Pasta Bolognese

The consummate comfort food, pasta comes in all shapes, sizes and sauces. Ragù, or meat sauce, is a staple, and bolognese is a regional ragù that typically includes beef, pork, tomato and wine. Chianti Classico, made from Sangiovese, is a quintessential pairing for bolognese and brings mouth-watering acidity and tangy red fruit to complement the tomatoes and cut through the fatty richness of the meat, while the elegant mouthfeel matches the texture of the dish. Rabbit-and- Chorizo Paella

Spain’s most popular dish comes in a variety of local styles, but the original – paella Valenciana – eschews seafood in favour of rabbit, making it perfect for red wines. The savoury red fruit and earthy notes of a Tempranillo-based Gran Reserva from Rioja mingle well with the rabbit, while the heft, structure and smokiness of the wine complement the chorizo. A slightly smoother, softer Douro red blend of Tempranillo with native Portuguese grapes still has the flavour intensity to match the dish, and its darker, sweet-spiced fruit would also go well with a variation using chicken or duck in place of rabbit.

Something to debate while you celebrate the return of high-quality burgers with the St. Huberts The Stag Cabernet Sauvignon 2016 or the Sidewood Stablemate Shiraz 2016. The origin of the (seemingly) humble burger is a matter of some controversy. It’s accepted that the burger evolved in Germany from Hamburg steaks: minced meat made into patties with garlic, onions, salt and pepper. A gourmet dish served in top-flight 19th- century restaurants in New York and Chicago, Hamburg steaks soon became popular everywhere. But who first put the patties between slices of bread – a cook in Texas or an innovative street vendor who wanted to make his fare easier for factory workers to hold?

Though unquestionably associated with Japan, sushi is tailor-made for fusion dining: the combination of culinary traditions to create something new and interesting, such as the popular California roll. One of the most popular “artsy” foods in the world, sushi has a long history. It originated in Southeast Asia, where fish was preserved by fermenting it in rice (the rice wasn’t eaten, however). Named for the southwestern Chinese province where it originated, Szechuan (Sichuan or Szechwan) cuisine is notably flavourful and spicy, often incorporating garlic, ginger and red peppers as well as sesame oil, sesame seeds and cashews. Szechuan is most often associated with beef dishes, but you’ll also find plenty of vegetable and fish mains. The region is hot, with a great deal of rain and humidity. This led to the development of a variety of methods for preserving food, including salting, smoking, drying and pickling, all of which have an impact on the cuisine’s style and flavours.

Often made using coconut milk and cashews, Thai curries are categorized by colour. Green is the hottest, followed by red, yellow and orange. Thai food has been popular in North America since the 1980s, when a tourism boom introduced it to the West. It’s the result of many culinary influences, including Szechuan, Indian, Portuguese and Dutch, with regional differences in styles. Northern Thai food is milder and features sticky rice and pork flavoured with ginger, turmeric and tamarind, while the northeast favours spicy fish and shrimp dishes. You’re likely primarily familiar with cooking from southern Thailand, the region most popular with tourists.

East Meets West

In the mountainous desert highlands of Ningxia, fifth- generation winemaker Lenz Moser has teamed up with China’s oldest and largest winery to make world-class Cabernet Sauvignon. He spoke with Vintages about the project.

Is Ningxia well suited to Cabernet Sauvignon?It’s perfect. The hot days and cold nights grow ripe, balanced fruit with the thickest skins I’ve ever seen for Cabernet.

How do these Cabernets compare with the world’s best?I’m travelling in Europe right now and will be meeting with industry experts to taste the wines of Chateau Changyu Moser XV side by side with top Bordeaux and Napa Valley wines. I feel that our Cabernets can stand with these wines and I’m excited to see the results!

Are the wines built for cellaring?The thick grape skins give plenty of tannin structure. At the same time, there’s also plenty of ripe fruit. So I’m very optimistic about the ageing potential of the wines, but they are very enjoyable now.

What do the wines taste like?I find the style a bit like Napa and a bit like Bordeaux — the ripe fruit of hot days, the elegance of cold nights. But the wines have their own identity. They have good depth and intensity, and they’re distinctively spicy, with lots of black pepper and exotic spices.

This is a serious, subtle and mineral Malbec, with some austerity and a nicely textured palate. This is a serious red, only eclipsed by the Gran Enemigo bottlings.
