Counter Current
Sensient employs a high efficiency, low temperature concentration technique in which the citrus oil is partitioned by pumping against a flow of alcohol – water, being pumped in the counter direction. The Sensient process separates the terpenes from the flavor components to a much higher standard than is achievable with traditional folded citrus oils, giving products of very low residual terpene contents, and higher concentration. The solubility is greatly increased as a consequence, as is the stability, since the terpenes are prone to oxidisation. The low temperature Sensient process contrasts with the traditional folding of the oils by distillation, which requires prolonged heating to high temperatures, even when high vacuums are employed. Fig 2 illustrates the GC profiles of single fold, ten fold and Sensient‘s Orange extract. Of particular note, is the minimal presence of terpenes in Sensient‘s Orange C2270.

Liquid Carbon DioxideSensient’s carbon dioxide extraction process is in the more selective pure liquid (subcritical) phase as distinct from the supercritical conditions more commonly employed in, for example, commercial extraction of hops and decaffeination of coffee. At low pressures of between 40-60 atmospheres and temperatures between 0-10oc, the liquefied carbon dioxide dissolves the lower molecular weight organoleptically active components, leaving behind the higher molecular weight unwanted materials such as heavier fats, waxes, pigments, sugars, starches and tannins. Botanicals which do not contain a significant quantity of natural oil or resin (for example tea) will not yield a pure CO2 extract. For such materials, alcohol or vegetable oil can be injected into the flow of clean CO2 prior to the extraction as an entrainer, creating a unique selective solvent mixture. The entrained CO2 is still significantly more selective than if alcohol alone is used on the same botanical. The selective properties of the liquefied carbon dioxide process are demonstrated in Fig 1, which illustrates the GC profile of steam distilled ginger oil versus a Sensient Ginger extract. Of particular note is the increased presence of gingerols in the Sensient extract, giving a more rounded ginger flavor / aroma. •
