BARBECUED FRENCH TOAST WITH MAPLE SYRUP AND BERRIESServes 4

1 Heat up your barbecue flatplate, if you‘re going to use it. Beat the eggs with 2 tablespoons of maple syrup and a pinch of sea salt. Soak each piece of bread in the egg for about 30 seconds so that it goes a bit soggy.

2 Drain off the excess egg and place the bread on an oiled barbecue flatplate or in a frying pan. Cook until golden on one side, then flip over and cook until golden on the other side.

3 Cut the French toast in half and drizzle with the extra maple syrup. Add a spoonful of ricotta, then scatter the berries over the top. Dust with icing sugar and top with mint leaves.

HARISSA LAMB LEG WITH ROASTEDPUMPKIN, FETA AND POMEGRANATE SALADServes 4

LAMB1 Bring the lamb leg to room temperature (and make sure you know how much it weighs). Preheat the oven to 180°C (350°F/Gas 4). Coat the lamb with the harissa paste, then with the olive oil.

2 Roast the lamb for 45 minutes, and then another 25 minutes per kilo of weight. Remove from the oven and leave to rest, loosely covered with foil, for about 30 minutes. Slice and serve with the salad.

SALAD1 Preheat the oven to 200°C (400°F/Gas 6). Put the pumpkin and onion in a roasting tin and toss with the cumin, chilli flakes and some sea salt and pepper. Drizzle with the olive oil and roast until golden. Toss with the mint, feta and pine nuts. Drizzle with the pomegranate molasses and pomegranate seeds before serving.

1 tablespoon extra virgin olive oil

SALAD600 g (1 lb 5 oz) pumpkin, unpeeled and

chopped1 small red onion, cut into wedges

a pinch of ground cumina pinch of chilli flakes

1 tablespoon extra virgin olive oil1 handful of mint leaves

120 g (4 oz) sheep‘s milk feta (Persian is great)

2 tablespoons pine nuts, roasted1–2 tablespoons pomegranate molasses

2 tablespoons pomegranate seeds

you‘re going to someone‘s house for dinner and they tell you they‘re cooking

roast lamb?

CHICKEN WITH GINGER AND ORANGE STUFFING

Serves 41 Preheat the oven to 200°C (400ºF/Gas 6). Line

a baking tray with baking paper.2 Put the breadcrumbs, orange zest, ginger,

spring onion, lime leaf, garlic, coriander and egg yolk in a bowl and mix well to combine.

3 Use a small sharp knife to cut a horizontal slit in the thickest part of each chicken breast to create

a pocket. Divide the breadcrumb mixture into four even-sized portions and spoon into each pocket.4 Heat the oil in a large frying pan over high heat. Cook the chicken for 2–3 minutes on each side,

or until browned.Transfer the chicken to the prepared tray and bake for 15 minutes, or until the

chicken is cooked through.5 Serve the chicken breasts with the steamed
