But time flies both in restaurants and fashion and unlike Segers’ other collections, which always can be ordered anew, Inside Out is made from fashion fabrics that will only be found this season. Within a year, these items will seem dated, just like the fashion in general. Because the collection is a limited edition it’s easy to replace in time for the next big trend – a good way to make sure you always keep abreast of trends and remain at the forefront. Because the art of modern cooking has moved from luxury restaurants onto our high streets and plazas, we developed the Inside Out collection and turned the traditional image of the chef inside out.
The Inside Out collection is a cross between function and fashion. Traditional chef coats and aprons get a reawakening with the help of fabrics and details not previously seen in the kitchen. The result is a limited edition of coats and aprons for restaurants where the chef is allowed to stand out.

INGREDIENTS
700g pork1 tbsp fennel seeds1/2 tbsp sea salt1/2 tbsp ground black pepper2 tbsp honey1 tsp fresh sage, finely chopped1 tsp fresh oregano, finely chopped1/8 cup red wine1-2 sausage casings
FOLLOW THIS STEPS
Start out by soaking the sausage casing in some cold water. Set aside the soaked sausage casing in a refrigerator.
Cut the meat into small cubes and process through the meat mincer. Set it aside and let it cool in the refrigerator. Prepare the other ingredients by combining the fennel, sea salt, pepper, honey and fresh herbs in a mortar and pestle. Pound it good, pound it real good.
When you have made a good, solid mixture, do a sample run. Prepare a fry-pan, with a little oil or duck fat and make a small patty of mince mixture. Fry for a minute or two on each side until it’s thoroughly cooked. Sample and check for seasoning and flavour.
CLASSIC SWEDISH STREET FOOD WITH A MODERN TWIST

Place your casing on the end of the sausage nozzle and tie a knot at the end. Place the meat mixture through the top opening and turn the machine on. Watch out for air bubbles. Slide the mixture through and tie a knot at the end of the sausage. Then twist the sausage into sections to make smaller sausages.
Freeze, refrigerate or cook the sausages immediately after they have been made. You will need to prick them with a sausage-pricker (yes, there is such a thing!) or skewer prior to cooking otherwise the casing will break.
