    INTRODUCTION

    We have choose literature review for this assignment.

    This literature review about how the tortilla chips are

    made.

    As example in Malaysia, Kraft Foods Company hasbeen working in this product by the name of chachos

    but we focused on the Toms Snacks Company brand

    tortilla chips product that located in North Carolina,

    USA The reason we focused on this company is because

    they used original corn kernels and undergo a process

    that turns the maize into the corn dough that called

    MASA

    COOKING RAW CORN PROCESS

    We observed in the mass production of tortilla chips and

    focused on the nixtamalization and masa production

    process and highlight at the cooking of raw corn kernels

    inside a large cooking kettle with a mixture of a boiling water

    and quicklime.

    The 300kg of raw corn kernels will be prefilled inside a

    hopper valve before it is inserted into the large cooking

    kettle that contain almost to 90kg of boiling water

    Specific weight need to be measure for entering the corn in

    the kettle tank because the kettle should not be overload.

    When the corn inserted into hopper valve 2, the straingauge will stretched and the resistance will increases. Its

    explained by diagram below:

    Tension Load Cell

    This type load cell suitable to measure the raw corn in the

    hopper valve 2 by measure the tension from initial position

    to actual position after hopper valve 1 enter the HV 2.

    ACTUATORS

    Pneumatic Actuator For Steam Flow The steam valve is used to control the flow of the steam

    from the supply to flow though the jacket around the tank.

    This steam is supplied to the jacket as a heat exchangerto heating and control the temperature of the water to

    cook the corn in the tank.

    It is using a pilot operated control valve to control the

    steam for water heating applications.

    The pressure is applied to the dome from the upstream

    side through the pitot tube.

    The upstream pressure will push the piston to open the

    valve while downstream will push the piston downward to

    close the valve.

    Since it is using a pressure to control the movement of

    the piston, the system is using a pneumatic actuator tocontrol the opening and closing of the valve.

    Pneumatic Actuator For Water Inlet Since the product type to be controlled is water, it is

    using a quick opening valve to control the flow of the

    water. . It is using a fully open and fully closed of the valve plug

    to either let or block the flow.

    This type of valve allows 90% maximum flow rate and

    30% travel of stem. When the pressure is applied, the diaphragm going to

    elongate and the spring will push the valve stem.

    The movement of the stem will push the plug from the

    seat to let the water flow through the pipe.

    Hydraulic Actuator Outlet Valve This outlet valve is to transfer the cooked corn to the soft

    tank for soak the kernels for 12 hours.

    The selection of a correct valve is very importantbecause usually the slurry product will make the products

    jam and prevent valve to close.

    Therefore, the most suitable valve for the slurry product

    is a dome valve. The valve only takes a movement tocompletely open and prevent the jam product since the

    plug is a dome shape.

    It is using a hydraulic actuator since the product to

    transfer has a very huge weight.

    It is also the best actuator selection because it is an

    excellent for heat removal since it is a heating process

    system.

    Electromagnetic Actuator There are two hopper valve used in this process that is

    Hopper Valve 1 and Hopper Valve 2.

    HV 1 use for entering specific amount of raw corn to theHV 2

    The most suitable actuator to control this type of valve is

    a linear solenoid which is of the electromagnetic actuator.

    Solenoids basically consist of an electrical coil woundaround a cylindrical tube with a plunger that is free to

    move or slide in and out of the coils body.

    When the current is supplied through the coils windings,

    it will cause an electromagnet and the plunger which is

    located inside the coil is attracted towards the centre of

    the coil.

    The spring will push the plunger to close the valve.

    CONTROLLER

    PLC Controller In this corn cooking process, it better to use PLC

    because it is most common due to its ruggedness, ease

    of maintenance, price, and safety. Steam jacketed kettle automation process can be easily

    handled by the Siemens Braumat package which utilizes

    the Simatics PCS 7 DCS.

    CONTROLLER

    This process using Siemens S7-300 PLC modules that

    have advantages that suitable with our process.

    Allow quick installation and implementation for common

    processes such as heating circuit monitoring without

    additional transformer, PID control, synchronous heating,freely configurable controller inputs, and measuring.

    RECOMMENDATION

    Recommendation for this process is to make

    automatically done with the valves of

    inserting raw corn, water and the anti-

    bacterial into the tank.

    The purpose is for safety precaution from hot

    temperature of the steam jacket and avoid

    the worker approaching the tank.
