1 To make the fennel purée, heat the olive oil in a small saucepan over medium heat and add the fennel and garlic. Bring to a simmer, then reduce the heat to a low simmer and cook slowly for about 15 minutes, or until tender. Strain the oil and discard. Using a stick blender, blend until smooth. Season with sea salt and freshly ground black pepper and set aside.

2 Place a pizza stone in the oven and preheat the oven to 250°C (500°F/Gas 9) or its highest temperature. Once it has reached the temperature, it will take about 15 minutes for the pizza stone to heat up.

3 Place the salmon between two sheets of plastic wrap and gently flatten with a rolling pin, until it is approximately 2 mm

(1/16 inch) thick. Set aside in the fridge.

4 Meanwhile, lightly dust a clean work surface with semolina or flour, then roll out the dough ball into a 30 x 25 cm (12 x 10 inch) rough oval that is about 3 mm (inch) thick. Transfer the pizza base onto a piece of baking paper. Prick the pizza base all over with a fork or docker. Spread the fennel purée on the pizza base evenly. Add the parsley and grated mozzarella and season with sea salt and freshly ground black pepper. Transfer the pizza onto the heated pizza stone. Cook for 5–10 minutes or until golden and crisp. Using a pizza paddle or wide spatula, carefully transfer the pizza to a chopping board or plate.

5 Meanwhile, to make the salad, combine the watercress, shaved fennel, radish and celery leaves in a bowl. Add the lemon juice and ½ tablespoon of the lemoninfused oil to the salad and toss. Season with sea salt. To make the honey mustard dressing, whisk all the ingredients together until thick, and season with sea salt and freshly ground black pepper to taste.

6 To finish, remove the top layer of plastic wrap from the salmon and flip the salmon sheet onto the cooked pizza. Gently remove the plastic from the salmon, brush with remaining the lemon-infused oil and season. Arrange the salad and peas on top, drizzle with honey mustard dressing, and finish with the horseradish.

150 g (5½ oz) skinless salmon, sliced into 2 mm (1/16 inch) thick piecesSemolina or plain (all-purpose) flour, for dusting170 g (6 oz) pizza dough ball1 tablespoon chopped flat-leaf (Italian) parsley45 g (1¾ oz/ cup) grated mozzarella cheeseSea salt and freshly ground black pepper

Small handful of watercress¼ small fennel, shaved½ radish, thinly sliced1/3 cup celery leaves (from inner yellow part of celery only)½ teaspoon lemon juice1 tablespoon lemon-infused oil or olive oil2 tablespoons fresh or frozen peas, blanched till tenderFinely grated fresh horseradish, to serve
