Happy September, everyone! The kids are back in school, the cooler weather is supposed to be right around the corner, and it’s time for the Great Peppers’ Meeting in Virginia. Soon after you read this, the Board, GPs, voting delegates and specta-tors will be in Tyson’s Corner, Virginia, dealing with the business side of CASI for two days. If you have never attended a Great Peppers’ meeting, I urge you to take the time and go at least once. It will truly be an experience you won’t soon forget.

As we are ending the 2016-2017 chili year, we have had some ups and downs following the 50th anniversary. But like we always do, we shall overcome and suc-ceed.

In the coming year, there is something that I would like everyone to think about: Cookin’ for CASI cookoffs. Cookin’ for CASI is a great way to provide additional support to CASI and compete for those last few points. Holding a Cookin’ for CASI CCO does not count in your state cookoff totals.

The funds from Cookin’ for CASI are mainly used for TICC, so that when the Board sits down in Janu-ary and July to look at the budgets for the upcoming year, we are able to speculate a bit more accurately when it comes down to the amounts we need. Our goal is always to be as frugal and responsible as we can, but still provide the necessary items that CASI needs to operate.

I can tell you from experience, setting the budgets for TICC is a crap shoot. What we need and what we must have always depends a great deal on the weather. The economy plays a large part. Gas prices have a role to play. Employment rates figure in this as well. We never know from one year to the next just exactly what we are going to have to have. So, we rely on past events and what we budgeted and what we used, then speculate on what we think we will need this year.

The funds generated from Cookin’ for CASI events mainly benefit the operating budgets for the up-coming TICC every year. The more that is raised, the easier it gets to deciding what is a necessity at TICC and what we can trim back on or cut completely for that year. With rising costs in every aspect of what we do, we have to be creative in ways to bring in the funding to continue to provide the services that we all expect from year to year at TICC. Cookin’ for CASI cookoffs help provide some necessary funding.

So when your Pod is looking for a new cookoff in the upcoming year, please consider holding a Cookin’ for CASI event. Everyone truly benefits from these events.

Directors and they have given me a unani-mous blanket vote of confidence. I would like to hear your thoughts and see if we can do this.

Has CASI ever put on an international wide cookoff to promote CASI all on the SAME DAY? All 66 PODS putting on a cookoff to promote Chili, Charity, and Fun? I realize the logistics would be difficult, but if it were easy anybody would try it.

O b j e c t i v e : T o h a v e a l l pods put on a local chili cook off on the same day to promote CASI. Purpose: To generate funds for CASI to offset costs and to promote unity within the organization: Chili, Charity, and Fun! This idea in no way would affect local pod chili cook offs and each local CCO would not be a competition to see who could get the most cooks. This idea is to unite CASI.

Details: Each POD would host a lo-cal chili cook off and all proceeds go to CASI. This special cook off would not count toward each states number of cook offs so that it will not require any state to change their current 3/6/9/12 point status. Entry would be $25 per cook. It is the desire to have all pods host a local cook off, however, if there are pods that might be in jeopardy of not meeting the sanctioning requirements, then those pods could team up with other nearby pods or cooks could travel from their local area to help that pod with the sanctioning require-ments (provided that their local CCO would be sanctioned).

Proposed Slogans: Cookin’ for CASI.While the idea did not take off the way it was intended, Cookin’ for CASI has generated thousands of dollars for the CASI general fund. I am proud of this program and would like to re-mind everyone out there, a “Cookin’ for CASI” event does not count against state totals and the money goes directly to the CASI general fund.

Cookin’ for CASI – What a great concept!!! And we can thank Mr. Keith Longabaugh.

I know when this first started, some individu-als were not sure this was a good idea and/or did not think it would work. For those individu-als, I hope you realize it is a good idea and it does work. To me as the treasurer, these events help cover the cost of those items not covered by any other event. The main expenses that come to mind deal with the Scholarship Fund. Our Friday Scholarship Day is great with all of the proceeds going to the Scholarship Fund. However, the proceeds do not cover any of the expenses – judging supplies, beverages, cups, etc. The proceeds from Cookin’ for CASI can be used to cover some of these expenses. This is just one of many expenses that these events help cover.

If your pod has not yet sponsored a Cookin’ for CASI event, please consider having one. The cost of everything is going up and the pro-ceeds from these events really do help. If you have any questions regarding Cookin’ for CASI, I would be more than happy to answer. And if I do not know the answer (imagine that), I will find the answer or direct you to the appropriate person.

The NOB Pod held its third Cookin’ for CASI event on August 19, but since this article was due by August 15 you’ll have to wait until next month to see the results. Because of the lateness in the chili year, this cookoff has helped qualify several people for TICC.

It has been our pleasure to host a Cookin’ for CASI event. We know that our support to the CASI general fund helps CASI with the day-to-day operations of running an organization, and we are proud that our pod can help.

If you haven’t held a cookoff for CASI, you should consider doing so. It feels good to give to support Chili, Charity and Fun! See you on the trail.

A couple of years ago Keith Longabaugh proposed “Cookin’ for CASI” cookoffs to help supplement some of the costs of running an organization like ours. It is my belief that this has been a successful endeavor.

In talking with Dave a few nights ago, he reminded me that CASI has enabled charities to raise $1.4 million this year. Without CASI’s support they would lose this revenue. I have always heard the saying, “Charity begins at home.” Cookin’ for CASI fulfills this AND enables us to continue our support of hundreds of charities.

Cook in these cookoffs and even better – hold a Cookin’ for CASI event.

Having a Cookin’ for CASI Cookoff is a great way to provide more opportunities for cooks to gather points and help CASI directly. We work so hard to help others that it is easy for CASI the organization to be left out, but with a Cookin’ for CASI event, we can insure we maintain the organization and the facilities in Terlingua. Of course, an added bonus is not counting toward state totals. Cookin’ for CASI is a true win-win situation. The cooks win another chance to score points, and CASI wins the support it needs. Support Cookin’ for CASI.

Cookin’ for CASI is a concept that was born to help our organization. I have heard a lot of negative whisperings about it, mostly from people who haven’t taken the time to under-stand. It is a way for CASI to support itself and not depend on donations, sponsors, and gifts. It is no different from any organization trying to support itself.

I’ve heard people say, “But we are supposed to raise money for charity.” My eyes roll every time I hear that because the last time I checked, CASI IS a charity. How is CASI supposed to function if we don’t raise money for ourselves?

Please don’t be one of those people! If you really think this program is wrong, please find a director and learn about it. Don’t listen to someone who doesn’t understand; just because someone has been in this organization for many years doesn’t mean they understand Cookin’ for CASI, since it is still a “baby.”

Do what we, as CASI members, do best and that is support. Support each and every Cookin’ for CASI cookoff you can find. After all, I be-lieve we DESERVE it!

In 2014, our current Vice President, Keith Longabaugh, proposed an idea to the CASI Board to help CASI raise funds for our orga-nization by doing what we do best, holding cookoffs. Keith saw a need for the organization to help offset the oncoming costs of starting and running our new website, as well as a way to help continue to spread chili, charity, and fun. This idea has been fully supported by the CASI Board of Directors, even passing a rule stat-ing, “A Cookin’ for CASI event shall not count against a state’s cookoff count requirement, ef-fective with the 2014-2015 chili year.”

Why is this important? In our own lives, we see that each year we face rising costs across the board, and CASI is not immune from that. Each year, the Board combats rising insurance rates, increased costs to put on TICC, and increased organizational costs. This has led to changes both small – like raising the fee per chili regis-tered to $4 – and not so small – like increasing the annual and life membership fees.

Cookin’ for CASI has the ability to be a huge success for this organization. It is a way for us to take care of our own costs, without a cookoff affecting a state’s cookoff count requirement, and providing extra events to get the CASI name in the public eye. There is also the added benefit of providing one more cookoff to try and get those last points.

Currently, there are only FIVE Cookin’ for CASI events scheduled for 2017. Let’s make the 2017-2018 chili year a turning point for this event. Whether it is a small year-end cookoff, or a major event with over 100 cooks, let’s com-mit to putting our oars in the water together and increasing this number.

Hellen Keller once said, “Alone we can do so little; together we can do so much.” A Cookin’ for CASI cookoff is a way for CASI to stand together, support our organization, and ensure that we can continue to live the CASI vision of making a positive difference in someone’s life with every pot of chili cooked.

I want to extend a warm wel-come to Jeff Netser, who has joined the IT team. Jeff just retired and decided he wanted to use his experience and join the IT team to help CASI. Jeff has a lot of IT skills from his working life and is willing to share that talent with us. Jeff has already jumped in and is learning all about Caspio and my emails (lol).

Another person who has been helping us is Rolland Pate, assist-ing Melissa with the tally infor-mation and reports to the Trails. Rolland is also looking into new ways to access the data and reduce the cost of it thru API processes.

And Richard Knight is keeping the web site running.

Many of you may not know the extent of work that it takes to keep the CASI web site up and running. The CASI Membership System consists of two parts: Caspio, the development side, and Weebly, the web viewing side. A big thanks to the IT team for what they do.

Make No Mistake!I have been asked to write a column for the

Terlingua Trails, primarily dealing with our CASI rules and how to avoid mistakes applying them. My good friend, the late Steve Dowdy, wrote a column a few years ago titled, “Nobody Told Me.” I will attempt to do mine in a similar manner with the hope to inform and entertain.

The first question to be answered is, “Who are you and what are you doing here?” There are many people new to CASI now, so an introduction is in order. I am a 32-year veteran of CASI cookoffs, and soon will compete in my 25th consecutive TICC. (Yeah, I am a slow learner. Probably the lack of chili knowledge here in northern Illinois.) I was the CASI Tallymaster from 2001 to 2009, and a CASI Director from 2003 to 2009. Since then I have been involved in various CASI projects, most notably the CASI Rules Committee. Presently, I serve as the CASI Senior Referee.

What is the CASI Rules Committee, Steve might ask? The Rules Commit-tee was created a number of years ago to provide more than one voice when making decisions on rules violations. The original committee consisted of the President, Executive Director, and Tallymaster. About ten years ago, it was expanded to get more points of view. That roster included the Executive Director, Tallymaster, a Director at large, an at-large Great Pepper, and a member (usually a referee). When the Senior Referee position was created, it was made the chair of the Rules Committee and replaced the at-large member. The current Rules Committee consists of Keith Karaff (Executive Director), Randy Pittman (Tallymaster), Susan Armand (Director), Mike Whitten (Great Pepper) and me, the Senior Referee.

The Rules Committee review cookoff protests and make recom-mendations to the CASI Board of Directors on the more serious ones. Fortunately, those are few, so we spend much time interpreting the rules in response to questions. Those responses will be the source of much of these articles.

I can hear Steve now, “Okay, what the hell is a Senior Referee?” The Senior Referee position was created just a couple of years ago to relieve the Executive Director’s workload. It is an appointed position and reports to the Executive Director. The Senior Referee coordinates our referee system, keeping track of the regional and area referees. He also works to find referees for cookoffs in areas with little or no CASI presence. And, serving as the Rules Committee chair.

All too often, a rule is misinterpreted and a new, unofficial rule is born. That’s when the fight starts. We want to avoid conflicts so that all our cookoffs run smoothly and are fun for cooks and officials alike. Edu-cating the cooking public as well as the officials is my goal. I will gladly entertain questions; I need material.

Very soon, the Great Peppers will be gathering in Virginia for the an-nual Great Peppers Meeting. This year they will be considering proposed rules changes – lots of proposed rules changes. Back in May/June, the Rules Committee reviewed all the proposals, not to judge them, but to clean up some language and form so if they do get accepted, they can be understood and followed. Most of our edits were accepted, others not. But at least the Rules Committee is prepared for next year. Next month we’ll deal with the new rules. But for now…

Where to start? Over the years we have dealt with many, many sub-jects; some serious and some head-scratching.

Just the other day, I was shown a picture of the judging table from a recent cookoff. There were nine judges crowded around a small table, but it looked as though they were happy and doing their job. But the first thing that caught my eye was the judging cups. They were marked with a single number, ON THE LID. Now, I guess, if you only had one table, the letter designation could be eliminated, but it’s good to get in the habit of doing things right. What could go wrong? I guess they have never had a lid break and need replacing. And what about marking the winning cups? CASI Rules (II.E.5) clearly states, “Mark a judging designation (letter and number) on the side of the judging cup.” I know, nobody told them. But, it’s in the rules, right there on page 6.

Further, the rules (II.F.3) for marking the winning cups tell you to put the placement on the side and lid of the cup. The numbers on the lids were so large there would be no room to cross out and add another num-ber. I sure hope it all worked out.

I guess the lesson here is; if you are going to post pictures on social media, make sure you are following the rules.

We are getting close to TICC, and the fine details are starting to get worked on and ironed out by those behind the scenes. The directors have been given their assignments, the poster is ready for print, the t-shirt contest is over and we have a fantastic design this year. From parties to the parade, volunteers are looking at every detail, travelers are making their plans, and cookoffs are still going strong for those working to get qualified.

While we’re all at the Rancho, partying and fellowshipping with hundreds (if not thousands) of our closest friends, we also have many opportunities to volunteer our time and talents to help TICC run more smoothly and make our week in the desert even more fun.

For example, it seems we always struggle to fill time slots at the front gate, but the volunteers tell us that they love working the gate because they get to see all the comings and goings, and they enjoy the excitement and the smiles. Volunteers who’ve worked the main bar come back year after year because they get to see and visit with a lot of people, and the conces-sion store has a loyal following of volunteers, as well.

But more volunteers are always needed at the gate, the main bar, the concession store, and other areas. Beginning Monday, October 30, and

BALTIMORE MD – CASI cooks from four states returned to Baltimore’s Inner Harbor on August 5 with dreams of becoming Maryland’s next state champion. This is the third consecutive year that the champion-ship was held in August at Christ Lutheran Church. A Texas-sized heat wave took last year’s temperatures to triple digits; the “code red” heat day almost knocked out our visiting Texas dignitaries, James and Sherry Burns. James won last year’s championship (despite the heat) but did not return to defend his title this year, so the Maryland State title was up for grabs!

This year’s competitors were surprised and treated to an unseason-ably cool summer day with constant breezes and low humidity – a rarity for August in Baltimore!

Adrienne Grant, the cookoff or-ganizer, held a judging seminar the prior week after a church service for the second year in a row. “This was very helpful in preparing our judges,” she said. “We had many experienced chili judges return from last year and many newly trained judges ready to go for this year. I am grateful to

have so much participation from our church hosts.”

Cooks added to the fundraising fun in two ways – the People’s Choice chili competition based on public donations, and the “anything goes” Freestyle chili competition which was decided by the CASI judges. Altogether, the cooks and church members raised over $1,100 for the World Hunger Fund, one of the many worthy charities sponsored by the Christ Lutheran Church.

Fifteen chilis were judged, and the tally resulted in no ties at the top and no taste-offs needed. Native Texan Kit Rudd (now an expat in Virginia) was crowned our 2017 Maryland State Champion. The Maryland State “baton” was passed from one Texan to another! Kit was ecstatic as his victory ended a two-year drought at the top of the winner’s circle. Congratulations, Kit – enjoy your reign for the upcoming year. Just be forewarned, us Marylanders will be gunning for you to take back the title in 2018!

in the Kansas State cookoff, held August 5 on the grounds of the Eisenhower Presidential Library.

US Open Benefits ABC Animal Birth ControlThe US National Open Championship was held in Waco, TX on June 24. Despite the threat

of a tropical storm, 83 wonderful cooks showed up and raised $1,750 for the ABC Animal Birth Control Clinic. Our charity’s representatives were more than ecstatic, and the Proud of Texas Pod thanks everyone who came, helped, and supported the US National Open Championship. SCOPE: This volunteer job is to maintain and develop new programs for the CASI Member System (CMS) database, as required by users and board members. CASI is a charity-based organization and the work will be charity driven. This is a volunteer need; there will be no payment for the hours worked on the database or website software – just the great satisfaction of helping to maintain the mission of CASI. The web sites’ URLs are casichili.net for the public and casichili.com for the internal CMS work. The project structure con-sists of 4 sections: Events (cookoffs), Membership, Tally (maintaining cooking points) and the CASI “newspaper” called the Terlingua Trails. Each section has a volunteer coordinator who keeps the sections up to date on a daily basis. CASI exists all over the USA, so location of the volunteer is not a key concern. Email, phone conference and web online links will be used for communication.

JOB DESCRIPTION: Database development and changes will be done on the Caspio site, and the developed data page will be deployed to the Weebly web page. The scope of the job at first will focus on the Caspio work. Caspio is a configuration tool using procreated macro type structures. The code will run on the Caspio site with a set of code deployed to the Weebly web site. The developed data pages use tables as the input and output which are much like a spread sheet.

JOB DUTIES: 1) Become familiar with the Caspio tools, 2) Respond to help tickets defining issues and new requests, 3) Work with the web support personnel doing the Weebly web pages where the Caspio linkage code exists, 4) Make small changes to the existing Caspio web pages as approved by the IT team, 5) Supply the Caspio data page linkage code to the web page support person after testing by the team, 6) Document existing process where docu-ments are missing, 7) Interface with the IT Board director on status as required, 7) Support the coordinators for the following processes: Events, Membership, Tally and Trails. In addition, there is a set of extracts from the previous CASI Information System (CIS) that may have to be converted into the new CMS as history depending on requests.

JOB SKILLS REQUIRED: 1) Good software design process develop-ment, 2) Database design desired, 3) Produce documentation for guides for coordinators, 3) Good people interface skills as many of our users have limited computer knowledge, 4) Spend time as allowed learning Caspio and Weebly, using the many videos and documents available, 5) Good knowledge of SQL and spread sheets will be an asset, 6) Office 365 is a tool currently used to share files and manage issues.

ASSETS: A good high speed internet connection and a good laptop would be an asset.

TIME COMMITMENT: Of course, people have jobs and other time com-mitments, so CASI asks that the CMS database site work be worked in with the real life of its people. Normally the time needed is a few hours a week, once a person has learned the tools and become familiar with the existing process. An existing support person will be available to tutor and mentor the applicant.

LARAMIE WY – The second Betty Kiser Memorial/Laramie Ju-bilee Days cookoff was held July 17. After last year’s success, event organizers (including “Chili Tom”) decided to make it a CASI-sanctioned event.

We had a great turn-out, with 20 CASI red and ten green chilis submit-ted for judging. Multiple concerts, an appearance by Robert Fuller from the “Laramie” TV show, a parade, carnival, and craft beer festival drew out hundreds of people, who enjoyed a great variety of chilis on a beautiful Saturday.

The top three CASI winners were Liz Walker, Laramie WY, first; John Montgomery, Golden CO, second; and Tina Cohen, Morrison CO, third.

We hope to be a part of this event again next year. Come visit beautiful Laramie on August 14, 2018!

Sho-Me Pod Gets CornyGail’s Harley-Davidson in

Grandview Missouri approached me to request that the Sho-Me Pod represent CASI and sponsor and fill a barrel for their Christ-mas in July food drive to benefit Harvesters food bank. On July 12, in good CASI fashion, Sho-Me Pod members far and wide came together, gathered and donated – either monetarily or in canned goods – enough canned corn to fill our designated barrel and stack up enough cases of corn as tall as the barrel itself. KCTV Channel 5 News covered the Pod’s delivery of the canned goods!

It was a great evening to spend with Gail and her hard-working crew. Gail is a huge supporter of the Sho-Me Pod. Her staff always work tirelessly to help the Sho-Me pod throw one of the best cookoffs in the Midwest.

Everyone is doing a great job creating cookoffs online! There are only a couple of things I need to call to your attention.

When you create a cookoff and you don’t request a box of Trails, cup tickets, or a rule book, you will not receive a packet of forms by regular mail. Your forms will be included in your approval email as a .PDF file. Please print out the forms, and fill in your cookoff date and the cookoff number shown on the approval email.

When submitting cookoff info for me to put into the system, please use the form online or in the Terlingua Trails so all informa-tion needed will be covered. Often email addresses, zip codes and counties are left off. If you are doing the input yourself and have a problem, please contact me instead of trying to submit again, especially if you get an error message. Thank you for your support! As a CASI Pod you are required to put on a pod cookoff once a year. To help you advertise your pod cookoff we allow each pod to place one quarter-page ad in the Terlingua Trails each year, free of charge. This ad should run the month before your cookoff occurs. Should you decide that you need an ad larger than a quarter-page, we will simply bill you for the difference in price. This ad should not be confused with the article advertising your cookoff in the "Upcoming Events" section in this periodical. That article will start to run as soon as you request your cookoff packet and will run until your cookoff occurs.
