allowing guests a more personal connection to the chef.

What makes Luke Palladino at Harrah’s Resort special?

The seasonal approach to our cooking, our all Italian wine list, and our awesome staff, who truly work tirelessly to serve and accommodate each individual guest’s request! What were your influences growing up that led you to pursue a culinary career?

I grew up in an Italian family and every day was centered around what we were going to eat for our next meal – I can remember my grandparents always being in the kitchen, and because I loved hanging out around them I subsequently was always in the kitchen. What is your signature dish at Luke Palladino at Harrah’s Resort?

Depends on my whim on any given day, but I would say that our Truffled Grissini Buttered Breadsticks Wrapped in Prosciutto are a sight to behold, a true pasta favorite among our regulars is the Braised Oxtail Ragu with Whole Wheat Pappardelle, and the eye-widening 16oz Veal Chop Milanese is as epic as entrees get. Luke Palladino at Harrah’s Resort has a unique atmosphere, why did you choose those specific patterns, colors and décor?

Scott Eccard did our design. We wanted it to be “Contemporary” yet very “warm”, with the design as a “canvas”, or “backdrop” to the food. The food is the show, the star if you will, so the clean white backgrounds of the décor allow the colors of each dish to truly come through. So many restaurant designs are “trendy” these days, but we really wanted something “timeless”... How does Luke Palladino like to unwind?

DJ VICEDJ VICE is coming to Borgata Hotel and Spa Monday April 15th - mur.mur Night Club.

Poised at his laptop, where he’s masterminding his newest mix, Vice flashes a smile and says, ‘I love what I do. There’s no part of me that wakes up and is like, “Dang. I have to go to work.” To still have that newness driving me is a good thing.

While he’s still a young man, Vice is also an industry veteran approaching his 20-year mark. The LA native discovered his passion for spinning records at the age of 12, when he bought his first turntables. Like most musically precocious kids, he came into that world by hearing and falling in love with what his older brother and older sister were playing. I’d borrow from my sister’s collec-tion of Air Supply, Blondie, Depeche Mode and Madonna records. My brother would have the Cure and Morrissey and I would buy hip-hop and house records. Vice likes to mix these types of artists along with newer music into his sets, which is unusual for the always-current world of club DJ-ing. “I’ve always been a multi-genre DJ,” he says. “I’ve always been a music lover. A lot of DJ’s stick to one format. I’ve never been that DJ. Ever since I’ve started I’ve always played all types of music. It stems from being a house party DJ, a wedding DJ, a high school dance DJ, a radio DJ. I’ve always done so many kinds of things as a DJ that it’s brought me to where I’m at right now. My set has something for anybody and everybody.”

Vice’s first big break came in 1998, when he started playing hip-hop records on LA’s Power 106 for a listenership of 1.6 million. It really tightened up my skills. It was always live, with vinyl, and there was no going back and fixing things.

In 2002, DJ Vice saw new opportunities emerging in Las Vegas at the huge clubs that were starting to open and left his radio job. He began with a residency at Body English in the Hard Rock Hotel and later moved to the mega-club Tao, where he still has a residency. The move to Vegas has been a huge game-changer for him, exposing him to

an international audience. Vice has now played all over the world, including Shanghai, London, Singapore, Hong Kong, Norway, Germany and Istanbul.

Vegas has also embraced Vice’s other venture: the wildly popular CRSVR, a boutique that sells top of the line sneakers. He opened the first store in Santa Barbara three years ago and just this year opened CRSVR at the Cosmopolitan on the Strip. It’s a Nike tier zero store, which means that it sells the very first top of the line Nikes the minute

they’re available. He also gave CRSVR his own twist by setting up a DJ booth in the store.

As one of The Society Page’s favorite DJ’s, we wanted to get a little more intimate and give our readers a little more info on one of the industry’s hottest DJ’s: What do you like most about performing in Atlantic City?

Borgata in AC has been home to me for years now. The vibe in AC definitely reflects the energy I receive at my residencies in Las Vegas. It’s always a good feeling coming to AC knowing the crowd is there first and foremost for the MUSIC!

Who is your favorite celebrity to work with?

Growing up in Los Angeles and having Las Vegas

residencies tend to keep me surrounded by celebri-ties. I can happily say at this point in my career I have yet to come across someone that needed to get thrown out of the DJ booth. I will say Busta Rhymes, Lil Jon, Jamie Foxx, Wilmer Valderrama and Diddy have become my “guest” MC’s anytime they are at one of my shows. Let’s just hope they don’t all show up at once! What do you think makes you different from other performers that DJ in Las Vegas and Atlantic City?

I would say the main difference between the way I DJ and others in Vegas is it’s about YOU! I am not a DJ that is there to be praised and have the whole crowd stand there and watch me do my thing. I want to see people interacting with each other and that’s what makes the night feel like a house party in a club.

My staple song that always gets the crowd moving is Nirvana - Smells Like Teen Spirit. Because If you are not moving someone will bounce into you when that song drops!

What is a day in the life of DJ Vice like?

A day in the life of DJ Vice could be exhausting for someone else to watch. I don’t stop living and breathing my passion. From music to traveling to sneaking in a run here and there, I wouldn’t change it for anything else.

With owning your own sneaker store, we would assume that you’re a connoisseur of sneaks. What does your sneaker collection consist of?

I co-own CRSVR Sneaker Boutique (Santa Bar-bara, CA & Las Vegas, NV). My passion for col-lecting kiks, mainly NIKE has lead me to owning over 150 pairs of kiks. My most prized pair would have to be the Nike Air Mag because all the money I spent on purchasing them was towards charity. I didn’t feel bad for what I spent....that time.

Kings Lounge, a New York Style restaurant in Egg Harbor Township, New Jersey. Newly created and presented at its grand opening by Lisa Johnson Communications, Lisa’s team created a vibrant mood and trendy example of modern dinning ambiance. Lisa Johnson was gracious enough to invite the greater Atlantic City Concierges’ Association.

The experience was enticing.

Located on the famous Atlantic City Airport Circle, in the same building as Christine’s Bar and Package Goods, Michael Beshay’s brain child has brought a modern Manhattan design with a cross mix of Asian,

Italian and Middle Eastern architecture to South Jersey. The decor is subtle and passively enticing to the senses. From floor to ceiling and all four walls are a tribute to imaginative creative design. The tree of life on the back wall of the restaurant has an artistically functioning design of bamboo vessels that at first glance you don’t realize, is an actual waterfall built on the wall. The giant collage behind the reception desk is really an allusion that’s actually a lion’s head (The King of the jungle, hence the name Kings Lounge). The catty-corner fireplace drew its own persona of curious guests. Michael himself and his creative mind manifested and personally made the retro style ceiling fans.

The DJ also named Mike set

the tone with a background sound that made it a dance club-like vibe and turns it into a late night music lounge.

The food is as imaginative as the décor. Chicken on a stick with drizzled sesame peanut butter sauce, STUFFED MUSHROOMS, mini gyros and ginger caramelized mini-spring rolls were all part of the Grand Opening Hospitality of Egyptian Heritage, Michael Beshay.
